It’s that time of the week again! Happy What I Ate Wednesday! π
If you remember, last week I shared some of my favourite meals and snacks with you guys and asked you to share some of your favourites with me. I got some pretty great ideas, and since you know I love my themed WIAWs, I figured it would be fun to fashion an entire day of eats based solely on your recommendations. It took a little more planning than I’m used to, but it was fun and definitely tasty. So without further ado… a day of eats inspired by you…
Breakfast… coconut flour oats suggested by Lucie…
Eggy bananafied oats with a spoonful of coconut flour mixed in, then layered with plain Greek yogurt and topped with honey, cinnamon, and a spoonful of almond butter.
Do you ever go through those phases where you’ll eat something constantly and then just stop for no reason at all? You’ll forget about it for a handful of weeks or months before randomly deciding to eat it again and wonder why the heck you ever stopped? Story.of.my.life. I’m no stranger to adding a spoonful of coconut flour to my oats, but Lucie kindly reminded me that it had been a while since I’ve done it and I needed to change that, stat. In addition to adding a mild sweetness, coconut flour makes oats so much thicker and cakier — definitely a must try.
Morning snack… frozen melon smoothie suggested by reader Sarah…
A smoothie made from frozen honeydew, Greek yogurt, honey, and vanilla almond milk.
This was so worth the fact that I had to drink it bundled up by the fireplace. If you’ve never tried adding frozen melon to your smoothies, you definitely have to give it a shot. Because of their higher water content, frozen melons add a slightly frothy, shaved ice feel to smoothies, which is perfect when you need to quench your thirst. I can definitely see this becoming a regular thing in the summer. Thanks, Sarah!
Lunch… almond butter & apple sandwich suggested by Ms.J…
A toasted almond butter & apple sandwich with a bowl of plain Greek yogurt and a handful of baby carrots.
I’ve done AB & jam and AB & banana, but never AB & apple… at least not in sandwich form. Why?!? It’s freaking amazing! All I did was slather two pieces of whole wheat toast with almond butter, add a layer of apple slices (I was out of applesauce), sprinkle on some cinnamon, and toss the whole thing in a toaster oven to get it all ooey and gooey on the inside, and crispy on the outside. I swoon. Thanks Ms.J!
Afternoon snack… cream cheese and jam suggested by Lauren…
A Nature Path’s maple cinnamon waffle topped with cream cheese and blueberry jam
CC & jam has been a favourite combo for pretty much as far back as I can remember. Not only is it delicious, but it holds a lot of sentimental value as well. My mom used to make crepes for breakfast on the weekends pretty often, and she would always stuff them with cream cheese and blueberry jam. So yeah… this combo makes me feel all sorts of warm and fuzzy inside. Lauren’s original suggestion included an english muffin, but I didn’t have one so I went for a waffle instead. Good stuff.
Dinner… sweet potato and hummus suggested by Chelsea…
A sweet potato topped with hummus alongside some ground garlic/ginger chicken and veggies that I lightly stir fried in toasted sesame oil.
I feel like I don’t love sweet potatoes as much as a lot of other bloggers do. That’s not to say I don’t enjoy them, but I don’t think I’ve ever straight up craved them like I do things like oats, bananas, almond butter, or kabocha. I’d only ever tried sweet potatoes on the sweet side though (coconut butter & cinnamon, AB & maple syrup), so when Chelsea mentioned pairing them with hummus, I figured it was worth a shot. Verdict? Thoroughly enjoyed!
Evening snack… chickpeas and yogurt suggested by Miss Polkadot…
Plain Greek yogurt topped with crunchy honey almond roasted chickpeas and a sprinkle of cinnamon.
Like coconut flour oats, the combination of chickpeas and yogurt was a forgotten favourite until Ms.P mentioned it last week. I love the crunchy sweetness of the chickpeas paired with the creamy tang of the yogurt. Definitely the perfect way to end a night… even if it means I now have to roast up a new batch of chickpeas seeing as my last one barely even lasted two days. Oops.

