Happy [What I Ate] Wednesday, friends! π
Confession: today’s WIAW almost didn’t happen… I woke up yesterday morning thinking it was Monday (thank you, long weekend!), and since I only really take pictures of my eats on Tuesdays, I wasn’t going to bother busting out the camera and breakfast almost passed by undocumented. The horror. Thankfully I read Becky’s Treat Yourself Tuesday post before digging in and WIAW was saved π
So all that breakfast talk from yesterday left me craving my favourite meal of the day like a crazy person, which would explain why I ended up eating breakfast-type meals all day — one is never enough…
Breakfast for breakfast…
Eggy bananafied oats layered with plain Greek yogurt and topped with homemade applesauce, honey, cinnamon, and almond butter.
Another WIAW, another bowl of honey almond butter oats. Like I said yesterday… it’s a combo I’ve been crushing on for a long, long time now and it doesn’t really look like it’s going away anytime soon. It’s basically the reason I get out of bed in the morning, and… yeah… that’s really all there is to say about that.
Breakfast for a morning snack…
My thick & creamy chocolate smoothie.
My smoothie addiction is still going strong, and as much as I’ve wanted to try to experiment with new combos, I just can’t seem to break away from my beloved chocolate and almond butter one… hence the recycled picture — it always looks the same, except maybe not as pretty because I don’t usually bother to dress it up.
Breakfast for lunch…
A breakfast-themed snack plate made up of: two scrambled eggs [with spinach and ketchup], mashed avocado and sea salt on toast, roasted kabocha, and dried pears.
A lot of people mentioned eggs as their favourite breakfast in the comments on yesterday’s post, which left me with a huge craving for the little nutritious powerhouses… especially when Alexis reminded me how much I adore the combination of eggs, avocado, and toast. I’m honestly not really sure what my body thinks of eggs since I randomly start breaking out if I eat too many of them, but sometimes I just can’t say no. Had to toss some ketchup in there because eggs need ketchup, and some dried pears because Amanda needs sweetness.
Breakfast for an afternoon snack…
A chocolate Nature’s Path toaster pastry [with a cup of tea].
Did you ever go through a Poptarts phase? A stretch of a few months where you’d eat nothing but a Poptart for breakfast? No? Just me? Well alrighty then. It’s been a good long while since I’ve busted these out first thing in the morning (I was the epitome of health in my late teens π ), but I still enjoy them as a snack every now and again. I just wish we could get the slightly healthier versions up here in Canada!
Breakfast for dinner…
My banana oat Greek yogurt pancakes in waffle form topped with Justin’s almond butter alongside some maple syrup and plain Greek yogurt for dipping.
So I was really craving some pancakes, but if you know me then you know I’m not the biggest fan of the pancake-making process — I find the flipping/waiting game to be a little stressful and a test of patience that I don’t necessarily have when it comes to food. I mean, you’re looking at a girl who probably eats 3/4 of her meal before it manages to hit a plate, so having to wait for pancakes to reach the appropriate flippability level is just torture. Thank goodness for no-fuss waffle makers! I wasn’t sure if it would work, but they actually came out really well. Light, fluffy, and slightly crisp on the outside. Winning.
Breakfast for an evening snack…
One of my soft & chewy protein granola bars with a cup of warm vanilla almond milk.
You guys… I did it again… I whipped up yet another batch of granola bars. This is, without a doubt, my favourite recipe that I’ve ever posted on Spoons, and also the one I make the most often. Not only are these bars super quick and easy to throw together, but they taste pretty darn fabulous… not that I’m bragging or anything π And I toss the warmed milk in there because… what’s more comforting than a cup of warm milk before bed? Lullaby.
And that’s that — a day entirely made up breakfasty eats, whiiiiich is probably my favourite kind of day. And speaking of favourite days, I’ll see you guys tomorrow for Thinking Out Loud! π
Which do you prefer… pancakes or waffles? Usually waffles, but lately… pancakes.
What’s a smoothie combo you love? Chocolate, banana, and AB — but I need new ideas!
Eggs on ketchup – yay or nay? YAY.
Did you ever go through a Poptart phase? What was your favourite flavour? YES. And S’mores.

I really love pancakes, but I am as impatient as you are when it comes to waiting for them to bubble. Plus, waffles have the little craters you can fill with all the good stuff haha! I looooove eggs with ketchup, it’s almost a necessity. Another fave? Eggs and jam sandwich!
