Happy What I Ate Wednesday friendly faces! π
I just realized that I start all of my WIAW posts the same way, but you guys know how much I dislike writing intros, and because I’ve been crazy short on time lately and can’t spend 20 minutes trying to write out a few starting few lines, we’re going to go with this intro indefinitely.
Time. Oi. Why does it always feel like I either have too much of it, or nowhere near enough? What happened to the happy medium? Or does it exist and I simply don’t notice it when it happens? Whatever the case may be, life’s been a little crazy lately, and my eating habits have definitely reflected that…
Breakfast…
Quick oats cooked with ~1 Tbsp. chia seeds, then layered with plain Greek yogurt and topped with honey, almond butter, and cinnamon.
Not much to say about breakfast other than I’m still loving chia seeds in my oats. Breakfast seems to be the only meal of the day where I can sit down and eat in peace… or at least it feels that way since that’s the only time where I actually allow myself to do that. Being self-employed and working from home is awesome for the most part, but it makes it a lot harder to disconnect and stop working, especially because your success heavily depends on how much time you put in. Aaaand end tangent… back to the food.
Morning snack…
A few squares of Giddy YoYo chocolate and some dates.
Dried fruit is my kryptonite — no joke. If left to my own devices, I can easily polish off a small bag of dried apricots, figs, or dates without so much as batting an eyelash. I used to do the same thing with candy, and while I suppose it’s a good thing that I’ve switched over to nature’s candy, a little moderation wouldn’t be a bad thing. Oh, and the combination of dates and chocolate has currently replaced my love of the combination of dates and almond butter. To.die.for.
Lunch…
Homemade baked fries with ketchup… x10.
… aaaaaaand oatmeal breaded chicken with some steamed veggies.
Apparently I was really craving potatoes, because I literally heard choirs of angels sing when I took my first bite. Or maybe I just needed some fries in my life Either way, lunch was amazing… and eaten in two parts. Because I didn’t plan ahead and my chicken was hanging out in the freezer, it was still kind of solid by the time I decided I wanted to eat it; and because I was starving and not willing to sacrifice any limbs, I ate the fries first and the chicken about an hour later. Whatever works!
Afternoon snack…
Enjoy Life Mountain Mambo trail mix.
Trail mix is deadly. This is a fact. Google it. Actually, trail mix can be deadly for me if it has peanuts in it, but that’s besides the point. What I was trying to get at was that I have basically no self-control when it comes to trail mix. None. Give me a bag, and I’ll probably give you back 1/4 of it. If that. But come on now… a serving size is, what? 1/4 cup? Who can stop at that much?!? That’s barely enough to get a taste for it, and they’re trying to tell me I have to stop? Not happening.
Dinner…
Egg and veggie quinoa pie — another recipe I made for Savory Style.
Despite the fact that the added work can sometimes stress me out, one of the great things about developing recipes for a site other than my own is the fact that it forces me to get creative and try new things… which I then get to eat π This recipe should go live by the end of this week, so make sure to follow me on Facebook and Twitter to be the first to know!
Evening snack…
Chapman’s Vanilla Sandwich with a side of Farmville.
You guys… I can’t stop with these sandwiches — they’re so good! And at least they’re neatly portioned out, ’cause yeah… I can’t even tell you how many times I’ve sat down with a tub of ice cream, only intending to eat a few bites, and then polished off at least half of it. Oops? But don’t even try to tell me that you haven’t done the same thing, because then I’ll have to resort to singing: “Liar, liar, pants on fire, hanging from a telephone wire.” <– which made a lot more sense when I was 10 years old.
So yeah! When life gets crazy, my eating habits follow suit. I end up snacking a lot more, which is why I didn’t show portions of my snacks — I just kind of grab a bag/box of whatever it is I’m munching on and eat until I’ve had my fill. This is probably where something like meal planning and food prep would probably come in handy, but I’m still trying to get over my distaste for both of those things, so until that happens, I’ll… “just keep swimming snacking“
See you guys tomorrow for Thinking Out Loud! π

Heather @ Kiss My Broccoli
I am the EXACT same way when life gets crazy…lots of snacking and hardly any full-fledged meals! And omg, don’t even get me started on trail mix! It has been banned from the house since I basically made myself sick on it a few months ago…I only WISH I was kidding!
