Hallo! ๐
Promise not to hate me after I tell you that Monday is quickly becoming my favorite day of the week? Because, well, Monday is quickly becoming my favorite day of the week.
I know, right?…ย Who the heck am I?!
I’m not too sure. All I know is that I wake up every Monday morning with my “grrrr” face on – super eager to tackle the day. Maybe it’s because I have so much pent up energy, since my Sundays are usually spent doing absolutely nothing at all. Well, in theory, anyways…
Yesterday I just had to make oneeeeeeย little, tiny, quick trip to the grocery store to pick up some cottage cheese; but in true Amanda fashion, I came home with all of this…
[Greek yogurt (plain, strawberry, mango-orange) – Cottage cheese – Eggs]
[Vanilla almond milk – Trilogy Kombucha – Black currant jam – Maple Butter]
[Puffed wheat – Cinnamon Puffins – Honey Sunshine – Scottish Oats – Almond butter]
[Pumpkin – Beans (kidney, chickpeas) – Trail mix – Caramel pudding – Coconut milk]
… but hey, at least I didย buy cottage cheese. There’ve been times where I went to the store to buy something, and came home with everything but what I initially planned on getting. Story of my life.
So what else have I been up to… Well, I started aย new book…
… which is amazingย so far, and if you liked The Kite Runner, then I definitely recommend picking this one up as well.
I also started aย new workout…
Today was my first day doing Stage 2 of The New Rules of Lifting for Women lifting plan, and it’s a good thing that I got some good fuel in me prior to getting down to business…
[Cottage cheese, banana, almond butter protein frosting]
… because this workout absolutely kicked. my. butt. I think a good 5 minutes passed before I was actually able to pick my sorry butt off the floor after I finished. Intense. And I love it ๐
What else has been going on? Hrrm. Well, there’ve been plenty ofย good eats…
[Eggy bananafied steel cut oats with almond butter and pudding]
[These guys have been lifesavers since I’ve been running around so much lately… ย They’re my perfect go-to snack, and I usually end up going through at least two per day]
[Tofu stir fry (tofu, brocco, mushrooms, bell pepper, onions, garlic, a few orange chunks, roasted sesame oil, soy sauce) and brown rice mixed with tahini]
[Yogurt mess withย trail mix, banana, cocoa ginger snaps, and Kashi Honey Sunshine]
[Pumpkin hummus tortilla pizza]
[Chocolate Vitamuffin, Greek yogurt mixed with coconut milk, banana]
Mmm hmm. Life’s been pretty darn tasty…
But the most exciting news of all? I think I may have foundย the one…
*squeaks*
No, not Mr. Right, but something just as good, if not better (sorry Mr. Right!). Remember how I said that I almostย found a new place to call home, but decided to pass on it in the end? Well, I guess it was meant to be, because I saw a place this afternoon that took my breath away.ย You guys… I’m in love…
But I’m trying not to get my hopes up tooย high until everything is a 100% done deal.ย As soon as I finish typing up this post, I’m going to meet with my agent so that I can put my offer in… and then I’ll be keeping every finger/toe that I have crossed and praying that it all works out. I’d appreciate any fingers/toes that you’re willing to offer as well ๐
And before I go, I just wanna quickly apologize for being so scarce around here lately. Work has been keeping me busy, and now this condo thing needs some time/attention; but things should settle down soon (I hope!), and I’ll be catching up with you guys and answering e-mails as soon as I can.
Love you. Thank you for understanding.
. – . – . – .
What did you do this weekend? Any events/moves/eats that stand out?
Do you start to miss the blog world when you’re away for too long?
Alexis - PumpedforPumpkin
yay! I’m so happy to hear that ๐ I’ll keep my fingers crossed for you. All of your groceries look delicious and so does your food. I always end up buying way more things than I intend to every time I go into the grocery store. I can never just stick to my list.