Your photos are gorgeous! And I bet that honeydew in the smoothie was so refreshing. Definitely SCREAMS spring to me! Small world, but I visited Edmonton last summer because my sister used to live there actually. She was an executive at Target but recently switched companies to work at Apple in Minneapolis. If I would have been thinking, I would have contacted you to meet up! You are awesome, and so inspiring. As for last night’s snack, I made coconut flour muffins and covered them in coconut butter. That AB&Apple sandwich looks so amazing! So incredibly simple and looks so good I can actually taste it! It’s close to lunchtime here but I always eat on the buffet next to the Court I work at… It’s nice because there are always many healthy options, salads, lean chicken and meat…
But today I wish I was home to make a sandwich like yours!
Also, that hummus on your sweet potato… I’ll have to try it soon! I always eat mine with cinnamon!

Yum! So many tasty eats. I will have to try the almond butter and apple sandwich- it looks divine! My curiosity is peaked with the sweet potato and hummus. I definitely prefer my sweet potatoes on the sweeter side but this savory combination sounds good.

Ohhhh, oh , oh! Wrapping the SP in tin foil sounds like a genius idea! My mom does that all the time when she bakes regular potatoes and they come out tasting so.darn.good. And can you believe it’s been months and months since I’ve had a mug cake/cookie? That needs to change.

Awesome spin on WIAW! Isn’t the chickpea and yogurt combination just one of the best matches? I’m glad you rediscovered this old favourite. Next time try stirring coconut flour into the yogurt and adding a sprinkle of sea salt on top of the bowl – perfection.
Sweet potatoes aren’t for me, either. The last time I attempted a cookbook recipe that was meant to turn into a luscious frosting but – none of that. Just straight up nasty. So much so I’m not planning to pick up another sweet potato any time soon. Blogger fail? Maybe.
A flavour that reminds me of childhood every time is homemade cherry jam. More specifically my grandma’s homemade jam. Storebought doesn’t compare so she usually remembers to save a jar for me whenever she makes some. That and strawberry, that is.

!!! Noodles with butter and parmesan cheese was basically the only way I’d eat ‘pasta’ back in the day. Whenever my mom was making spaghetti, all I ever wanted was the plain noodles π

Good to know that the hummus + sweet potato thing worked well! if I bake a sweet potato I usually add coconut butter or butter and cinnamon, so I may have to try that one next time. OR one of those sweet dessert hummuses (hummusi?) floating around…I bet that would be awesome.
Childhood flavour combo: I actually have no idea. I feel like I wasn’t too adventurous as a kid, so it would be along the lines of chicken nugget + plum sauce. Or the various flavour combos in Fruit Loops (do the different colours actually taste any different? I can’t remember).

Food from the childhood? Sweet rolls of my grandmother. Actually, it was simply baked fancy pastry with sugar at top – but all family loved them. And I can’t but remember berries and milk! You fill in a big cup of strawberry/raspberry with milk, you add a little sugar and you eat. It was our favourite summer snack.

I’m with you on the sweet potato thing. I like them but cannot profess a burning love fro these colorful taters. I actually prefer them sans topping aside from cinnamon.
Bananas with almond butter remind me of my childhood. Growing up, peanut butter was the only nut butter I’d ever heard of so it was pb and b back then. Now that almond butter has come into my life, peanut butter takes a back seat but the flavor combo is still reminiscent of days of yore.
You know you’ve been reading too many blogs when…Funny story: I was driving into LA a couple of weeks ago. I noticed the vanity license plate on the car in front of me read, PB WRYTR. “What’s a peanut butter writer?” I wondered. It wasn’t until I got a little further down the freeway that I realized it meant paperback writer. Duh! My apologies to the Beatles!

1- I love pb and apple sandwiches. I also love adding adding to grilled cheese….2 – I love sweet potatoes with anything or eaten alone. Melted mozzarella cheese is always a favorite a mine along with adding them to stir fry flavors and topped with avocado? Heavenly. Of course they are terrific with peanut butter as well but isn’t everything better with a nut butter? 3- I may not like smoothies but I am almost craving one because the thought of honey dew blended on up is heavenly to me.

Yummy apple and almond butter sandwich combo (though I’ll swap for Justin’s PB since I have it on hand). Sweet potato + anything is fab, can’t go wrong. I absolutely love your combos and creativity…I started stirring 2% greek yogurt into my oatmeal in the morning after seeing your post and you’re right life changing – plus more protein, boom!