I definitely go through Pop-tart phases. My favorite is either the blueberry with the frosting + sprinkles or the new peanut butter ones they just came out with a few months ago!
Amanda @ .running with spoons.
π I totally love all the reasoning you put into your waffle choice — I never factored the craters into it, but you’re right… they’re amazing.
Kate @ Baking in Yoga Pants
Pretty sure I still stare longingly at the Pop Tarts every time I go to Costco! If I could stop at 1, I would get them each trip. I know myself and my addiction though and it is better to just say no π As far as flavors go…Um, all of them!
Sam @ Better With Sprinkles
Yeees to the Poptart phase. One of my favourite breakfasts when I was a kid! I was never allowed to eat chocolate for breakfast (boo) so my favourite flavour was the Wildberry…is that one still around? The one with purple and blue icing? I miss that one.
Favourite smoothie combo: banana, chocolate, PB. Basically, I’m stuck on (almost) the same smoothie wave as you are. If it ain’t broke…
At home i usually prefer to make pancakes, but I can’t resist a good Belgian waffle if I spy one on a brunch menu.
Ang @ Nutty for Life
The waffles look divine! Seriously the prettiest picture, I think I like the geometric-ness of it, haha. I’m in total agreement with yaβ I could eat breakfast foods all day, every day. I usually don’t eat ketchup with my eggs, which is kind of weird considering I love ketchup on everything else.
Davida @ The Healthy Maven
ketchup on eggs…big no no. That’s like ruining a grilled cheese by adding tomatoes! The worst. Soooo as you can imagine it’s been A LOT of breakfast food around here! 7 of one billion recipes done wahhhhh
Amanda @ .running with spoons.
Can I come over and eat at your house? I’ll be your official taste-tester (aka: I just want someone else to cook breakfast for me π )
Lindsey @ OneMotherofaDay
I could eat breakfast for every. single. meal. all. day. long!! I love breakfast foods!!
I don’t really have a preference when it comes to the great debate between pancakes and waffles. Since I am Paleo I rarely eat either of them :/
Great photos!!
meredith @ The Cookie ChRUNicles
I am totally off eggs but I do love them topped with avocado along side toast. Great combo. I still don’t understand how I didn’t avocado until I was like 30. It’s one of the biggest regrets in my life. For real. Anyway, I used to LOVE poptarts. The double chocolate kind (forget what they were called). Even the original fruity kinds were good to me once when I was a kid. Several years ago I brought them back into the house as a dessert but didn’t love them as much. I have seen the “healthier” versions at TJ and Nature’s Path – I really should get them, if even for my son. I have also pinned a few recipes to make our own. We should attempt it.
Amanda @ .running with spoons.
I’ve -thought- about making my own, but it just seems like so much work! Unless it’s like a tortilla stuffed with some kind of fruity filling and folded into a square — that I can probably do π
Becky@TheSavedRunner
Wow, you really did eat breakfast all day! But I don’t blame you, breakfast foods are the best!! I am so glad you mentioned your homemade granola bars because a couple of weeks ago I asked for recommendations for homemade bars and someone recommended that recipe of yours! I totally forgot to check it out, but this post just reminded me to! I wanted to make some homemade bars this weekend, and after seeing your picture and hearing you rave about them I have to make them now. π
Hilary
I prefer pancakes but probably because I can’t find my waffle maker haha, but as soon as I do I am whipping some up. So many people are enjoying these guys lately!
I haven’t been into smoothies lately but I really do love the nut butter and banana, but I did go through quite the phase of pumpkin smoothies last year!
I am not a fan of ketchup on eggs, oddly I always opt for mustard instead, yes I get a lot of stares when I do this, but don’t knock it till you try it is my motto.
I used to love poptarts when I was younger! I was a huge fan of the chocolate ones!
Chelsea @ A Fit LittleOne
I think I’m a little obsessed with how much almond butter you top your oatmeal with haha :). I wish I had the money to top everything with that much almond butter (#AlmondButterAddict). And those waffles!! I haven’t had a waffle in so long!! My stupid waffle iron doesn’t work, they always get stuck, and rip in half (stuck to the top and bottom of the waffle iron), it always makes me want to cry haha.
Amanda @ .running with spoons.
Have you tried spraying it with cooking spray or greasing it up with a little oil? That always helps!