I definitely start to miss the blog world if I’m away from it too long!
kabochafashion
Eeeeee *squeals* how exciting that you could have found ‘the one’!! I know the feeling oh too well and it feels great and believe me, when you actually move in and get settled, it feels even more amazing!! ๐ I hope it all works out for you lovely, I really do! ๐
And you may be moving soon, but I’m still going to track you down and turn up on your doorstep for your yummy food! Just about everything you bought on your ‘just cottage cheese’ grocery store shop I just NEED in my life. Everything you bought is my ideal shop! Except I would include peanut butter Puffins too ๐ And I think I need a tofu stir-fry pretty soon now..
I definitely start to miss the blog world when I’m gone, even if it’s just for one day haha!
Amanda @ Running with Spoons
I would have included PB Puffins too, but I can’t ๐
Sarah
oh wow, that’s a pretty intense shopping trip for just going for cottage cheese! ๐ lol, but i totally do the same thing!
i’m crossing my fingers for you that everything works out with this new place!
Albizia
I am glad to hear you found the perfect place for you. I will keep my fingers crossed too and I hope you sign the contract as soon as possible.
The only outstanding event this weekend was me = not the last foodie without a blender anymore. I can’t wait till I move to my new place next week (where the blender is already waiting for me) so that I can stop mashing everything with a fork ๐ .
Laura Agar Wilson
I’ll be keeping my fingers crossed for you with your new place chick! Your eats look amazing as always. This weekend I created a new bean burger recipe that was awesome, I love my bean burgers so was well chuffed I made one that tasted so good!
sarah (onedayiwillseethesun)
wow so glad to hear you may have found the place getting a new place is always exciting. Buying things for it, re arranging it. had to laugh at your shopping trip I always go in for one thing and come out with far more than I intended too! I have been working this weekend so not much exciting. x
kris (everyday oats)
I have a love/hate relationship with Mondays…sometimes I love that new week feeling where I feel all refreshed from the weekend and ready to tackle whatever comes at me that week and sometimes I just dread it when I’m having a fantastic weekend.
Crossing my fingers/toes for you to get the place of your dreams! ๐
Khushboo Thadani
Eggy oats are so much better than regular oats, love that pudding is one of your toppings!
Sara K
Haha we eat the exact same three cereals ๐
This weekend I mostly relaxed but today my family and I drove up to Napa Valley and we’re spending 2 nights at a resort/spa playing tennis, golfing, and eating out at some of the fine michelin star restaurants here- relaxation at it’s finest
Oh and I DEFINITELY miss blogland when I’m away- I was away for 12 hours today and felt like I missed so much
Lenna (veganlenna)
Congrats on finding a place of your dreams ๐ Hope you get it!!!
I also love Mondays, they are my fave ๐ My weekend was quite good, a lot of work, a lot of bad weather, but still – with nice moments every now and then ๐
vegan aphrodite
YEY! I keep my whole body crossed for you! Hope everything works out really really soon!
All your meals looks fantastic as always! Orange in stir fry? Oh my, that actually sounds great!! And tahini mixed into the rice? Must try that! AND maple butter?? Never seen it before, but YES PLEASE! Must be delicious ๐
Enjoy the book, it is one of the best I have ever read. I actually feel the urge to read it again!
Before I got my own blog, I didnt understand how bloggers could miss blogging after a few days. Now, I do! I miss to write, and to communicate with all of you!
Love you<3
dolly
mmm great grocery haul . i was actually about to make banana, ab, and cottage cheese concoction. ๐
Katy
Yay I hope you get the place!!!! You definitely deserve it.
Hey, not to be nosy (but I just can’t help it :P) but what is your job????
xxx
Amanda @ Running with Spoons
Lol good question – I don’t really know how to describe it. I work for my dad in our family business doing a lot of office, administrative, financial, public relations, random errand type stuff. It’s nice because I can do a lot of the work from home, and the hours are flexible. Plus, we all know who the boss is ๐
haleyy0806
A Thousand Splendid Suns tops the charts, it’s SUCH a good book! Good luck with the condo, everything will work out exactly like it’s supposed to!
