I feel like it’s been forever since I’ve talked about food here on Spoons, and that might be because… err… it has been forever. The last time munchies were mentioned was waaaaay back in the beginning of the month, but as luck would have it, today just so happens to be WIAW, so let’s take a look at what my eats have been looking like lately, shall we?
I’ve gotta say that remembering to take pictures of all of my meals definitely took some conscious effort after not photographing anything for the past month or so, but I somehow managed to capture most of what I ate yesterday, minus the random handfuls of snacks that inevitably made their way into my mouth throughout the day. Oops?
Breakfasts have mostly been the same old thing. I’ve been having either yogurt messes or oatmeal, and just varying up what I toss in the bowl. Yesterday was an oatmeal day…
Eggy oats layered with plain Greek yogurt and then topped with almond butter and honey.
An oatmeal day that did not hold me over as much as I would have liked 😡 I was feeling munchie again a mere 1.5 hours later, but I mostly blame that on the fact that I was up at 4:30 AM (whyyyy?!) and my appetite was probably catching up to me after being MIA the day before. Needless to say, I was more than ready to dig in to the morning snackk that I packed to take with me…
Plain Greek yogurt with fresh blueberries.
Fresh blueberries probably remind me of summer more than any other fruit (save maybe watermelon). I remember not being that big on fruit when I was a kid (what was I thinking!?), and my dad always giving me blueberries sprinkled with sugar so that I’d be more inclined to eat them. It kind of seems like it would defeat the purpose, but at least I was getting some antioxidants in along with the sugar? These days, plain berries suit me just fine, as do fresh and cool snacks in the first half of the day.
Lunches, on the other hand… ugh… Lunches have been the bane of my existence. No matter how I approach it, lunch is still my least favorite meal of the day, which is probably why I’ve mostly given up on it and resorted to just snacking the afternoon away instead…
Chicken (baked in olive oil and Mrs. Dash) with random veggies.
Triscuits and baby carrots // Barefruit apple chips and almonds with raisins.
Grape kombucha.
… and then making the transition from “lunch snacks” to “afternoon snacks” somewhere along the way 😉
Spoonful of Justin’s vanilla almond butter…
… with an eventual banana accompaniment.
Can we just talk about that almond butter for a second? I am a woman ob.sessed. I know I’m a little late to the party, but it’s not sold up here in Canada (I picked some up while I was in Vegas), and Justin’s just recently started making their ABs in a peanut-free facility, which makes my allergy-ridden heart all sorts of happy. In any case, this stuff has become my crack, and I’ll definitely have to look into ordering some online after I run out. But I digress… back to the eats.
Unlike my snacky lunches, dinners are pretty much always a concrete meal…
Beef rouladen (stuffed with ham, leek, mustard, tomato paste, and pickles) alongside roasted potatoes.
… and if I’m lucky, one that I can mooch off Mom 😉 I don’t really eat red meat all that often, but I definitely enjoy it from time to time, and especially when I don’t have to prepare it myself (hello fear of giving myself food poisoning).
After dinner comes dessert…
After Eight chocolate mints. Dangerous[ly] good…
… and if I’m lucky, a [Skype] date with J. I usually have another snack before bed…
Rice Krispies and Kashi Cinnamon Harvest with milk.
… and wake up the next day to do more-or-less the same thing over again.
I have to say that I’m pretty happy with how my eats have been lately. My body seems to have found its groove, and I feel like I eat a good mix of predominantly healthier fare and treats without really having to give it too much thought. Granted, there are days where that’s definitely not the case, but it’s all about looking at the bigger picture, right? Right.
Happy Wednesday, friends! Hope it’s a good one for ya!
. – . – . – .
Are you a fan of the mint chocolate combo?
What fruit most reminds you of summer?
What snack do you usually end the night with?
Do you feel like you’re in a pretty good place with your eats right now?
Maggie @ Sunnyside Up Smile
Oh my gosh don’t get me started about Justin’s Nut Butters. Aren’t they the bomb? 😉 I’m obsessed. The fruits that remind me of summer are strawberries and mangoes. Summer just isn’t right without them. My eats have been delightful lately as I’ve come up with a bunch of new recipes but the problem is I eat everything I make and the calories are adding up 🙁
meredith
I am in a mixed place with my food right now – I have been stuck inside insane hungry days and while I always eat when hungry, it becomes frustrating when you know you are eating and won’t be full for long! Also, I eat out a lot more in summer and I try to make sure I am enjoying it yet keeping myself in check…my favorite nighttime snack is the granny smith apple/pb/dark chocolate combo. never gets old and is missed should a day pass where I don’t have one (which isn’t often)…favorite summer fruit? hmm. watermelon because I buy berries all year long (just overpay to have them).
