Happy #thinkingoutloud Thursday! No idea what I’m going on about? Click here!
1. Obsessed doesn’t even begin to cover it. I’ve been having one of these protein puddings daily for a little over a week now, and I’m not even close to getting tired of it. In fact, I’d probably eat two or three a day if I didn’t think I should probably get a little more variety in my diet 😝 But it’s just so perfect! 4 ingredients. 5 minutes. Insanely “rich” and chocolatey taste 😍 Go grab the recipe and enter the PlantFusion giveaway! <- I’ll be announcing the winner in next week’s ToL.
2. Obsession #2 (and possibly why I’ve been craving a little more protein lately) -> trail rides on my bike. I normally walk/run the trails in our river valley, but this year I decided to swap my feet for a pair of wheels and I’m in loooooove…. possibly because I can get from point A to point B, C, D, E, F, G, etc. a whole heck of a lot faster, and possibly because speed + hills = extra adrenaline for this adrenaline junkie. Heck, I don’t even mind riding up the hills all that much. Thank you decades of snowboarding for nice strong legs.
3. Speaking of snowboarding, I miss it 😞 I only managed to make it out to the mountains a couple of times this year, which just isn’t okay. But with all the work that came with the book, and then Easter, and then knowing I would be gone to Hawaii for a week and a half, I really couldn’t afford to spend any more time away from my kitchen. That’s okay, though… There’s always next winter; and there’s plenty to look forward to about the spring/summer, too.
4. … like roasting marshmallows! No idea why, but I got the biggest craving for roasted marshmallows the other day and I haven’t been able to get them off my mind since. I even went out and picked up a baggie of my favourite kind. Now all I need is a fire…
5. That reminds me! Please tell me I’m not the only one who’s ever roasted marshmallows over a stove… It’s something I used to do it back when I was still living at home, but in my defense, my parents had a gas stove so it was basically like a tiny little personalized fire. Either way, it worked perfectly. The stove I have now is electric, though, so I’m thinking I might just whip up some Rice Krispie Treats until a better opportunity presents itself 😁
6. Speaking of cereal, here comes obsession #3 -> adding raw oats to my cereal bowls. Not only does this add fibre and bulk to help with satiety (great for those who say cereal doesn’t fill them up), but it does some pretty amazing things to the texture and taste, too – think creamy, doughy, and subtly sweet. Oats can seriously do no wrong.
7. Ok. Please tell me I’m not the only one who’s a little crazy about making sure that I get a person’s name right when I’m responding back to them in an e-mail, comment, message, etc. I’m kind of paranoid that I’m going to spell someone’s name wrong, or accidentally type in Karen when I’m talking to Jane, so I literally check things over 5 times before I hit the send button. I’m just as bad when it comes to filling out forms, too. Aaaaaalways double checking.
8. So I woke up this morning not knowing where I was. What happened was that I had to flip myself around last night and put my head where my feet usually go because the [almost] full moon was shining RIGHT IN MY FACE when I was laying down the normal way. I didn’t have any issues falling or staying asleep, but I was all sorts of disoriented when I woke up… which is weird because that doesn’t happen to me when I travel or sleep somewhere other than home.
9. And that’s it for me today! Happy Thursday, friendly faces!

Welp. Now you have me craving roasted marshmallows. It started as a thing we would do on my boat in the summer with the charcoal grill but last year I definitely made some using a gas stove. I could eat so many, but I try to stop myself after a few handfuls 😉
Amanda @ .running with spoons.
They’re so addictive. I can’t stand them fresh from the bag, but when they’re roasted? Oh man. OR even if I leave the bag open and they get all hard and dry? I actually like them better that way 😆
Amanda @ Exploring Life & Things
Yuummm, roasted marshmallows and smores sound so good right now! I used to attempt to make them in the microwave.. hahah can’t say it worked out extremely well:)
Jess @ Keeping It Real Food
Totally agree about the oats in cereal.
And um, yeah—full moon weather the max. All kinds of crazy.
Amanda @ .running with spoons.
Ugh it was HORRIBLE last night. Couldn’t sleep a wink.
Lyss
That protein pudding looks so good. And I cannot wait to roast marshmallows this summer!! Seriously one of the best parts of summer… a campfire and smores 🙂
Jen Rawson, RD (@PrettyLilGrub)
I add oats to my smoothies and I find it makes a big difference in my satisfaction and the staying power.
Lise
Hi Amanda,
I so want to try this protein pudding but when I try to order the sample pack, there is only the option of United States and like you I’m in Canada, so I can’t order it 🙁
Your photos are amazing!
Amanda @ .running with spoons.