Amy@Long Drive Journey
I like your trick of photographing all your food on a certain day. I have a post that I’ve been wanting to do for a while, but it involves photographing food and I can NEVER remember to do it. I will be sitting on the couch, belly full, watching TV and then remember, “SHOOT, I didn’t take a picture of my dinner.” Happens every time!
Chelsea
Monday being a holiday totally threw me off too. A day that feels like Monday but is already Tuesday? Greatest thing EVER.
Also. Breakfast every single meal is my kind of day. I LOVE breakfast π
Sarah
When I was growing up my mom refused to buy Pop-Tarts. I really wanted to try them, the commercials just made those little pastries look so good! Finally, once when we were going on a road trip to Montana she caved and said we could get a box. Well, I was overwhelmed, how could I possibly choose one flavor? So, I let my brother decide and he chose frosted brown sugar cinnamon. The next morning, I excitedly tore open the package. Bleech! Cloying sweetness, no go. I thought perhaps it was simply the flavor choice and the fact it was frosted (I’ve never been a frosting fan) but, nope, tried an unfrosted flavor at a friend’s house and remained sorely disappointed. C’est la vie!
As for smoothies, lately I have been crushing on banana orange smoothies (milk, protein powder, dollop of Greek yogurt, cinnamon, vanilla, 1/2 frozen banana, small orange, chia or almond butter optional.) Also, my solution to the end of a jar 0f nut butter (because, like you, I’m not a member of the OIAJ fan club) is to mix the liquid ingredients for my smoothie in the jar then transfer to a blender. The milk loosens the dried bits of almond goodness and, of course, makes any smoothie that much better. (Alternatively, you could drink your smoothie out of the jar but that isn’t so different from eating oats out of a jar plus I like incorporating the nut butter into the entire mix.
Amanda @ .running with spoons.
When I stop to think about it, Poptarts really aren’t very good π But they’re just one of those things that I get a craving for every now and again and I can’t really figure out why. C’est la vie π And that’s actually a brilliant solution for empty nut butter jars! Mine are actually in pretty good shape right now, but I’ll definitely be doing that when they run out.
Erin @ The Almond Eater
Wow talk about a full day of breakfast lady! Although I am loving your lunch A LOT. Yes I went though a pop-tart phase! They never really filled me up but I loved them as a snack warmed up in the toaster–so good.
Amanda @ Diary of a Semi-Health Nut
Breakfast all the time!!
I’ve never been a fan of ketchup on eggs but recently I’ve tried salsa and hot sauce on eggs and it’s quite delicious if I’m in the mood for spicy in the am!
Kat
THIS is my kind of day right here!! Breakfast foods all day every day for sure with me. I was actually craving oats for dinner like crazy yesterday, but alas then what would my hubby eat?? So I made a “traditional” dinner instead. BUT, oats are totally happening for dinner tomorrow night seeing as how he’s going out with friends. Woot woot!
And now you’ve got me craving avocado on toast….
Nicole @ FruitnFitness
I love eggs with salsa but no ketchup! Never ketchup! Your day full of breakfasts looks so good. Breakfast food is for sure top of the list. I love having eggs for dinner but almost always choose oats for breakfast.
Liz S.
Poptart phase all the way, back in the day. Favorite flavors were S’mores, Frosted Cherry, Frosted Blueberry, Frosted Brown Sugar, and Unfrosted Strawberry. NO shame.
Amanda @ .running with spoons.
No judgment π My only complaint is the fact that all of the fancy flavours like cookie dough came out AFTER I swore off Poptarts. Le sigh.
Jen@Twenty-Something&Starving
Oh, man. This looks like a perfect day to me! I LOVE breakfast foodsssss!!! I, too, am a s’more poptart kinda gal. They were one of the few things I really craved at the beginning of my pregnancy. Those waffles look amazing! I’m definitely a waffles over pancakes person. And I actually really don’t care for ketchup – I like hot sauce on my eggs!!! Happy Wednesday!! Also – favorite smoothie as of late – frozen mixed berries, 1/2 frozen banana, vanilla almond milk, plain greek yogurt, chia seeds, and about 2 teaspoons of fresh grated ginger. The ginger makes it ridiculoussss!!!
Kim@hungryhealthygirl
Looks like the perfect day of eats to me! Good to know that your pancakes work as a waffle. I’ll be making that very soon!
Shashi
I am not sure what it is about the combination of honey and almond butter with oats that is just so darn delicious and addicting! I know you cannot try PB – but PB and honey and oats just aren’t the same as AB and honey and oats!
