Happy What I Ate Wednesday friendly faces! π
Every Wednesday, I give you guys a glimpse into what a day of eats looks like for me… and don’t act like you don’t enjoy it! We’re all nosy; we all like to see what other people are eating; I get it — me too. There’s just something oddly fascinating about seeing what other people eat… like it gives us a glimpse into their soul or something. Alright, maybe not, but humour me here… I’m just trying to get this intro out of the way so that I can start talking about the FOOD.
And in addition to the food, I’ll also be sharing some of the thoughts that went through my head before/during/after I ate, because while my meals may not give you a glimpse into my soul, they still…. yeah okay I have no idea where I’m trying to go with this. Let’s just get to the food…
Breakfast… Where the heck is my appetite?!?
Eggy bananafied oats layered with plain Greek yogurt and then topped with roasted almond butter, homemade applesauce, honey, and cinnamon.
Thinking, thinking… I usually wake up more than ready to dig into breakfast, so the fact that I woke up without any hunger to speak of kind of threw me for a loop. Eat? Don’t eat? What to do?!? I always try to eat according to my hunger cues, so I waited [1.5 hours π― ] until my stomach finally decided to start speaking up before digging in to my beloved bowl of oats. Ugh. Let’s hope this doesn’t become a regular thing… it throws off my whole day!
Morning snack… #foodbloggerproblems.
A chocolate chip oatmeal date ball.
Thinking, thinking… When you spend a lot of time in the kitchen testing out new recipes, you spend a lot of time eating the product of those recipes… especially when you don’t have a husband or live-in-boyfriend to pawn that food onto. At least it’s a pretty delicious problem to have…
Lunch… Some foods are just ugly.
Split pea soup with two pieces of Mack’s Flax toast from Silver Hills — one with hummus and one with apricot jam. Oh, and some baby carrots to add a bit of colour.
Thinking, thinking… There’s no way to make split pea soup look good. Absolutly no way. If you’ve somehow managed it, then I tip my hat off to you because mine always ends up looking like someone… did something unpleasant… into a bowl. Good thing it looks a lot better than it tastes. Wait no, that’s not right. Good thing it tastes better than it looks. There we go.
Afternoon snack… Ermagherddddddd.
Plain Popchips with mashed avocado.
Thinking, thinking… Excuse me while I have a moment with my snack –[Insert clip of Meg Ryan in the diner scene from When Harry Met Sally]– You guysss… I’m obsessed with this combination; like ridiculously obsessed. I have one of the biggest sweet tooths (teeth?) known to man, so the fact that I’m choosing to go for a savoury snack time and time again means it has to be good. Then again, I’ve had a thing for chips and creamy dips for quite some time… this combo just happens to be a little healthier than my previous obsession with Lays and ranch dressing.
Dinner… Thank goodness for mothers and leftovers.
Mom’s sesame chicken stir fry with random veggies and vermicelli noodles.
Thinking, thinking… I’m a big fan of any meal that I don’t have to cook, which is why I don’t complain when Mom uses noodles instead of rice in her stir fries. I don’t really care much for noodles, but I’ve learned not to look a gift horse meal in the mouth because beggars moochers can’t be choosers. Besides, I figure that I’ve already given my mom enough grief with how picky I was as a child… Back in the day I would either flat out refuse to eat what she made or I’d pick through my meal and end up tossing out half of it. Sorry Mom!
Evening snack… necessity is the mother of all invention.
Chapman’s French Vanilla ice cream with mint chocolate chips
Thinking, thinking… I really had my heart set on mint chocolate chip ice cream, but all I had in my freezer was vanilla. Womp, womp. So what’s a girl to do when she would rather stay in bed and read than run out to the store to buy ice cream? Improvise by tossing some mint chocolate chips into aforementioned vanilla ice cream. Not quite the same, but not half bad either…

I’m right there with you in the food blogger problems. On days that I’m experimenting in the kitchen I “snack” all afternoon. It throws me off…but it’s (usually) delicious. Rough life. All your food looks amazing as always!

I didn’t wake up hungry for breakfast today, which is a rarity for me too! Although it might have something to do with stuffing myself with pizza, bacon wrapped prunes, and a brownie with ice cream with some other interns last night. π
I much prefer rice over noodles too. But for some reason I keep buying noodles and now they take up like an entire half of a shelf in my pantry haha.