Whaaaat? I had no idea the sample packs only went to the US. I’ll send them an email and get back to you!
Lise
Amanda, it’s not just the sample packs, I just tried to order a product and it’s the same, where you have to fill out a form to create an account and it only shows United States. 🙁
mylittletablespoon
Hahaha so many “nods of agreement.” YAY to trail biking. More speed = “I’m so badass.”
Damn I wish I had a gas stove – both for the marshmallows and the sheer comfort. Can’t wait for bonfires.
ALSO wish I had that protein powder so I could make that pudding! I discovered dry oats in/for cereal a few years ago and was so shocked how much I loved it.
Emily Swanson
You have to be extremely brave to do trail riding. Trail riding is quite exciting, especially when I get out there on the trails with my uncoordinated limbs. 🙂 The scenery is always amazing. And I’m excited you’re doing the Plant Fusion giveaway! That protein pudding looks …. um… really good!
Dana
Totally understand the name thing! I have a manager in a different city that I’ve never met in person named Veronica. But I know she goes by Ronnie? Rony? Ronni? I had to send her an email and I guessed Ronnie. Hope that was right, she never corrected me.
meredith @ cookie chrunicles
speaking of marshmallows, I have coconut coated marshmallows in house for Passover – they would be good as part of smores
katalysthealth
I’m so jealous of your trail riding! I don’t even have a bike, but I have always wanted to do some trail biking. I actually cant wait till summer so I can hit the river rapids. Im buying my hubby a kayak for his birthday [shhhhh don’t tell! ;)] and it’s going to be so fun going down the rapids in that thing!
Amanda @ .running with spoons.
Omg I miss doing that! I’ve never done it in a kayak, but I’ve been white water rafting a handful of times and that sh*t is FUN.
Shawna
i’ve been looking for new plant-based protein powders to check out, so i’ll have to peruse their products. great job getting more biking in, and i love that you wrote “favourite” — my Canadian girlfriends make me so happy with that in their texts! 🙂
Amanda @ .running with spoons.
Haha! My spellcheck changes it for me automatically, but I do try to make it a point to use the Canadian version of words. Even though the majority of my readers are American 😯
Catherine @ foodiecology
I’m swooning over that pudding!
I’ve totally roasted marshmallows over the stovetop. I even tried it over candles in my dorm room, lol – it was disgusting because the candle was scented!
Happy Thursday! 🙂
lindsay Cotter
you have me obsessed with looking at that pudding. and then coveting it. duh. if i promise snow here in texas (like fake snow) will you come visit ? haha although we don’t have mountains. maybe a mull hill?
Amanda @ .running with spoons.
I would probably need my own little portable AC unit. Or a snow cloud that follows me around like Olaf in Frozen. This Canadian would probably melt in Texan heat!
Rachael @ Catch Me If You Can
I’ve done the same thing with roasting marshmallows! We have a gas stove so when I get the craving for smores I totally do that! I totally check a person’s name in an email lime 100 times before I send. My name is constantly being spelt wrong and it annoys me, it’s right there is my signature people! !! That’s strange being disoriented in your own home, that happens to me when I’ve traveled to much back to back always freaks me out for a second lol
Amanda @ .running with spoons.
I’ve had my name misspelled before too, if you can believe it. As if my name doesn’t have enough A’s already, they somehow manage to fit an extra one in there between the N and D. Like, hi… my name is Amanada 😯
Bri
That protein pudding looks to die for… sounds like something I need to try!!
Gretchen
I cant wait to start mountain biking this year! I just learned how to ride a bike last year and I’m hoping to do it a lot more this year. I’m also going to Belize next week and there are free mountain bikes to use on the thousands of acres that our resort has, so I’m pumped!
Amanda @ Real Life Recovery Diary
I have ABSOLUTELY roasted marshmallows on the stove. Desperate times :p
Have you tried the flat marshmallows they make specifically for smores? I love them!
Amanda @ .running with spoons.
!!! What??! This is the first time I’m hearing about this. Definitely something I’ll need to investigate.
Laura @ This Runner's Recipes
Those biking trails look beautiful! I used to use the gas stove to roast marshmallows also. It’s been so long since I had s’mores but they are a childhood treat that still appeals to me as an adult.
Sarah @SarahRuns26
Sometimes when I make smores, I use the broiler in our (electric) oven. I still get the brown, crispy parts of the marshmallow then and it actually kind of caramelizes the corners of the graham cracker and makes it extra crispy, which I kind of love! Outside over a fire is best, but this is a very suitable (and handy!) alternative! Also – I love dark chocolate for my s’mores! That makes them healthy too, right!? 😉
I’m also obsessive about checking names. I don’t want to misspell someone’s name or call them by the wrong name. It drives me crazy when it happens to me (Sara instead of Sarah).