Natalie @ Lift,Sleep, Eat
Oh yum! All of your food always looks so good! I LOVE chocolate mint – mint choc chip ice cream <3 drooool! After Eights always remind me of Christmas as we always have them with our coffee after Christmas Dinner is all over with.
Strawberries to me just scream summer! Yum!
Alex @ therunwithin
still looks like the Amanda I know! haha lots of your favorites, I can’t see those Bare Apple chips or OIkos yogurt without thinking of you
Hannah @ CleanEatingVeggieGirl
I love seeing other people who snack as much as I do, especially at night. I do NOT go to bed hungry!! 😉
Amanda @ .running with spoons.
Oh girl, me neither. I’m pretty sure there’s no way I’d even be able to fall asleep if I was hungry.
Cassie @RedLetterDaye
After a alchohol and food filled vacation with no workouts, I definitely have been glad to be back in my normal food/exercise routine, but without crazy pressure.
Your dinner looks so comforting and delicious!
Alyssa @ Road to RD
Before I went vegetarian, I used to love rouladen! My Grandma would make it with red cabbage and spaetzle! Such good memories with that meal.
Alex @ Cookie Dough Katzen
Gosh I’ve missed your foodie posts! You have a way with the camera that makes me want to run to the fridge. Haha! I’m a huge chocolate/mint fan. So good!
Lauren
We should probably have a Skype date one of these days J isn’t able to have one 😉 And I think everyone has days they feel less than stellar about their eats but it’s just the way you take it from there which is important. I know my Mom, who has had no eating issues what-so-ever, says she feels bad about eating certain things certain days… I just think it’s (unfortunately) normal. My favorite summer fruit right now is apricots. I just love them with greek yogurt, cinnamon, and almond butter. Mmm. My go-to nightly snack is some sort of parfait or oatmeal. Maybe a pop-tart every now and then 😉
Amanda @ .running with spoons.
I may just have to take you up on that Skype date offer one of these days. And Poptarts… gah! Sometimes nothing else manages to hit the spot…
Liz @ I Heart Vegetables
I didn’t even know grape kombucha existed! YUM!!!! And I love greek yogurt + blueberries as a snack. Actually, I had greek yogurt and black berries for breakfast! YUM!
Sky @ The Blonde In Black
Strawberries and peaches always remind me of summer! Your eats look great right now. I love that your WIAW is full of normal good looking food. People who always eat salad always make me feel bad haha Justin’s almond butter is the bomb! I haven’t tried the vanilla yet so I’ll have to find some.
sara @ fitcupcaker
im so glad to see your yogurt, cereal, oamteal mess bowls again 🙂 I love melty nut butter and Love Justin’s especially the maple 🙂 breakfast and dessert are my two favorite meals, hhahaa
Amanda @ .running with spoons.
I keep hearing great things about the maple, which makes me SO happy that I decided to pick up a jar of that as well. And breakfast and dessert? A girl after my own heart 😉
Rachel
OBSESSED with that almond butter… I wish they sold it around here (I’ve seen everything but vanilla lol) so I always wait to place an order online and savor the last bits of it LOL definitely one of my top favorites 🙂 and I’m the mint chocolate queen… that’s always what Santa brings me 😉
Rebecca P.
Mint-Chocolate combo, definitely a winner. And I think Cherries and watermelon remind me the most of summer. I usually end the night with almond butter and an apple, or veggies and hummus. O and a glass of almond milk with protein powder!
Ashley @ Life and Fitness
Watermelon will always remind me of summer! Although I am not a fan of it. Even watermelon candies I don’t like. Now blueberries are more my jam 🙂
Amy @ Long Drive Journey
Hi there! Just found your blog. I have to tell you that your beef rouladen looks DELICIOUS. I love the mint/chocolate combo. I’m curious, though – why do you hate lunch so much? To me, it’s just like a mini dinner.
Amanda @ .running with spoons.
I honestly have -no- idea. I think it probably has something to do with the fact that I have to pack it and that I usually have to eat it either on the go or in a hurry. On days where I’m home, I actually don’t mind sitting down to a normal meal.
Miss Polkadot
Mint chocolate is my current favourite. In fact, this former favourite became the current one again after seeing it on here a while ago. Previously, it was chocolate + chili but ever since I’ve been on the quest to find the best mint chocolate around. What can I say, I’m picky and after my favourite brand was discontinued I had a hard time finding one that came close [still not quite as good].
