Happy [What I Ate] Wednesday lovely ladies people! π
Since last week’s WIAW was a little on the lengthier side, I’m going to do my best to keep things less wordy this time around — we’ll see how successful I actually end up being with that. So instead of devoting too much of my word count to an intro where I most likely fail at being witty and charming, we’re going to cut to the chase and talk cold hard facts instead…
Breakfast…
Eggy bananafied oats layered with plain Greek yogurt and topped with homemade applesauce, honey, cinnamon, and almond butter.
Fact: I prefer eating my oats cold… and I’m not talking about the overnight kind (not a fan!). I like my oats cooked on the stovetop and then cooled to room temperature. I’m huge on textures, and I find that this method gives my oats the thicker, poofier, doughier texture that I absolutely adore. Runny, soupy oats are a no-go in the Spoons kitchen!
Morning snack…
A chocolate covered raspberry oat bar alongside an Americano from Bux.
Fact: I crave chocolate in the morning… and pretty much every other time of the day, but around 9 or 10 AM especially. I blame this on the fact that that’s when I drink my coffee, and coffee just tastes better when paired with chocolate. But hey… at least chocolate comes from plants, and is therefore a healthy choice π
Lunch…
A snack plate filled with: a Dr. Kracker crispbread, half an avocado [that I had to butcher and reconstruct because the bottom half was brown], roasted kabocha, dried pears, and cottage cheese with raspberry jam.
Fact: Cottage cheese doesn’t always agree with me… but I eat it anyways. I don’t know what it is, but my stomach and I don’t always see eye-to-eye when it comes to cottage cheese. Whereas I love the stuff, my stomach isn’t really the biggest fan and tends to make a fuss while I try to enjoy myself. You’d think that would be enough to keep me away from it, but no… the slight discomfort is [usually] worth it, especially since it isn’t a guaranteed thing.
Afternoon snack…
A thick and creamy chocolate smoothie.
Fact: This smoothie tastes like melted chocolate ice cream… which is probably why I love it so much. I think I’ve had one of these almost every day since I posted the recipe back in February, and yeah… that’s really all there is to say about that.
Dinner…
Crepes stuffed with cottage cheese and blueberry jam, with a banana on the side.
Fact: I will never get tired of eating breakfast for dinner… ever. This would probably be a little different if I was cooking for someone other than myself, but I’m taking full advantage of the fact that I don’t have to right now and enjoying brinner multiple times a week. Also, blueberry jam is the best jam there is. Also, what veggies? π―
Evening snack…
A soft and chewy protein granola bar with a side of plain Greek yogurt.
Fact: I’m buried up to my eyeballs in snack bars… which isn’t actually a horrible problem to have. They’re easily my favourite thing to make and eat at the moment, but I have a feeling I should probably lay off before I get sick of them. Or just start pawning them off on people — any takers?
See you guys tomorrow for Thinking Out Loud! π

I used to really like reading your blog, but I feel like all of your WIAW are the same.
Amanda @ .running with spoons.
I’m sorry you feel that way! I just tend to eat a lot of the same things because that’s what I love and I don’t really like spending too much time thinking about new and exciting things to try. Probably why I only blog about my eats one day a week π
Beth
your wiaw are wonderful to read!! Eat whatever you crave. Life is too short! Keep it simple, I say. I don’t like to spend time thinking about new and exciting things either. Too much trouble. I go with the oldies but goodies and usually just rotate dinners.
Nicole @ FruitnFitness
If you have too many snack bars you can always send some to the states, lexington specifically :). Looks like a great day of eats, I typically eat cold oatmeal at work every morning. I like oatmeal best when it has sat for awhile and thickened up.
Holly @ EatGreatBEGreat
Everything looks fantastic! And those crepes…yummy! I’ve made crepes once and they didn’t turn out all that well. Just curious, what recipe did you use to make them? They look perfect!
Amanda @ .running with spoons.
It’s actually just a recipe that my mom taught me how to make. I keep meaning to post about it but the measurements aren’t exact — I just keep adding things until the texture is right. Hopefully I can get around to it one day…
Jaclyn @ BumpSweat
I’m a big fan of overnight oats! Speaking of, though, oats are one of those foods I sometimes tolerate just fine and other times can’t. Soaking them overnight seems to make them much more tolerable.
