Happy What I Ate Wednesday friendly faces! π
Every Wednesday, I give you guys a glimpse into what a day of eats looks like for me… and don’t act like you don’t enjoy it! We’re all nosy; we all like to see what other people are eating; I get it — me too. There’s just something oddly fascinating about seeing what other people eat… like it gives us a glimpse into their soul or something. Alright, maybe not, but humour me here… I’m just trying to get this intro out of the way so that I can start talking about the FOOD.
And in addition to the food, I’ll also be sharing some of the thoughts that went through my head before/during/after I ate, because while my meals may not give you a glimpse into my soul, they still…. yeah okay I have no idea where I’m trying to go with this. Let’s just get to the food…
Breakfast… Where the heck is my appetite?!?
Eggy bananafied oats layered with plain Greek yogurt and then topped with roasted almond butter, homemade applesauce, honey, and cinnamon.
Thinking, thinking… I usually wake up more than ready to dig into breakfast, so the fact that I woke up without any hunger to speak of kind of threw me for a loop. Eat? Don’t eat? What to do?!? I always try to eat according to my hunger cues, so I waited [1.5 hours π― ] until my stomach finally decided to start speaking up before digging in to my beloved bowl of oats. Ugh. Let’s hope this doesn’t become a regular thing… it throws off my whole day!
Morning snack… #foodbloggerproblems.
A chocolate chip oatmeal date ball.
Thinking, thinking… When you spend a lot of time in the kitchen testing out new recipes, you spend a lot of time eating the product of those recipes… especially when you don’t have a husband or live-in-boyfriend to pawn that food onto. At least it’s a pretty delicious problem to have…
Lunch… Some foods are just ugly.
Split pea soup with two pieces of Mack’s Flax toast from Silver Hills — one with hummus and one with apricot jam. Oh, and some baby carrots to add a bit of colour.
Thinking, thinking… There’s no way to make split pea soup look good. Absolutly no way. If you’ve somehow managed it, then I tip my hat off to you because mine always ends up looking like someone… did something unpleasant… into a bowl. Good thing it looks a lot better than it tastes. Wait no, that’s not right. Good thing it tastes better than it looks. There we go.
Afternoon snack… Ermagherddddddd.
Plain Popchips with mashed avocado.
Thinking, thinking… Excuse me while I have a moment with my snack –[Insert clip of Meg Ryan in the diner scene from When Harry Met Sally]– You guysss… I’m obsessed with this combination; like ridiculously obsessed. I have one of the biggest sweet tooths (teeth?) known to man, so the fact that I’m choosing to go for a savoury snack time and time again means it has to be good. Then again, I’ve had a thing for chips and creamy dips for quite some time… this combo just happens to be a little healthier than my previous obsession with Lays and ranch dressing.
Dinner… Thank goodness for mothers and leftovers.
Mom’s sesame chicken stir fry with random veggies and vermicelli noodles.
Thinking, thinking… I’m a big fan of any meal that I don’t have to cook, which is why I don’t complain when Mom uses noodles instead of rice in her stir fries. I don’t really care much for noodles, but I’ve learned not to look a gift horse meal in the mouth because beggars moochers can’t be choosers. Besides, I figure that I’ve already given my mom enough grief with how picky I was as a child… Back in the day I would either flat out refuse to eat what she made or I’d pick through my meal and end up tossing out half of it. Sorry Mom!
Evening snack… necessity is the mother of all invention.
Chapman’s French Vanilla ice cream with mint chocolate chips
Thinking, thinking… I really had my heart set on mint chocolate chip ice cream, but all I had in my freezer was vanilla. Womp, womp. So what’s a girl to do when she would rather stay in bed and read than run out to the store to buy ice cream? Improvise by tossing some mint chocolate chips into aforementioned vanilla ice cream. Not quite the same, but not half bad either…

Not being hungry in the morning is the worst! I definitely prefer rice over noodles, but I don’t eat either of them that often. For a night snack, I love banana nice-cream or anything warm that we just baked (blueberry muffin, apple bread pudding, etc). YUM!