Too funny that you ask that about the fries…I got a random craving for fries yesterday and started thinking about where I could go to get some good ones. I have to say McDonald’s is probably pretty high up on my list….right next to Steak ‘N Shake’s seriously cute and can’t stop yourself from eating fistfuls at a time “mini” fries!
Alexis @ Hummusapien
Holy moly that quinoa pie is beauttifulllll!! I agree–dried fruit and trail mix are beyond addicting. Snack monster over herrrrrr!
Jen @ Chase the Red Grape
Ok dates and dark chocolate, yep that’s going to happen at some point today… Why haven’t I thought of that before! π
Amanda @ .running with spoons.
Because nut butter has been stealing all the limelight! That bugger…
Molly
Those fries look delicious. When it comes to brown rice and frozen yogurt with toppings, I struggle with portion control.
Sarah Pie
You’re right that they’re both bad on their own, but trail mix with dried fruits in it… my self control is gone! I wouldn’t have waited for the chicken either, not with a pile of fries that pretty calling my name π
Robyn @thereallife_RD
french fries + ice cream sandwiches…two of the very best.
and can we talk about how perfectly you sliced those fries??
as always, such good eats! except I always feel like I have no time at all, where do the days go??!
Lindsay @ Shiny Love Affair
I loooove Giddy YoYo chocolate. I’m so sad I don’t have a stash of chocolate right now. I’m craving something sweet… but the only thing I have is apples. That’ll have to do for now! Gorgeous eats as always π
Amy @ Long Drive Journey
I go back and forth between thinking it would be really awesome to work for myself and that I would go out of my mind not being able to interact with coworkers. I definitely see how it could be hard to separate work time from relaxation time. I hope things calm down for you soon! I miss you!
Chelsea @ Chelsea's Healthy Kitchen
Chocolate and dates!!! Best snack ever. Both are foods that I have literally zero portion control around.
Interestingly I don’t feel like my eating habits change that much when I’m busy. Except for the fact that I’m probably eating a lot of the same meals over and over again because I’ll usually make a big batch of 1-2 recipes before the start of my busy period so that I don’t have to cook as much.
Best fast food fries? Hmm I love Taco Bell’s for some reason. Except I haven’t been able to even look at Taco Bell since 12th grade when my friend and I split a family meal (that’s 10 tacos, 5 orders of fries, and 5 orders of cinnamon twists between 2 people… yeah not such a great idea haha). I like Harvey’s fries too!
Amanda @ .running with spoons.
Cooking bigger batches… that’s definitely something that I need to start doing more of. And then actually be willing to eat the leftovers π
Cassie
Portion control goes out the window for me with granola and cereal… a 1/4 or 1/3 cup is not enough!! Also trail mix, which is why I can’t keep it in the house. I went to a date farm in Palm Springs last year and bought a 5 pound thing of dates… and polished it all off within a few days. Whoops.
Sarah @ Sarah Sincerely
unfortunately, as someone who struggled(s) with disordered eating, when life gets crazy hectic I tend to become rigid with my eats, not consciously, but it’s a habit that dies hard.
I’ve been eating my weight in roasted diced sweet potatoes seasoned with cumin and chili powder. Sounds unappetizing, I know, but it’s really similar to Alexia Spicy sweet potato fries. SO good! And I’ve got to have aaaallllll the ketchup to go with them. π
Ganeeban
I prefer traditional trail mix, it’s like a game. All the ingredients are just obstacles to get to the M&M’s (I’m sure I read that in a meme somewhere, or something like it)! I had to stop buying the 2lb bag from Costco, too much temptation! Thanks for sharing and don’t worry, I’ll join snackers anon with you π
Amanda @ .running with spoons.
I’ll bring the snacks! π
Jess
I’ve definitely had to eat my lunch in two parts for similar reasons!
When it comes to portion control, I know that I absolutely cannot keep dried strawberries aroundβso random but for whatever reason, it’s like, “Don’t press the little red button.” Oh, and graham crackers.
Heather @ Housewife Glamour
Your eats looks amazing, per usual. That looks like a yummy way to eat oatmeal! That chicken looks phenom and don’t even get me started in the fries. Give me ALL the fries! (Especially if they’re sweet potato!) thanks for sharing π
Amanda @ Diary of a Semi-Health Nut
Yeahhh I don’t buy icecream anymore for that reason. Oh and the whole lactose-intollerant thing haha.