Blueberry season finally started over here this week, too, and I can easily go through one of those large (400 g) boxes in two days :).
I’ve admittedly not been in the best place with my eats the past days but hoping that starting to work full-time tomorrow will give me some structure. Fingers crossed.
Ksenija @ Health Ninja
I love the way you snack through the days. Sometimes I feel like I am the only grazer in a world full of meal-eaters – especially with a boyfriend who eats like once a liter lasagne and is perfectly happy this way. Oh and I love beef rouladen (or “Rinder Rouladen” like they are called in Germany) and I do also just eat them when mom cooks. She just makes them so good, that I don’t dare to make them myself 😉
Sam @ Better With Sprinkles
It makes me happy that you can enjoy Justin’s stuff – that vanilla is basically the best nut butter I’ve ever tried, and that’s coming from a peanut butter obsessee. I maaaay be picking up multiple jars in September 😉
And I’m pretty happy with my eats right now. Lately I’ve been finding that I prefer bigger meals and smaller snacks, instead of the small meals and decent-sized snacks I was doing for a while. I like being completely satisfied after a meal!
And I’ve been ending my day with either a few squares of chocolate, or a small bowl of Coconut Bliss topped with a mix of peanut butter and chocolate chips…and sprinkles. Of course.
And yes, the chocolate and mint combo is amazing, but second only to nut butter and chocolate 😉
Oh, and I basically need to come to Edmonton. Both to see you and to try to convince your mom to cook for me too 😉 That rouladen looks/sounds so good!
Amanda @ .running with spoons.
Ohhhh! I completely forgot that I’ll be able to pick up more jars in September! Now hopefully I can make the two I currently have last for that long… And like I already told you… spare room 😉
Holly @ EatGreatBEGreat
Everything looks delicious! I would have to agree, lunch is not my favorite me of the day either.
Are you a fan of the mint chocolate combo? Oh YES!!! I love it!!
What fruit most reminds you of summer? Definitely watermelon!
Do you feel like you’re in a pretty good place with your eats right now? I need to start eating clean again. Last week I cheated a lot and had more sweets than I typically do, so I’m trying to get back on track this week.
Nicole @ FruitnFitness
I usually snack my way through lunch at work. I find that if i eat a big lunch meal I am just as hungry again later in the afternoon and its so much more fun to snack all afternoon. That dinner your mom made looks amazing! Like you, I’m not a big red meat eater but I do enjoy it when my mom or boyfriend make it.
Sarah @ Making Thyme for Health
I need to try Kombucha again. I know it is so good for you but my first experience was awful.
I love the mint and chocolate combo, it’s the perfect dessert to refresh your mouth with!
Shawn
Seriously craving those chocolate mints now. Oatmeal and yogurt messes (love the way you put it) are also my go to breakfasts. Berries definitely make me think of summer. My night time snack are usually fruit cuz I’m comletely obsessed with fruit. 🙂
Happy Wednesday.
Amanda @ .running with spoons.
I can definitely relate to the fruit obsession 😉 I think I probably have something like 5 or 6 servings of it a day.
Melissa
I always LOVE the way your breakfast look! I always end my night with cantaloupe and some microwaved-apple! Yum!
Beth @ Mangoes and Miles
My parents used to have to let me dip my strawberries in sugar before I would go near them–oh, how things change. You’re very late to the Justin’s train 😉 As good as most nut butters are, nothing beats Justin’s–I once managed to eat half the jar in a single sitting. (Not ashamed though; it was a great afternoon. :P)
Danielle @ Clean Food Creative Fitness
So glad to see your back to blogging! Justin’s almond butter is my absolute favorite! It is so addicting though 🙂
Meg @ runningonjava
It’s getting a little ridiculous that I can’t find that almond butter anywhere. It only makes it worse when I keep seeing it pop up everywhere! I’ll keep searching 🙂
My grandpa used to always put sugar on my strawberries to make me eat them – such good memories. Come to think of it, though, I must have been in a complete sugar coma after that!
Kat
Everything looks pretty tasty, as always 🙂
Although Ive never tried Kombucha. Shocked? Ya me too, especially considering that Im always on the lookout for new things. I don’t know I guess I just hear so many good things about it and then people say it tastes like beer, which kinda makes me want to vomit lol Oh the woes of being a foodie
Christine @ Gotta Eat Green
Crazy.. I just featured Grape Kombucha in my grocery store favs this month! Have you tried any of the other flavours from Synergy?
Amanda @ .running with spoons.