Mint chocolate chips?! How did I not know that these existed?! That is wonderful. And I am totally with you on sometimes waking up with no hunger and then having to wait until your bod tells you it is officially ready to start eating… it really throws off my whole day! And those chocolate chip oatmeal date balls… Mmmm!!

I never think to just dip chips right INTO an avocado! hahaha Love it. My midnight snacks are usually a handful or 3 of Special K or something salty. I am not a sweets lover like most. For me it’s all about the salt and the crunch!

Rice or noodles depends on what is accompanying them. For a stir-fry I generally prefer rice. It also depends a lot on the noodle shape. Angel hair and vermicelli are my least favorite because they are so thin there is a tendency to clump together.
I was a picky child. My poor mom; five kids with different tastes and a picky husband to boot!
Sometimes ugly food is the tastiest. Bread with hummus or avocado is one of my most favorite things to eat.

Last night I had freshly cut pineapple as a snack! yum! Brilliant when it’s sunny outside, always gets me in the mood for pineapple and melon.

My room mate and I used to be obsessed with popchips. Then we discovered the new Breton Popped crackers. Oh. My. God. They’re incredible. And with a table of nutrients almost identical to the popchips its just as impossible to rationalize not eating a full box in one sitting…

i was really really really picky as a child…not picky at all anymore
i actually didnt have a snack after dinner last night- this is rare for me haha… i had green tea with mint. trying to lay off the sweets a little bit. and by lay off i mean have them a normal amount haha.

I much prefer rice! Pasta’s good and all but I feel like I need to eat a TON of it to get that carby, deliciousness that I get with rice or bread. When I was little, I loved when my mom made lasagna because I would take a big plain lasagna noodle out of the strainer, fold it up accordion style, and take a big chomp out of it. These days I have enough self restraint not to do that but it’s still a fantasy . . . I guess for me, pasta seems like an easy ‘binge’ food. I don’t ever really binge per se, but it’s a fear of mine.

I wasn’t a picky eater as a child, mostly because my dad always wanted me to try new foods and I never wanted to disappoint him haha.
Great innovation with the mint chips on the vanilla ice cream π why is french vanilla always better than regular vanilla?
And I just can’t get over how adorable it is to scoop avocado out of there like it’s its own little bowl. So cute and you save yourself from having to wash a dish. Smart lady!

Your thoughts with your morning snack = my entire life. I’m not sure if it’s good or bad that I usually end up eating ALL the food I make because there’s no one handy to share it with. Who’d have thought that eating 12 cookies over 2 days would get old? haha
I definitely prefer noodles but I usually use quinoa cuz I’m not a huge rice fan. And my snack last night was chocolate banana-nut bread…wish I had some ice cream to go with it tho!

I’m with you- is someone else is willing to cook me dinner, I’ll be eating it regardless of what it is! Though I think I do prefer noodles to rice.

I was the pickiest eater as a child. Bagels, pizza, pasta and chicken nuggets were my diet lol….I totally dip straight into my avocados by the way, completely eliminating my need for hummus or anything else these days…And oh, I don’t even look at pasta anymore which is weird coming from the girl who once lived on it. If I were to want it, I would eat it but I never want it. Strange.

I need to find mint chocolate chips! I love mint chip ice cream but I prefer the white version to the green version ( I know you know what I’m talking about!). Throwing mint chocolate chips into vanilla ice cream sounds like a perfect alternative!

To answer your questions…
-Noodles over rice. I’ve never been a big rice person.
-I’ve never been a picky eater. I’m always open to trying new things, and most of the time, I like the new things!
-I had a mug full of cookies ‘n cream ice cream. It was da bomb!

I know what you mean about savory cravings. I’m definitely a sweets lover, but avocado/hummus toast has definitely won a place in my heart. I think it’s just the avocado. WHY are they so delicious?!
I think I prefer noodles over rice… I think. I was never picky as a kid because my mom would NOT have it in our house, so I used to eat pretty much anything (except clams, UCK).
I love ending the night with a piece of chocolate or a sliver (multiple) of some kind of dessert.