I think the entire day of eats looks delicious, and yes I am nosy. I do like to see what others are eating much the same way I like to see what they’re buying at the grocery store.
Last year, I took my vanilla ice cream and added mini chocolate chips to it, along with fresh mint from the yard. It was fabulous.
Last, while I love noodles, I always eat rice in stir fries.

I’m trying to stop my evening snacking because I think it’s out of habit, not true hunger… so I just drink a little coconut water (or at least I have the past two nights). I’m currently oil pulling so I feel like that will also make me not want to snack.
Also – I need to find mint chocolate chips ASAP.

Oh yes, the ugly yet delicious split pea soup. I haven’t had some in a while, but now you’ve got me craving it, even in this summer heat!
I also don’t like it when my stomach isn’t ready for breakfastβ¦every meal just gets pushed back an extra hour or two. *sigh* #firstworldproblems
It depends on the rice or noodles we’re eating, but I usually like rice more. It absorbs sauces so much better!

OMG your afternoon snack is GENIUS! I have been devouring avocados like crazy and love this as a snack option! I love both rice and noodles. I have never been a picky eater. I love all foods, except for sardines. My appetite was all out of whack today…weird sleep patterns I’m blaming it on. HA!

I was a pretty picky eater as a child… Ex: no crust on sandwiches, wipe sauce off of pizza, no milk

Oh my goodness, I want some avocado right nowβ¦.yum – and my bad chips and creamy dip old love was similar to yours: ruffles and cottage cheese – heavily coated in pepper. eek!

I was super picky, my mom laughed when I became a vegetarian at age 11 because I liked so few vegetables. It stuck somehow. (20 years later and now I do like most veggies)
Last night I had a few medjool dates with raw pecans. Mmmmm, probably also what I’m going to have tonight as a late night snack!!

Omigosh Ruffles were my kryptonite. They were the first crinkly chip I remember trying and it was love at first bite.

I was totally NOT allowed to be a picky eater as a child. My parents allowed my sister and I to have one food each that we didn’t have to eat. Mine was broccoli – hers was lima beans. The rest, we had to sit there and finish it… or at least take 3 bites, before we were allowed to get up from the table. I liked that rule because now I’ll try everything and not turn up my nose π

No idea why it seems a revelation to me that mint chocolate chips exist, but, um, heyβcool!
Last night I had a sliced banana with peanut butter before bed. I like to tell myself the magnesium, potassium, and B vitamins in this combo counteract a glass of wine (like the one I’d had at my writing group) quite nicely.

Haha that’s SO true about the leftovers – I lose all pickiness when free food is on the cards – esp when mama made it π And I agree – rice floats my boat (bowl?) over noodles any day.

Um yeah, having to eat all of your delicious recipes by yourself isn’t exactly the worst problem to have. Those date balls look scrumptious!
I also hate the ugly food problem. Somethings are just so easy to photography {cough, dessert, cough} and then others, no matter how hard you try, just look bleh.
K, now I’m craving Pop Chips with avocado like a crazy woman. I think it’s time to eat lunch!!

I was definitely a picky eater as a kid. I never ate healthy and rarely can I remember eating fruits or veggies. It was always nasty, cheesy food. But that’s what happens when you grow up in WI. Beer and cheese are your meals even as a kid. My nightly snack has been banana with nut butter and chocolate chips as of lately and I’m definitely a rice girl!

What’s funny to me is that my mom hatesssss to cook so I get really jealous of people’s moms who do! You’re a lucky gal, even if you have to endure some noodles. My dad is the one who cooks but usually if he does its like.. hot dogs -___-. I definitely wasn’t a picky eater as a child, which is why my family was probably so surprised when I started refusing to eat the hot dogs hahah

I feel awful for what I put my parents through when I was a kid – I was such a picky eater. I’m pretty sure meal time was an actual battle. And yet now I’m more adventurous with food than both of them…I can’t quite figure that one out.
Last night’s snack: the last bit of my Reese’s Egg leftover from Easter.

I am a rice girl all the way! Although I go through phases I don’t remember the last time I had noodles haha I just don’t ever crave them!
I was the opposite of a picky eater as a child, I would eat and try just about anything even squid!
For an evening snack or rather second meal I had egg white crepes with greek yogurt, jam and peanut butter inside with a side of peanut butter dipped spoons and vanilla ice cream! What can I say haha I was hungry!