Amanda @ .running with spoons.
I used to have that problem with oats, but I find that I do much better when I use quick oats as opposed to old fashioned or steel cut. Apparently my stomach just isn’t a fan of having to process harder-to-digest grains.
Hilary
I am a fan, but because they are simply just easy haha, I am all for convenience and those things are a grab and go!
I am with ya on the cottage cheese! I love that stuff and sometimes it’s not that bad either haha so worth a little torture!
I had overnight oats haha topped with some peanut butter granola and I am still dreaming about it !
Ashley @ Kick Ash Mom.com
I haven’t tried overnight oats yet. I hear good things about them but I didn’t know they are eaten cold. That’s a tid bit weird. I think Id prefer cereal if I’m going to eat something cold for breakfast.
cait @pieceofcait
I still haven’t tried eggy oats! wowza that crepe looks AHmazing.
Erin @ The Almond Eater
Omg give. me. those. crepes!! Fact: I also prefer my oats cold, only the overnight kind π But I do agree warm and soggy oats are a NOOOOO. I also tend to crave chocolate in the mornings which is why a mocha is usually my coffee of choice.
Christine@ Apple of My Eye
When it comes to making my oats, I actually cook them, then let them cool, before heating them up again. That gives them that poofy/doughy texture but I still get to melt brown sugar on top! And YES. For me, coffee and chocolate are better soul mates than chocolate and peanut butter. I’m not even sure why, but a small bite of chocolate before a sip of coffee makes your cup of ‘Jo 5 million times better. Magic, I tell ya.
dixya@food, pleasure, and health
your lunch platter looks delicious.
Yoojin
your wiaw’s are my favorite π
i don’t know what it is, but they make my days so much better!
cottage cheese is the same way for me! i loooove the stuff, but i don’t think it settles very well in my tummy.. but it’s so good π especially with honey and almond butter…
Amanda @ .running with spoons.
π₯ Omg I KNOW. Have you tried it with jam?! Ridiculous. Don’t try it!
Audrey @ In Shape Cupcake
Without fail, you make my mouth water with your delicious looking eats! That bowl of oats…oh dear god, YUM!
Carmy
Can I please live with you?! Oh my goodness your lunch and dinner looks delicious (I can’t make food to save my life – I survive off take out and my BF’s cooking )
Amy@Long Drive Journey
I love that everything you eat is sweet and everything I eat is savory! We would be the perfect snack combination (you know, if we were snacks and not humans). You’d be the sweet and I’d be the salty, and we’d be like a yogurt covered pretzel or something. Fabulous.
P.S. you are so close to 1000 Facebook likes. I don’t know if those really mean anything these days, but that’s amazing π
Chelsea @ A Fit LittleOne
I haven’t had a crepe in so long!! And there is a “CrepeVille” near me, I feel I should go! I wish I could ignore my intolerances (dairy and gluten), but I always end up waking up in the middle of the night sweating and sick haha no fun.
Amanda @ .running with spoons.
Awwr yeah those reactions sound a little more extreme than what I have to deal with — I’d probably avoid foods too if that were the case.
Davida @ The Healthy Maven
Well you know I can’t control myself around crunchy, fresh french bread! Sometimes it really is worth the bloat and bathroom troubles!
anoushe
I like the “ladies” part at the beginning.. I touched on that in my post today too.. somehow women like to know what other women eat. It’s such a weird phenomenon!
I loooooooove the way those crepes look! I must make pancakes for dinner sometime too… and I wish I had a surplus of snack bars..I’m stuck at work with no snacks (which is kind of what was planned as I’m otherwise eating every single half hour, but you know..you always want what you don’t have ;))
Mai-Lis @ A Sunshiny Day
Oh wow, those crepes look SO good right now. I would agree, blueberry jam is the best! Especially when it has whole little blueberries in it π Ok, I might need to go eat some out of the jar…
de @de-lightful
ALL of this looks amazing. I want to dive in to my screen.
Jo @ Living Mint Green
My stomach hates cottage cheese too – it’s so sad! I need to make a new batch of chewy protein bars. I’m in possession of so much protein powder right now – all thanks to NCN. Haha.
Ummmβ¦. all I ate for dinner last night was peanut butter. I wasn’t particularly hungry, but felt like I needed a little something in my stomach.
