Happy What I Ate Wednesday friendly faces! π
I always like to have some sort of theme for my WIAW posts, but I could not for the life of me think one up for this week. It was driving me crazy until I realized that it’s been a while since I did one of my this AND that posts — you know, the ones where I list off some of my favourite foodie combos? The last one I wrote was all the way back in February, which is way too long of a stretch. So, for this week’s WIAW, I give you… this AND that, take 3…
Breakfast… [ almond butter AND jam ]
Eggy bananafied oats layered with plain Greek yogurt and then topped with roasted almond butter and blueberry jam.
Nothing too fancy here — just the classic combo that everyone knows and loves. Well, maybe not classic classic since that belongs to peanut butter and jam, but this is as close as I can get without ending up in the ER so I’ll take it!
Fun fact: I didn’t know the gloriousness that is the nut butter and jam combo until I was 24 years old. Because of my allergy to peanuts, my parents thought it would be a good idea to tell me that I was allergic to all nuts when I was little so that I wouldn’t get confused and accidentally eat any at school. Either they started believing it themselves or they just overlooked telling me the truth because I didn’t find out until I was discussing allergies with my doctor at the ripe old age of 24. Best.discovery.ever.
Morning snack… [ smoothies AND sprinkles ]
A vanilla cake batter smoothie.
I know the recipe says that sprinkles are optional, but in all honesty… they’re really not. Not only do sprinkles instantly kick up the fun factor, but they also add the nicest little crunch to things, which is sort of a big deal when you’re a texture freak like I am.
Lunch… [ eggs AND avocado ]
Two eggs scrambled with baby spinach, half an avocado, two slices of toasted rye bread (one with hummus and the other with orange marmalade), and baby carrots.
Remember how I said I didn’t try almond butter until I was 24? It was around that same time that I had my first taste of avocado as well. It had nothing to do with allergies in this case, though. Avocados just weren’t ever really a thing in my family when I was growing up, so I didn’t pay much attention to them until I started reading blogs and getting more adventurous with my eats. Thanks blog world… I owe you one.
Afternoon snack… [ rice cakes AND ALL the toppings ]
A Lundberg salted rice cake topped with Wowbutter and homemade applesauce, with a few squares of Giddy YoYo vanilla chocolate.
I don’t care if they’re technically a diet food — rice cakes are delicious. Light and crispy with a pleasant ricey taste and just the right amount of saltiness — basically the perfect base for whatever you want to throw on top. I really love them with cottage cheese and jam, but I whipped up a fresh batch of applesauce earlier in the day that I really wanted to dig into, so I went the nut butter & apple route instead.
Dinner… [ sweet potatoes AND cheese ]
Sweet potato nachos.
Per your suggestions, I’ve tried sweet potatoes with hummus and with avocado, so cheese was naturally the next step. Verdict? SO good, especially when I added some diced avocado and a scoop of Greek yogurt post-shot. I made this recipe for a freelance project that I’m working on, so I’ll share the link to that in the next little while π
Evening snack… [ yogurt AND honey ]
Plain Greek yogurt mixed with almonds and topped with buckwheat honey.
When I was younger, the only yogurt I’d eat was the flavoured kind (cherry, peach, and strawberry were my favourites). These days, I’ll still enjoy flavoured yogurts on occasion, but a lot of the time they end up tasting a little too artificial to me so what I’ll do instead is get plain yogurt and add my own sweetener or flavour. A spoonful of jam works wonders (especially for different flavouring!), but honey is probably my absolute favourite.

It looks like veggies are making a resurgence in your life or at least your daily eats. Those sweet potato nachos look to die for, especially with the layer of cheese and the crisp green onions. I’m pretty sure green onions elevate any dish, and it doesn’t hurt they make the pictures look that much prettier. It’s funny; sometimes I add things to my dishes just to make the picture look better (a pop of color here, a dash of this there) and it always improves the dish too. Eating the rainbow does have it’s perks.
Lunch time snack platter for the win. We should combine forces and come up with the ultimate plate.

Oh my goodness yum! Everything looks so good. I ate a rice cake with peanut butter & apple slices for breakfast this morning & it kept me full until 1pm. It was good too. Happy Wednesday!

I’m a huge texture girl as well! That’s why whenever I make smoothies I add ALL the toppings, puffed cereal, buckwheat, fruit, coconut shreds, cacao nibs, goji berries, and Have you done coconut oil mixed with cocoa powder and sweetener of choice? Do it and thank me later hahah! You just stir them together (liquefy your oil) and pour into smoothies and ice cream then throw it in the freeze for a couple of minutes… Magic chocolate shell! I also love to add dates and nuts. Clearly a texture girl (plus I never stay full from a plain smoothie for more than 10 minutes no matter how much protein and fat is in it! I need to chew lol!)

That is really sad – and kind of funny – about the nut butters! Wow, I bet almond butter was like heaven on a spoon. I can’t imagine a childhood without nut butter … no wonder you use it so much; just making up for lost time! π

Love the concept of “This AND That”!! I would have to say my favorite combo is almond butter & jam… I cannot believe you didn’t try the amazingness until 24! Pretty hilarious that you went so long thinking that you had the allergy– but I totally get it, my niece is deathly allergic to cashews and life would be a lot easier if she thought she was allergic to all nuts!! Also… rice cakes + all the toppings = heaven on earth for sure.

Almond butter AND Toast if that counts. I think almond butter is the best to eat on toast, bagels, English muffins. You get what I’m saying.
I also love adding baby spinach to my scrambled eggs. It’s not like you can really taste spinach and I get some greens in!
I didn’t really start eating avocados until this past fall when I decided to cut back on dairy due to suggestions by my dermatologist and chiropractor. I had to find a replacement for simple things like mayo on sandwiches. Avocados did the trick and now I love eating them with eggs for breakfast or even in the form of guac!

With you on the rice cakes, seen as a ‘health’ food but I don’t care! Topped with a mashed hard boiled egg and guacamole – yum! or almond butter and dates mushed into it – scrummy!
Also agree about yoghurt, don’t think I could go back to a flavoured variety – plain with my own natural toppings is the way to go! π

Amanda, I really like your informative posts. If you had the desire I would be interested to hear about living with a food allergy; how you were first diagnosed, how it affects duly life, how you deal with eating out, etc.

I’d be happy to write up a post like that, Sarah! But I’ll have to ask my mom some of the details because I was diagnosed super young… I’ll ask her about it when I’m over there this weekend π And for the applesauce, I’ve been loving Golden Delicious lately, but Ambrosia and Gala were favourites as well!

I remember the days I used to not like avocado (the tween years)….I claimed guacamole was ‘bland’ and ‘tasteless.’ Oh, how very misguided I was. I could have chips and guacamole for a meal now.

OK WHY are rice cakes diet food!?! This peeves me, because I LOVE THEM! I have two giant sleeves in my pantry and my mom was like, “I used to eat those when I was in college to diet!” I WAS LIKE WTF they are delicious and I eat them because I don’t really eat bread. I LOVE that combo with the applesauce, I must try. I cannot believe you didn’t have any nut butter until 24…what an amazing day that must have been to try almond butter for the first time.