My daughter LOVES ketchup on eggs – when she was in elementary school that was the only way she would eat eggs! But I like chili flakes or avocado with/on them. Poptarts you say – OHMGEEEEE – I was addicted to the strawberry ones through college – those and the muffins I brought home from my job at a bakery and salad bar were what got me through those 8am classes! π I do adore pancakes – anything with the word “cake” in them is a win win for me! As for smoothies – I like mocha ones (almond milk/coffee/choc syrup/vanilla protein powder) and green ones (spinach or kale/banana/pineapple/vanilla protein powder/almond milk).
Happy Wednesday lady!
Cat
Yes to eggs and ketchup! You’ve reminded me of that combo and its def making a breakfast appearance this week… Sadly, I don’t have a waffle maker (yet…) but I can relate on the pancake flipping stress! All the more reason for me to get a waffle maker I guess π
Mary Frances
YES! Breakfast all day is my kind of day actually. I came home from Easter and had almond butter banana oats for dinner. Yup, that was good, unorthodox, but really good! Those dried pears, and then your waffles, both look amazing!
Ksenija @ With An Open Mind
Haha, a full day of breakfasts? That is totally up my alley – I could do that ALL day every day – as I mentioned yesterday, oats pretty much took already over most of my meals. I loved your pancake recipe lady and I cannot wait to try making them in a waffle maker, since I am really not a huge fan of flipping and waiting – you may call me miss impatient over here.
May I dare you to create a healthier pop tart recipe? I tried the real deal only once a few years ago in California and really wasn’t impressed, but I am pretty sure that I might enjoy a version that doesn’t taste like dusty cupboard π
Amanda @ .running with spoons.
I’ve thought about it so many times, but it just seems like so much work! I’ll add it to my recipe list, though, and maaaaaybe I’ll get around to it one of these days.
Pip {Cherries & Chisme}
Which do you preferβ¦ pancakes or waffles? Pancakes but that’s only really because waffles are pretty hard to come by in the UK – am gonna have to buy a waffle maker!!!
Whatβs a smoothie combo you love? Banana, nut butter and jam π
Eggs on ketchup β yay or nay? Yay yay yay.
Did you ever go through a Poptart phase? What was your favourite flavour? Never had a Poptart in my life…
Your day of eats look heavenly!! Can I move in? Thanks.
Brittany @ Delights and Delectables
mm… I LOVE breakfast! My fav smoothie right now is banana, strawberry, and cocoa powder! Of course with some vanilla protein powder, but you could leave that out and put something sweet in… maybe dates? or honey?? YUM!
Ms.J
This day of eats = perfection! Thank you for not depriving us of that heavenly bowl of oatmeal. I’ve been enjoying the same combo with a chocolate spin on it this week π .
Oh nothing beats that smoothie combination. I need to have a smoothie soon..its been cooold here, and my stance of bundling up to slurp a smoothie is wavering to make way for PB slathered banana bread π .
Susie @ Suzlyfe
First off, let’s be real. Everybody who is anybody went through a poptart phase. and if s’mores wasn’t their favorite, then they a) hate chocolate and b) hate life. I liked the brown sugar, blueberry, and cherry too, though. I try not to discriminate between pancakes or waffles–they are both really good friends. But lately I’ve been into French Toast (as evidenced by last Friday’s round up of recipes. But if you look at my post today… there is a little something called CHICKEN AND WAFFLES that made an appearance π
Amanda @ .running with spoons.
π I love the way you think. Omg chicken with waffles? A girl after my own heart.
Miss Polkadot
Call me weird but I was the odd kid who didn’t like ketchup. Nor mayo. So yes, I ate my french fries plain. Or, well, with salt because that’s the only topping they really need. Neither did I go through a Poptart phase but I guess being German might be to blame for that one. We don’t have Poptarts or any kind of similar pastry over here but I went through a good phase of those mini chocolate croissants [with a goofy clown on the package no less ;)] for snacks. Aaah, good memories.
Pancakes or waffles? Hm. I know I’m not fond of pancakes but I haven’t had waffles in ages. Buying a waffle iron when I will probably use it just once doesn’t seem justifyable. Wait until I meet my brother again and can tweak his ears for ‘borrowing’ my parents’ waffle iron and never returning it!