Sarah
Not a fan of overnight oats. Huge fan of homemade applesauce. Every time you mention it I get a craving but, so far, have been too lazy to accommodate.
I have mild sensitivities to certain veggies (cruciferous critters) and grains. I always cook them but they still play havoc on the tummy. I really want to try Kabocha but other winter squashes produce the dreaded squash belly and I am quite certain I would like Kabocha therefore ensuring a battle between taste and tummy.
Fact: cacao powder was a terrific investment, its presence in my smoothies makes me smile π
Amanda @ .running with spoons.
Cacao powder… That’s a craving that I need to get around to accommodating. Thankfully I’ll be headed to the store right after I get done in Starbucks, so I’ll definitely be putting it on the shopping list π
Jemma @ Celery and Cupcakes
I want your dinner for my lunch right now, looks beautiful! π
Miss Polkadot
What is it about cottage cheese, really? While I’ve been eating it almost every day for the past weeks it doesn’t actually sit too well with me and it seems like that for many people. Same goes for Greek yogurt. I still tend to play it down but looking back I can remember numerous occasions in the past years when eating it was followed my… discomfort not to get all TMI here.
By the way: your lunch snack plate looks like an artwork. As is that dinner plate which also has me craving blueberries like crazy. Maybe you should consider catering as a second business. Or third after your hopfully-to-be-started-soon snack bar company.
Sarah @ Feeeding the Brain and Body
I am the same way with texture and temperature. Once food is cooled the texture is so much better…especially oats!! Thank fully cottage cheese agrees with my stomach. Unfortunately it doesn’t always agree with my wallet.
Shashi
“I crave chocolate in the morningβ¦ and pretty much every other time of the day” it’s like you are IN MY HEAD!!! π
One can never ever have too many snack bars! But if you ever feel like you do – sharing is caring … just saying π
Those crepes do look amazing! I do love overnight oats; however, speaking of sensitivities, I think I’ve been OD-ing on oats – but, it’s so hard to stop…I tried taking a break from my bowl of oats, but then ended up eating oats in pancake and scone form…GAH!
Happy wiaw lovely!
Amanda @ .running with spoons.
Ugh… the WORST. I will say be careful on overdoing it though! It happened to me before and I had to give up oats for like a year. Now I’m back to eating them with no problem, but I still try to limit myself to only eating them for breakfast instead of sometimes 3x a day like I used to π―
Jenn@ Mark My Miles!
Yum! Everything looks delicious and now I know that I will be having breakfast for dinner tonight : )
meredith @ The Cookie ChRUNicles
Cold cooked oats are my absolutely favorite and the only way to do the overnight oat in my world. It is favorite thing to eat mixed with plain greek yogurt, fruit and peanut butter. Totally agree with you on the texture, it is the best.
Ms.J
I am snacking on chocolate right now (Lindt chilli!) and I think that’s a really good thing, because this post would have ignited a craving immediately!
Overnight oats: depends on the season. Actually no, that’s a lie. Depends on my recent breakfast moods. I was on a kick for the longest time not too long ago.
Now that there’s a chill in the air, my chocolate cravings have gone up a few notches..I suppose I need that extra heat to keep warm π .
Oh I wonder if the bars would stand a looong trip down to the Eastern Cape !?
Sam @ Better With Sprinkles
not an overnight oats fan at all…the texture is just…mushy? Not big on it – I prefer my cooked oats. And your crepes look so good! I will happily make pancakes, but crepes just intimidate me.
I stopped for a while, but I’m back on my chocolate-after-breakfast kick. It just makes me so happy and basically completes my morning. So my last meal was oatmeal…followed by a chocolate square. Fantastic.
Amanda @ .running with spoons.
π I’m the complete opposite when it comes to pancakes vs. crepes — I prefer making crepes! And I’m pretty sure the main reason I add chocolate to my bars is so that I have a “healthier” excuse to satisfy my chocolate craving in the morning π
Morganne @ NutButterRunner
Fact: your photos always make me hungry.
And now I am craving roasted kabocha. An emergency run to the grocery store may ensueβ¦ π
Pip {Cherries & Chisme}
I totally think you should get Starbucks to stock your snack bars – solves your problem and yummy food for us! π
I have just finished the most amazinggg blueberry pancakes – super soft and fluffy, I took myself out for breakfast because…it’s Wednesday?