Lexi
Wow, congratulations on finding the one! I hope everything works out.
Your eats look delish, but it seems like you’re really busy! Hopefully things will calm down after everything’s settled.
Is there a particular reason you buy 0% fat yogurt? I know for me it’s because I’m afraid of the calories and think I get enough fat in my diet as it is. I was just wondering what your motives are as a recovered person. And don’t worry – I’m not trying to insinuate that you’re not recovered, I’m just curious. You are such an inspiration for me as I continue my journey to health ๐
Amanda @ Running with Spoons
I buy 0% yogurt because, unfortunately, that’s the only kind of Greek yogurt that we get up here in Canada. We don’t have Oikos, Chobani, and Fage, which offer 2%. For us, it’s either 0% or like 10%.
theprocessofhealing
How exciting!!! Good luck lovely ๐

Fingers Crossed!!!!
I miss the “output” when I do not write for a while…yet I simply can not follow a schedule. Or else is is just forced.
My highlight of this past weekend might be foodie because I threw my back out and have been on glorified bedrest for a week — I put sea salt in my chocolate almond milk ala Modern Family.
Do it…your chocolate pudding may be a candidate.
Stephanie @ Aspiring
I wish you good luck for the new place!!
p.s. Brown rice with tahini reminds me of how I used to eat my rice with a fried egg + soy sauce + sesame oil + sesame seeds sprinkled. It’s really good!! lol
TheNewHealthy
I’ve been missing the blogworld too lately! Sometimes I just have so much to do that I can’t justify reading blogs that day! I always look forward to the days or nights where I can chill out and catch up with my favorite blog ladies ๐
Can’t wait to hear more about the place you fell in love with! ๐
Katie
Hi love!!! I think I squealed when you said you might have found the perfect place!! So exciting! I’m crossing fingers and toes for you! I will have mike and anthonybdo the same, they will, because they have to listen to me or else ; ) haha
Sstory of my life, go into the store for one thing, come out with 20 things, or forget to buy what you were supposed to and buy everything else instead! Yup that’s me!
Have a good night! Keep me posted on the place!! Xoxo love ya!
Holly
Good luck with the new place!
I started a new stage of my strength workouts too — I got my butt kicked today and it was awesome. I love when workouts change and get better.
I do miss the blog world a bit when I’m “away” (I was away this weekend and loved it) — but at the same time, I almost feel like I’m “living” more when I’m not constantly on my computer.
sugarcoatedsisters
I’m glad to hear that Stage 2 is difficult! I’m about halfway through Stage 1 right now and I’m loving it. Do you think it is a LOT harder than Stage 1? I’d love your feedback ๐
My main eat that stands out is my banana protein powder oat bran bowls– they are absolutely delicious and basically the highlight of my day ๐ And yes, I definitely miss the blog world when I’m gone!
– Nicole
Amanda @ Running with Spoons
Hrm. I don’t know about a LOT harder, but some of the moves are definitely a lot more challenging and make you work multiple body parts at once. I only did workout A so far, so I’m waiting to see what workout B does to me ๐
The Food and Love Diaries
I LOVE thousand splendid suns!! It’s fantastic… I’d dare say better than kite runner!
megpinkgiggles
good luck with the condo ๐
ittybitsofbalance
I absolutely LOVE A Thousand Splendid Suns.
Have you read the Kite Runner? You’re going to cry your eyes out.
Amanda @ Running with Spoons
Yeah, I loved The Kite Runner. So sad, but extremely powerful.
Chels
I am sooo jealous of all your wonderful meals, I need to be more creative with my eats. If I am away from blogging for a week or so, I do start to miss checking up on blogs and chatting about my life. Although, sometimes it can be good to also take a break.