Amanda @ .running with spoons.
I never thought about trying s’mores in the oven! I wonder if it’d work in my little toaster oven…
Heather @ Polyglot Jot
I’ve never roasted them over the stove but dont think thats weird! I have made s’mores in the microwave and they were surprisingly delicious! I do that when I’m craving them in the summer because I too have an electric stove.
Kelly @ Kelly Runs For Food
I wish I had a bike! I haven’t ridden one in forever, but I think it would so fun to ride around the trails! I think I’m going to add a bike to my summer wish list. Right after new sofa, new laptop, and vacation lol. We’ll see if it happens this year!
Michelle @ Running with Attitude
Oh that pudding looks heavenly – I will have to snag that recipe! And, now you’ve got me thinking about roasting marshmallows – it’s been ages since I’ve done that!
Chocolaterunsjudy
I would have never thought to add oats to cereal (because yes, I don’t normally it eat because yes, it doesn’t fill me up — not to mention too much sugar in pretty much all of them). But I do it occasionally.
We don’t have a gas stove. I miss having a gas stove, although I must say I never roasted marshmallows on it when I did have one.
Amanda @ .running with spoons.
I really miss having a gas stove as well! I can’t even tell you how many things I’ve accidentally burned because I couldn’t turn the heat down fast enough 😕
Ashley @ Fit Mitten Kitchen
Love trail bike rides! They are one of my favorite things to do when the weather gets warmer 🙂 And 100% yes to always double checking. And def need to try that pudding! Protein treats are the best.
Kate
When I was a kid we would roast marshmallows over a candle. Wax was never invited but often showed up!
Riding a bike is so cool- it’s amazing how fast you get places.
Catherine @ foodiecology
Hahaha, I didn’t see your comment till after I posted mine but I did the candle thing, too, except we used scented candles and it was just gross!
Rachel @ athleticavocado
Now your making me want some marshmallows in the fire and it’s only 7:22 AM haha. I can’t wait to have those when I get home for summer! Also I have to try add in some oats to my cereal because I am one of those people whom cereal does not fill up, thanks for the tip 🙂
Kylie McGraw
So I haven’t been to your blog in a bit (because I haven’t been blogging myself) BUT I started following you on Snapchat so I feel like I’ve been keeping up with your life;) Hope your vacation was glorious! That chocolate pudding looks AMAZING! It might have to be on my menu for today. And adding oats to cereal is genius! Why have I never done that?!
Amanda @ .running with spoons.
I totally know how that is, lady! It’s tough to read blogs when you kind of feel out of the loop, but welcome back!
SuzLyfe
I used to flip myself round in the bed, but even better, I would change through multiple outfits in a night. My mom never really new what I would be wearing when she came to wake me up! Nowadays, I do the same thing… but because of nightsweats, lol.
Amanda @ .running with spoons.
Haha! Was it a sleepwalking thing? Or were you awake while you were changing outfits?
Julie @ Running in a Skirtru
I’ve made smores on the stove, grill, microwave or fire ;)) good stuff!
Hollie
That pudding looks good. We’ve actually been making pudding a lot lately too. We just used the boxed stuff though.
I roasted marshmallows on the stove once before and it was pretty good. I liked them, so you aren’t alone!
Michele @ Paleorunningmomma
I randomly have a picture of myself roasting marshmallows at my stove, so no you’re not the only one1 When you have kids these things happen more often than you might think 🙂
Allie
Love the oats idea with cereal and YES the moon has been shining like crazy – it’s amazing!
Courtney
I will be making that pudding again today, because YUM.
I think at this point I’ve tried to add oats to every single thing I eat. It’s a matter of time before I start carrying them around and sprinkling them on everything like I’m the oat fairy. 😉
Amanda @ .running with spoons.
It’s crazy good, right?! I literally just polished one off except I made it with cherries instead of banana. Still good, but not QUITE as good.
Michelle
Haha I’ve roasted marshmallows on the stove too! Ever put them in the microwave? Not sure why but the expand a ton! They don’t taste as good as roasted marshmallows but it’s fun watching them grow!
Amanda @ .running with spoons.
!!! I haven’t! We didn’t have a microwave when I was growing up, so I never had the chance, but I’ll give it a try now.
Morgan @ Morgan Manages Mommyhood
Oh mt goodness – YES to making ores on the stove! We did it all the time. Also , I used to flip myself in bed every single night!! Not sure why or how, b it it’s a.weird trail u was VERY happy to outgrow as a kid!!