I’ve been having some not hungry mornings lately! Usually I HAVE to eat breakfast before working out as I wake up rumbling but lately a quick banana and pnb (sorry) seems to suffice and I don’t think I’ve been eating more in the evenings either…weird.

Hahaha I just posted a tuna melt and went on about how there’s no way to make THAT meal look good lol Its just bland in color, but I threw some grapes on there for color. At least your soup isn’t grey or brown looking….
And how did I NOT know that there are mint chocolate chips?! I mean I have peanut butter chips and white chocolate chips but mint? Chocolate + mint are only like my favorite combo. ok so that’s a blatant lie, since I have a zillion favorite combos, but that’s so not the point here….

I was a picky eater as a child, but now it’s a whole different story. I’ll try most things at least one time. If I don’t like it, I don’t eat it again, but a lot of times, I end up loving the food!

Refusing to eat meals prepared with lots of love?? You were a seriously bad child to your poor mum ;). Iβd like to think I wasnβt all that picky unless it came to cheese [only about three different kinds for me], raw tomatoes or ketchup [but tomato sauce was perfectly okay] and certain meats while my sister used to be much more so – and now itβs pretty much the other way around. Only the meat part makes both of us picky eaters these days: none for me, very little for her.
Why do I never have ice cream for my night time snacks? Okay… it might have to do with the fact I still need to clean the tiny freezer department of my fridge. Procrastination?! And you have mint chocolate chips over there?? Iβm jealous.
Waking up wihout an appetite is an odd sensation for me, too, but usually reserved for weekends when I actually sleep in. When it does happen on weekdays it’s annoying because I -have- to eat breakfast before heading to work – whether I’m hungry or not. And doesn’t food just taste better when hungry?!

I am not big on noodles – if split pea soup reminds you of something someone ejected, noodles remind me of worms.. π I had some weird tendencies when I was a child (equating noodles to worms was one of ’em) sadly I haven’t outgrown too many of them! Oh girl your blog always leaves me craving sweet but today, the opposite holds true- pass over the tortilla chips, salsa & guac pleeeease! Funny you ask about rice or noodles as I just told my mom yesterday that rice might be my favourite carb lately- cant get enough of stir fries! Last night’s evening snack was a bit lame as I had a late dinner: just a few bites of applesauce. Although what’s not lame is today’s snack: applesauce & almond milk in a near-empty PB jar…mmm you must try (but obvi in an AB jar instead)!

Love how you twisted that old adage at dinner LOL! Unless we talking rice cakes – I’m not too fond off rice..buut I’ve actually only had vermicilli noodles in sweet almond milk (a dessert-ish drink made with condensed milk, vermicilli, sago, almonds) that Mum whips up π .

I was never a picky eater! The only foods I didn’t like as a child are ones I still don’t like (beans especially). My kids definitely take after my picky husband π I tend to eat my meals even if I’m not super hungry mainly out of time constraints and habit, but breakfast I’m always hungry for unless I’m getting sick.

Man I need some vanilla ice cream w/ rainbow sprinkles in my life after seeing your after dinner snack!! Oh gosh i was verrryyy picky of an eater growing up. Anytime we went out to eat id oder a grilled cheese… that was after i asked the waiter/waitress if they used yellow or white cheese. If they used yellow I’d settle for chicken fingers. LOL

Mmmmm, chocolate chipssssss. I’ve got a bag open right now that somehow keeps getting less and less full. As for dinner – I’m right there with ya. No-cook meals are fab. I’m looking forward to dinner w/ my mom tomorrow. We’re eating out, so no cooking for either of us!

Ahh seeing this seriously makes me want to have some split pea and ham soup. I don’t know if I’ve ever had just split-pea soup (without the ham) but either way, even though it doesn’t look good, it sure tastes awesome! π

I obsessively stare and obsess over what other people are buying in line before me and after me in the grocery store.
One lady bought 1) one cheesecake 2) 2 cans of whipped cream 3) 2 gallons of ice cream 4) one can of a slimming drink…it’s like, um, that’s not gonna work for ya!