Jen
I can’t tell you how many times I’ve bought a million things (and spent a million dollars) at the market, and forgotten the single item that I went for in the first place. I’ve also done other smart things like pay, and then walk away without my groceries. Apparently I just like to give money to grocery stores in exchange for no food.
And yes to Trilogy Kombucha! So refreshing. Just drank a Strawberry Serenity. By the way, I highly recommend also mixing some miso paste into that rice. Tahini + miso = a match made in heaven.
Also, it’s funny how in Canada you have all the same brands that we have here in the U.S., but with French translations on the containers/cans/bottles/whatever. Love it!
Amanda @ Running with Spoons
Haha I think I learned most of the French I know by reading cereal boxes as a kid ๐
Alexandra
Keeping my fingers crossed for you and the condo girl! ๐ And high five for wicked sweet food shopping, good books, and nostacular eats–what a great day! ๐
Lauren @ What Lauren Likes
I always miss blogland when im away for to long! I got free movie tickets this weekend and giving some away on my blog ๐
katshealthcorner
Why do your posts always make me drool?!
sarah
That’s great about the apartment, I hope it all goes smoothly!
Awesome grocery haul- maple butter, um I need to get me some of that. All your eats look amazingly delicious & beautiful as always. I go through at least 2 cookie dough balls a day too- so addictively good!
My eat that stood out was Jess@Healthy Exposures blueberry donut holes- they turned out fantastic, I think you would like them!
Xxx
Amanda @ Running with Spoons
I’ve actually been meaning to try those, so now I’ve definitely got to give them a go ๐
keepnthefaith
I totally miss the blog world, but sometimes it good to remember there are others around me as well ๐
Congrats on finding a place!! I hope it all works out for you!!
lactosefreelizzie
During the week I went to the first froyo place I’ve ever been to! And left the beach…it was sad ๐
When I’m away I do start to miss the blogging world and wonder how my sites going..etc.. all that kind of stuff.
Your eats look soo good by the way!
buttonss - Cherie
Monday to me means a fresh new week. So I really don’t mind Mondays at all.
I’m a list maker, so I dont go shopping without my list. If I don’t take home with me I always end up forgetting the most important stuff.
I havent had a tofu stir fry is soo long.. I think you have decided my dinner for tonight.
Good luck with the house!!
Amanda @ . running with spoons .
I make lists too… and then I forget them at home ๐
In Sweetness and In Health
Good luck with the condo!!!! I’m hoping everything works out for you :). I definitely missed the blog world when I was in Florida. It was only for a few days, but I felt like I was getting behind on everyone’s lives! Haha that sounds a little strange I guess, but oh well.
2tightlywound
Best of luck with the new place! Looking for my apartment was so nerve-wracking; I was always second-guessing myself, but I think you just have to go with your gut instinct.
This weekend was my mom’s birthday so I spent the weekend with her–a nice break from the chaotic work week, but I’m glad to be back to Monday ๐
Cait @ Beyond Bananas
Thrilled for you girl! I will keep my fingers crossed that everything works out with the place that you’ve fallen in love with!! You will be starting a new chapter of your life- and I have no doubt that it will be amazing!!
In other news.. I am digging your little dessert dish. So tell me… are vitamuffins really worth the 5+$ price tag?!
Amanda @ Running with Spoons
They -used- to be. Truth be told, they’re starting to taste a little too much life healthy imitations to me.. still good, but not really comparable to real chocolate muffins.
debbiecutieface
yay and good luck with the condo! I hope you get it!
cleaneatingchelsey
This past weekend I was finishing up my trip to the DOminican – it was fabulous!
I alllways miss the blog world when I’m gone! Good luck on the new place!
Sarah - feeedingbrainandbody
Good luck with the condo, I’ll say a little prayer for you that everything works out!
I love seeing all your food purchases! I hear the Organic Meadow cottage cheese is much better than Nordica, I think I need to give it a try ๐
Amanda @ Running with Spoons
Thank you! And I def. agree about Organic Meadows – their cottage cheese is my favorite one that I’ve tried.
