Holy smokes, it’s September. And two weeks until I move. And I’m kind of freaking out about it 😯 I will start packing eventually, but before I do, I have some good news and some bad news.
The bad news is that Hotmail decided to randomly delete all of the messages in my inbox…
… and it doesn’t look like they’re coming back anytime soon. So, if you sent me an e-mail within the last little while and I didn’t respond, chances are it’s because my inbox ate it. I’m doing my best to try and recall what all was in there, but that’s proving easier said then done.
The good news is that today’s the day where I announce the giveaway winner! 😀

For now, though, I have something else to share with you – a recipe for one of my favorite soups.
I know that it’s still technically summer for a few more weeks, but it’s already starting to feel rather Fallish around here, and I’ve really been craving the comfort of a warm bowl of soup as the days become cooler and darker. The combination of warming spices and the seasonal flavors of pumpkin and apple make this soup one of my Fall-time favorites. I hope you enjoy it as well 😀

. curried apple pumpkin soup .
Ingredients (serves 1, ~ 2 cups)
- 1 cup vegetable broth
- ½ cup canned pumpkin puree
- 1 tsp. coconut oil
- ½ apple (any variety), thinly sliced
- ¼ of a white onion, sliced
- 1 tsp. curry powder
- ½ tsp. cinnamon
- ½ tsp. cumin
- dash of ginger, cloves, nutmeg
Instructions
1. Begin by heating a small skillet over medium heat. Add coconut oil. When it melts and becomes hot, toss in the onions and cook until they begin to brown; ~ 3 minutes.
2. Stir in the apple slices. Cook until they begin to soften; ~3 minutes.
3. Add your spices, stirring well to ensure everything is evenly coated.
4. Reduce heat to low, cover the skillet, and continue cooking for ~ 5 minutes.
5. In the meantime, combine broth and pumpkin in a small saucepan set over medium heat.
6. When the broth begins to bubble, add the apple/onion mixture and bring the whole thing to a boil.
7. Once it begins to boil, cover the saucepan, reduce the heat to medium-low, and allow it to simmer for another 15-20 minutes, stirring occasionally.
8. After 20 minutes, remove the saucepan from the stove and allow it to cool slightly. Pour the contents into a blender and blend until smooth. An immersion blender would also work.
9. Empty into a bowl and enjoy!

I absolutely adore this soup, especially when it’s paired with eggs and avocados…
… or almond butter and honey…
Sometimes I even like to toss in some extra veggies, beans, and a random grain (rice, quinoa, bulgur) and use it as a base for a thick and hearty stew.
A part of me will miss summer, especially when all of the melons and berries disappear, but I can’t deny that Fall tastes mighty fine too.

It’s starting to feel like fall here, too! It’s been in the 90s for weeks, but on a day trip to the mountains today, it actually seemed like a very nice fall day.
I love using that same pumpkin purée in recipes, it’s so easy to work with and it just tastes so yummy. I love making pumpkin chocolate cake and pumpkin apple pie with it. I think I’ll have to try out your soup recipe because it sounds perfect for fall-ish days!

Congrats to the winner! :] The soup looks awesome. Pumpkin is one of my favorites for sure. I’ll be making this a lot as fall comes. My favorite way to eat pumpkin would be in your pumpkin chilies, soups, muffins, with fruit, and I’m sure there are a ton more, but this is all I can think of right now 😀 Oh and I’m definitely sad to see summer go. School, too much working piling up now. The best part of it was relaxing and doing anything I’d like all day. At least fall’s comforting colors, dishes, and holidays are coming!

As a warm weather person, the saving grace of crisp falls and cold winters is the hearty meals that accompany them. No meal warms me up more than a large bowl of soup! I actually pulled out my crock pot yesterday and set it on my kitchen counter, hoping that it might induce slightly cooler temperatures (nothing extreme, anything *below* 90?). And guess what…I woke up this morning, checked the weather, and voila! 70-degree weather! Perfect day for soup! 🙂
I’m excited about this recipe because it combines two of my favorite fall flavors. Whole Foods makes a similar seasonal soup, however it’s often hard to find, so now I can make my own and eat it whenever I want!
Pumpkin favorites: muffins, bread, pancakes and souffle (egg whites microwaved with pumpkin, cinnamon and stevia and topped with whipped cream!). <—I think I may go make this right now. 🙂
I am sad to see summer go, especially because it was one of the best I've ever had. Favorite memory: eating macadamia nut crunch gelato on the beach in Maui.

