We were doing so well for a while there and then it went ahead and snowed ALL day on the second day of spring… and it’s supposed to snow again today. But we’ve had a relatively easy winter as far as Albertan winters go, so I definitely can’t complain about the weather. Besides…
2. … only 5 more days until I can squish Maui sands between my toes. I should probably start packing 😁
3. On that note, things are going to get a teeny, tiny bit quieter around here while I’m away. I’ll still be checking in for ToLs and Link Loves, but I’ve scaled back on the recipes and I won’t be able to reply to comments, messages, and e-mails as readily. I thought about prescheduling a bunch of posts and going about business as usual, but I could really use some time off becauseeee…
4. … I’ve been working like a crazy person for the past few months on a project that I can finally share with you guys. Not just yet because this one deserves a post of its own, but keep your eyes open for a big announcement early next week 😁 😁 😁 😁

6. MOVING ON! Toasted coconut…
… I’ve somehow managed to become ridiculously addicted to it. I went my whole life without really caring about coconut one way or another, and all of a sudden I want to add it to everything. Expect to see it on Spoons soonish.
7. Expect to see this little guy too…
Confession: the main reason I bought a mini loaf pan was so that I could make recipes that I normally make in a ramekin in a loaf pan instead. Because who doesn’t want a single-serve chunky monkey loaf? Or a single-serve banana oat Greek yogurt loaf? Same recipe + different form = totally new recipe 😉
8. And on that note, it’s time to get my butt back into the kitchen — I feel a late night baking session coming on 😁 Have an awesome Thursday!

mmm I love toasted coconut…reminds me of caramel delights (girl scout cookies). i’ve always been a coconut fan but i know some people are really put off by the texture. i need to get a mini loaf pan, but me the reason is i love cute tiny things…its a problem really lol.

Ugh a few steps into summer and this morning I’m stepping out into a foot of snow and freezing rain. Yaaaay Canada. You’re right though, in general the winter has been pretty easy, so no complaining.
I love mini loaves. Everything tastes better in mini form. Then you get to have it ALL.

I’d be excited for vacation if I were you too! We’ve had a really mild winter too, but as soon as spring hit the weather went to hell and decided to get cold and SUPER windy. I can deal with cold, I actually kinda like it, but I loathe the wind. Yesterday it was 40 mph. I can’t even walk in a straight line with that!
I’m not a fan of packing. I’m a good packer, I just don’t like doing it!

That makes two of us! I always put it off ’till the last day because if I try to do it for too long, I end up overthinking it and driving myself crazy. And I’m with you on the wind, too — probably one of my least favourite weather conditions.

I’m with you on totally new recipe if they’re in loaf pans. Loaves tastes different then muffins. It’s like Coke in a can or Coke from the fountain machine. Totally different.

Maui. Damn, I’m envious! Have a great time. Well, our winter was REALLY mild — I only had to shovel twice, and we didn’t get snow on the first day of spring, as is typical, although it was cold enough. The downside is I’ve already pulled 2 ticks off Lola & she NEVER gets ticks. They say it’s going to be a bad year for it because it didn’t get cold enough in the winter to kill them.
That filter is truly creepy.
I love mini anything. I do have mini bread molds (the kind where there are 4 all attached to each other) — back in the day, I used to bake my own bread regularly (as in yeast, white bread). Now I don’t eat bread much. Escept lately I’ve been eating a lot of Ezekiel bread.
I did make those chocolate breakfast cookies — I put the chips on top instead of mixing them in, which was a mistake, but they were still damn good. Thanks!

I’m glad you liked the cookies 😀 And that’s actually super scary about the ticks 🙁 I complain about our cold weathers, but I actually really love that it’s too cold here for most of the nasties to survive. We don’t have much of a problem with the creepy crawly stuff, which is good because I don’t handle those things all that well 😆