I’m flying to Utah tomorrow!! See you so soon!
lex
oooh i didn’t know EnjoyLife had anything besides chocolate chips (clearly i have priorities LOL) but that trail mix looks DIVINE –all of my favorite things! i’m going to have to search for that. where did you findit?
Amanda @ .running with spoons.
At one of the local health food chains here! I have no idea where you can get them in the States. Whole Foods, maybe?
Natalie @ lovenataliemarie
I have been craving potatoes lately as well. I guess that’s why I have been having so much of them lately. I get some weird cravings when I am home during summer vacation. o.o
Victoria
Oh wow, home made fries is impressive haha, I would like to say I have no time for that but I do lately I’m just too lazy π
As far as the best fast food fries I’m gonna have to go with Burger King over here. In the US probably Wendy’s because they do the best everything. No one should go through their lives without tasting a Baconator #NOM
Portion control? anything where chocolate is concerned. I have no off switch, particularly with chocolate covered raisins. oh-ma-gosh π
Amanda @ .running with spoons.
Confession: I was craving chocolate covered raisins today but didn’t have any on hand, so I combined raisins with chocolate chips and ate them that way π Totally hit the spot.
Victoria
Oh wow good call!
Lisa @ Running out of Wine
When I get really busy I end up eating a lot less. It’s not good because when I finally do get to eat I’m so hungry that I eat too much! If i eat anything out of the container portion control goes out the window….trail mix, cracker, and ice cream to name a few:)
She Rocks Fitness
When it comes to pizza…all portion control is out the door and I almost never regret it, because I love good pizza. Hoping to forget about that portion control this weekend. π So glad you are loving the chia oats…the BEST!
Amanda @ .running with spoons.
Totally love that answer! Deprivation is a straight path to misery.
Chelsea
Do your eating habits change when you get really busy? < Yes. Sometimes I eat nothing. Sometimes I eat EVERYTHING. Usually I just feel yucky π
Which fast food place makes the best fries? < Uhm. I am not selective. If they're french fries, I eat them!
What food makes portion control go out the window for you? < Any salty snacks. Chips? The whole bag. I think it WOULD be sweet snacks, but they make me feel sick after a while. But salty snacks? Yep.
Sam @ Better With Sprinkles
Can we get ice cream sandwiches this weekend? I think I’m going to need an ice cream sandwich.
My eats definitely change when I’m busy in the sense that I’m not willing to put any effort into it – on busy days, I’m all for simple food.
I think we just need to get rid of portion sizes of trail mix. Non-existent.
Psssst. I get to see you TOMORROW! π
Meghan@CleanEatsFastFeets
So I’m digging your eats in this posts. Lots of snack, french fries and pies. I’ll take two of each please. No, better make that three on the fries.
In less than 24 hours, you get to relax!!
Amanda @ .running with spoons.
Now to make it through the next 24 hours! With sanity in tact, preferably.
Meghan@CleanEatsFastFeets
Sanity is overrated. At least that’s what I keep telling myself. π
Lindsay
Yumm that all looks delicious!!
Laura @ RunningJunkie
I think nuts and nut butters are probably my worst food when it comes to “portion control”. I could eat 2 TBSP of nut butter in about 10 seconds….haha.
Anne
That quinoa pie looks interesting. The crust is quinoa? I’m going to look out for that.
Amanda @ .running with spoons.
Yup! It’s a mix of quinoa, eggs, and cheese π
Anne
Cool! What a wonderful idea.
Morganne @ NutButterRunner
Ohhhhh girl you know that trail mix is my downfall! Seriously why is not the entire bag a serving size?? Dates plus dark chocolate PLUS almond butter – to.die.for. π
Hannah @ CleanEatingVeggieGirl
I now have a SERIOUS craving for french fries. Thanks a lot! π
Sarah
Your egg and veggie quinoa pie looks delicious! I am looking forward to the recipe. π
Megan (The Lyons' Share)
That Enjoy Life trail mix is seriously my kryptonite. Like you and dried fruit, I know it’s “healthier,” but come on … moderation is important at times! SO GOOD! π