Mmm, I love the look of that soup, especially with the addition of the beans, veggies, and grain. Besides the standard bowl of creamy tomato, I’m usually more of a chunky soup lover, but I may have to try an avocado and egg sandwich dipped into this…yep, I’m a habitual dipper! Haha! 😉
It’s so hard to believe that it’s almost fall already! I love anything pumpkin, so picking just one is a toughie! I’d have to say pumpkin oats, pumpkin bread, and traditional pumpkin pie with a non-optional dollop of whipped cream are my top three!
Best part of the summer? All the fun and knew experiences I had while in Cali! Flying by myself, kayaking, seeing the Golden Gate! I still can’t believe I did it!

But I actually eat it everyday in the form of cottage cheese messes and sometimes muffins. Best part of summer: running camp round 2. i made so many friends and learned so much! I will be back there as a counselor someday so i can act like a fool, run crazy trails, and hopefully inspire other girls to keep running!

Hotmail did it to me too. All my baby (well when i was 10/11 in 2001) emails gone, soo sad. That soup looks delish! But I have to say i don’t really like pumpkin, butternut squash on the other hand cubed and steamed, so so good.
Summer well, i like being able to go out without a coat/jacket, but i prefer autumn to be honest. London summer’s only last a week or two any how.

My favorite thing about fall is pumpkin. From the can, pumpkin cookies, pumpkin coffee, pumpkin + peanut butter + maple syrup on english muffin. Anything, literally.
My favorite thing about summer was completing my first half marathon… Even if I did end up screwing up my knee, running the half marathon was probably one of the best decisions of my life.

MmmM, what a lovely soup! Soups is really one of my favorit meals, especially the thick blended type, like this! I like to roast my veggies in the oven first (pumpkin, sweet potato, onion favorits during fall), and just blend them up with hot water. SO good!
This season is so beautiful, and Im not sad to leave summer behind. It will be back soon enought! Now, I just enjoy the darker evenings (LOVE that), the fresh air and the beautiful colours!

This recipe looks amazing! There is nothing better than pumpkin and apples in the fall. I’ve never thought to try them together but I bet it’s good! My favourite way to eat pumpkin is definitely in pumpkin oatmeal. Especially with banana and dried figs! But I just came across a recipe for pumpkin cornbread that looks awesome. I’m definitely going to have to make that this fall.

Eeee I remember this recipe from your old blog! I remember thinking ‘that sounds really good!!’ but I’m actually not much into soup because it never fills me up so I’d definitely use it to make a stew with loads of chunky vegetables and beans in 🙂

That soup looks fantastic. My favorite way to eat pumpkin is honestly ANY way! I have a slight obsession with the squash, and will add pumpkin puree into smoothies, oatmeal, muffins, cake, bread, lattes, and parfaits. I’ve tried pumpkin soup before, but have never actually gone out on a limb to make it myself. This recipe might be the start of something new 😉

Tinned pumpkin can be pretty hard and expensive to get hold of in the UK, I think I’ll be buying up a lot of pumpkins around Halloween and make my own puree! I love it in oats and smoothies and I have a great recipe for pumpkin spice bars that are delicious!

I love pumpkin soup, I am often making pumpkin-carrot soup or pumpkin-orange soup (no wonder my skin´s turned orange :).
Pumpkin oatmeal is amazing, canned pumpkin or pumpkin puree are great stuff and I like pumpkin “sauce” – pumpkin blended with nut butter and a bit of cocoa or coffee.
I am sad to see the summer go away, because it means going back to work, but all nice things have to end one day, because other way we just wouldn´t appreciate them 🙂