Cat
Those crepes. Those crepes… I had pancakes for breakfast but I can totally have crepes for dinner right? Different class of battery-good altogether π
I definitely eat some foods that don’t agree with me – I’m always thinking ‘may be this time I’ll be fine..’ Yeah. And kabocha is one of them – but I’ll be damned if I’m giving that up…
Khushboo
Sure I’ll take those granola bars off your hands…actually more like YES PLEASE! I think you know my stance on overnight oatmeal- love the stuff and I should probably go make a batch up for tomorrow morning before I forget. Any chance you’ll be posting that crepe recipe?? That dinner plate looks heavenly :)! Despite my stomach’s aversion to dairy, I seem to conveniently forget about it when ice cream comes in sight..sadly my body more than reminds me that it’s not a fan the next day. I’m sure you’ll agree that some foods are worth the digestive discomfort!
Amanda @ .running with spoons.
Ohhh the crepes. It’s a recipe I’ve been making forever but I never measure — I just keep adding things until the texture is right. I’ve been meaning to post about them for a while now, though, so I may just have to pay attention next time I make them.
Jessie
I will never eat warm oats. The texture, heck even the thought just gives me a weird feeling. If I’m not having overnight oats, I just throw my stove top oats in the freezer for about 45 minutes to an hour. I like em niceeee and chilleddd π
ps. I’m dying to know what recipe you used for those crepes. Holy deliciouss!!!!
Amanda @ .running with spoons.
π I was worried someone would ask because it’s just a homemade recipe that I never measure — I just keep adding stuff until the texture is right. I’ve been meaning to post a recipe forever now, but I just can’t get around to paying attention to what I add.
Shannon
I have never tried overnight oats, but I don’t think I’d be a fan. I actually like my oats with very little water in them, so they’re almost still pretty dry – Is that weird?! I then add my AB or PB and microwave it to get that to melt down. I’m a big fan of room temperature oats too!
I definitely can’t do dairy. Buuuut I always crave froyo. That’s an issue haha.
What times do you usually eat your after-dinner snacks? I find that if I eat past 7 I don’t always digest well! I looove granola bars as late night snacks π Or even just a big bowl of peas (Weird, yes.)
Amanda @ .running with spoons.
Not weird at all! I love my oats on the drier side as well, which is probably all the more reason to make more baked oatmeal. And I don’t really have a set time for eating my after school snacks… sometimes at 7:30 and sometimes at 9 — it all depends when the hunger hits!
Liz @ I Heart Vegetables
YUM!!! Everything looks so delicious! I wish I could have smoothies in the afternoon. They’re such a perfect snack, but since I’m not home, I’d have to master the art of keeping it frozen but not TOO frozen all day haha
Susie @ Suzlyfe
I think that we wouldn’t be human if we didn’t shirk our body every now and then, within reason. I try to avoid giving myself too much discomfort, but I allow myself certain types of gum as a treat, even though it makes my lower regions rumbley–trident is fine for me, but orbit, extra, and a few others have a certain sugar alcohol that just is iffy for the stomach.
And I love blueberries in cottage cheese. I had it last night too! I’m about to have them stirred into egg white oats with some nut butter too. MMMMmmmm love breakfast.
Amanda @ .running with spoons.
Okay I thought it was just me who noticed the differences in certain gums… I -always- chew Trident because I noticed the other ones give me more problems. Nice to know I’m not crazy π
Tiff @ Love, Sweat & Beers
Oh my gosh, your dinner! I want that nowwwwww. π I too prefer oats at room temp. I cook them in the microwave, but they get spongey and more muffin like when I let the rest a while.
Heather @ PrettyHealthyMostoftheTime
I love overnight oats but not if they are soupy.
My stomach doesn’t love white potatoes but I have to eat them anyways…
I just looked back at my WIAW and realized there were 0 veggies.. Oops!
Amanda @ .running with spoons.
π You and me both. I just haven’t been feeling the veggies lately… maybe that’ll change with nicer weather.
Hollie
I think breakfast for dinner is always an excellent choice because it’s so fast, quick and easy. Plus you normally have the ingredients on hand to begin with. At least that is my general opinion.