I have! And besides the multi-green one, I’ve pretty much liked them all. Grape is definitely my favorite, though… followed by Trilogy and mango (when I’m down in the States).
Kelsey Yoki
Lunch is the bane of my existence too! I actually really dislike having to plan something to eat! My “snack” is usually my Progenex Cocoon shake – it helps muscles to recovery while you sleep and helps you fall asleep! Summer for me is watermelon and berries. My eats are pretty good right now, but I do know they could use some improvement! I’m in need of amping up the protein/staying power of my meals and snacks!
Elizabeth@myneonrunningshoes
I’m not a huge chocolate mint fan. I’d much rather have plain or chocolate with caramel 🙂 I feel like I’m getting better and better with food… and no where near where I used to be!
Pickyrunner
Blueberries scream summertime to me. And strawberries. Probably because that’s what we grow in the garden. I haven’t had cereal for a snack in forever but I think that will be tonight. And obviously chocolate is an after dinner necessity. Obviously.
Tiff @ Love Sweat and Beers
Am I a fan of mint chocolate???? ha. 😉 I’ve never had beef rouladen, but I’d like too. Sounds tasty!
Jo @ Living Mint Green
Aw man, I was so disappointed by the vanilla AB – it tastes like play dough to me?! I tried it on a few different occasions thinking that my tastebuds were off – I mean, it’s JUSTINS, they can do no wrong in my eyes. But I couldn’t taste the vanilla at all? At least there’s still maple. <3
Peaches & cherries remind me of summer most – so many fond memories of taking a bite into a peach & the juice dripping down my hands/all over my face.
Amanda @ .running with spoons.
I wasn’t a big fan when I first tasted it, but it definitely grew on me… it honestly tastes like Cinnamon Toast Crunch to me. But I’m happy that I picked up a jar of the maple as well. I’ll be digging in to it when I finish this one off.
Christine@ Apple of My Eye
Mhmm I love when the toppings on your oatmeal get nice and melty- so good! And you know what else looks amazing? That beef roulades! Recipe please, I’m drooling! And how did you make those potatoes? They look like the perfect side dish 🙂
Amanda @ .running with spoons.
I just cut up some leftover boiled potatoes and threw them on the frying pan with a little bit of olive oil until they got nice and crispy on the outside.
Lucie
I am obsessed with Justins Almond Butter too! And since it is not sold here in Switzerland (what a surprise) I brought a ton of squeeze packs home from the US and when it came to an end, I ordered MORE 🙂
And I am with you on lunch. Unnecessary meal in my books. Breakfast and dinner it is!
Amanda @ .running with spoons.
I’m dreading the day when mine comes to an end 🙁 Where did you order yours from?
Lucie
Vitacost! They have some great deals sometimes (I registered for their newsletter to be informed about sales) and they insert a magazine in every package which includes a code on the backside for %’s off! Besides that, they have a huge choice of other great stuff (which clearly is dangerous 🙂 )
Christina
Everything looks so good! I am dangerously hooked on after-dinner mints. They are so yum!
Jessie
Holy sh**, your dinner looks delicious! I’ll provide you with chobani if you promise to cook me those type of meals?? 🙂
Charlotte @ Commitness to Fitness
Blueberries remind me of summer of too, even though i tend to eat them year-round. i think watermelon might just be the quintessential summer fruit. im not a huge watermelon eater anyways, but when i do its always between the months of june- aug. and the mint choc combo is my favorite combo of two flavors ever. i’ve been eating A LOT of froyo lately, and i always get mint choc chip. cant. get. enough.
Amanda @ .running with spoons.
I used to be a -huge- watermelon eater (we’re talking like 1/3 – 1/2 every.single.day), but I think all the sugar was starting to wreak havoc on my system so I had to cut back. Miss it 🙁
Anon
I have a binging problem with fruit 🙁 I eat like 10 servings a day…and a lot before bed…I feel so badly about it cause its not good …but 🙁 Amanda, I’m NOT in a good place with food….email me if you want to be my sample coach (no liability, I promise) or give me resources for 3 separate meal plan sites or nutritionists (I have severe need to repair gut health + hormonal health + metabolism). No exercise and bad bowel/digestive system 🙁
Lisa
I know what you mean about after a little break how it becomes a bit more effort to actually remember to photograph food, it definitely feels weird after a while when you haven’t done it.
Your day looks like a pretty awesome day of eats, and resembles most of my days quite well;)
Um, I loooove mint chocolate combo. I think it may be my favorite at the moment! But, I say that about a lot of things.
And strawberries and blueberries will forever remind me of Summer, I heart them.