Shannon
Honestly, I’m not really a big pancake/waffle person, however if any are put in front of me I will devour BOTH. I just never think to order them!
I loooove ketchup on eggs…on anything… π
I haven’t had a poptart since I was a kid! Holy cats, that brings back memories. Gimme all the Brown Sugar Cinnamon!
My smoothies always have spinach, banana, and almond milk in them. And I add cocoa powder, chia seeds, protein, almond butter, strawberries… any mixture of that and I’m soliddd π
Lauren-Kate
Breakfast for dinner all day – amazing! My favourite smoothie combo at the moment is banana, frozen mango, frozen spinach, cashew nuts, dates, cinnamon, hemp protein powder and if I want an extra boost some spirulina! We were NEVER allowed pop tarts as kids – my mum said that they would ruin the toaster haha. I did eat a load of the cinnamon flavour ones when I went to NY for my 21st – see what banning your children from things does!? ha
Amanda @ .running with spoons.
π π Oh I can definitely relate to that. My mom raised me pretty healthy and I kind of went buck wild when I grew up and was starting buying my own foods. Oops.
Aimee @Healthy Petite
Oh my gosh this looks like the perfect day of food. I use your pancake recipe all the time and never thought of making it into waffles! Genius! Now I just have to buy a waffle machine… (not an easy feat in Australia!). I have never tried a Poptart or anything like that, they just look so dry to me? But they must be good as people love them!
Oh and ketchup on EVERYTHING! Seriously, I get teased in my family for the amount of ketchup I eat..
Khushboo
Oh PopTarts- how I loved thee. I had a thing for the chcolate and strawberry flavor (these were the days before the more exotic flavours like cookie dough came out). Is it weird that I preferred them straight out the packet over toasted? If you’re looking for a new smoothie combo, you must try frozen banana with frozen cantaloupe, vanilla extract & almond milk- SO delicious and very summer-appropriate! I might have to factor in waffles tomorrow- I’m now craving some. It must be a texture thing because despite using the same batter, I prefer waffles over pancakes!
Amanda @ .running with spoons.
I wish the more exotic flavours came out sooner, too! Back in the day it was like… s’mores, chocolate, strawberry, or blueberry. Bah! Still good though. And YESSS to eating them untested. I’d usually toast them for breakfast, but if I’m grabbing one for a snack then it’s almost always straight outta the packet.
Jessie
Can you please just open your own diner. I’d be first in line every single day!!! I just saw Kim mention your pancakes today. I really do need to give these bad boys a try. I love that I know they work in waffle form as well. Yay!!
Id take waffles over pancakes.. banana/pb/protein powder smoothie… always top my eggs with ketchup.. um growing up I was obsessed w/ poptarts. I could literally eat one for breakfast, snack & than at night if my parens would’ve allowed it Ha Ha!
Heather
I have breakfast for dinner at least once a week because I’m usually to lazy in the morning to make pancakes! I ate pop tarts all the time back when my metabolism was a beast (aka high school)
I liked the s’more ones! I seem to remember a colorful one too… Like sprinkles maybe?
Alison @ Daily Moves and Grooves
Breakfast FOREVER. β₯ I need to have an all-breakfast day again soon.
Waffles for all the crispy edges!
My #1 smoothie combo is banana peanut butter, but I also love strawberry, melon, pineapple banana, and coconut oil!
YAY for ketchup.
I never went through a Poptart phase I don’t think, but my favorite flavor is the brown sugar cinnamon. Now I’m kinda craving one thoughβ¦
Amanda @ .running with spoons.
π They definitely hit the spot sometimes. I’d try to make my own, but ugh… too much work. I just try to go for the sorta-healthier Nature’s Path ones instead.
Becky @ Olives n Wine
Glad my Tuesday post saved the day π and yes, s’mores poptarts are the bomb dot com! I used to live on those in college. I was obviously super healthy!
Liz @ I Heart Vegetables
I looove breakfast foods, so I’m right there with you. Waffles for dinner anyone?
Tiff @ Love, Sweat & Beers
Yes, yes, and yes. Breakfast all day sounds good to me. And heck yes to the Poptarts! I used to let myself have them occasionally in college, and then of course there was that whole pregnancy thing… still fighting those cravings. haha
Krista @ Tiny n Fit
Ketchup on all the things! Ok, maybe not oats…that’s going too far π
Amanda @ .running with spoons.
I’ve actually put ketchup on oats before, but they were savoury so it totally worked π
