A crispy nutty filling stuffed into a sweet and gooey shell — these Rice Krispie Stuffed Dates are a perfect way to satisfy that sweet tooth!
Guess who’s back?! 😀 Actually, I’ve been back since Sunday evening, but it always takes me a day or two to get back into the swing of things after travelling, hence the very-much-appreciated blog break yesterday.
Blend was pretty darn amazing. I need a little more time to process the whole experience before I try to write a recap, so I thought I’d distract you with a tasty snack recipe in the meantime.
Stuffed dates — have you ever tried them? How about Rice Krispie Stuffed Dates? Drizzled in chocolate, naturally…
I know I just posted a Rice Krispie recipe not too long ago, but I’m going through a bit of a phase right now and you’re going to have to see me through it. Actually, this’ll probably be the last one you see for a while — I exhausted my current supply and I’m not letting myself buy any more for a little while. Variety is the spice of life, right? Right.
Actually, I’m kind of surprised that I didn’t come back with a few boxes of cereal in my suitcase after hitting up the Whole Foods in Park City this weekend, but I held back because I was a little worried that I’d run out of space. Good thing, too — the swag at Blend was insane and I ended up having to leave a good chunk of it behind anyway. But more on that in the recap. For now, back to those stuffed dates…
Dates have got to be one of my favourite foods. Not only are they delicious [and nutritious], but they’re also incredibly versatile. Dip em, blend em, stuff em, puree em — they’re good for whatever you need, especially if you need a healthy way to satisfy a sweet tooth.
And if you’re a texture freak like I am, then this snack is the epitome of perfection. It’s creamy; it’s crispy; it’s chewy; it’s gooey… and that’s saying nothing about the sweet, nutty, chocolatey goodness that hits your tastebuds with every bite…
Ermagherd.
I know stuffed dates aren’t exactly anything new, but I’m pretty sure I’ve never come across Rise Krispie stuffed dates before. I’m also pretty sure that there are people out there who’ve never bothered stuffing a date before… because I was one of those people prior to making this recipe. I never saw the point in taking those extra steps, so I’d just dip my dates in almond butter or eat them alongside a few squares of dark chocolate. But holy cow does the stuffing make a difference. Texture and taste perfection. But don’t take my word for it — give it a try!

PrintRice Krispie Stuffed Dates
- Total Time: 30 mins
- Yield: 12 dates 1x
Ingredients
- 12 Medjool dates
- 2 Tbsp. of your favourite nut/seed butter
- 1/3 cup crispy rice cereal
- 2 Tbsp. chocolate chips/chunks
Instructions
- Remove pits from dates by using a paring knife to slice them across the top lengthwise and gently spreading the upper half apart until you can pry out the pit with your fingers. Set aside.
- In a small bowl, combine the nut butter and cereal, mixing until well combined. If you’re having trouble getting the nut butter to spread, warm it up in the microwave for 20 seconds until it begins to melt.
- Stuff each date cavity with approximately 1 heaping teaspoon of the crispy rice mixture, making sure to pack it in tightly. Set the finished dates on a cookie sheet lined with parchment paper.
- Place chocolate in a microwave-safe bowl and nuke on high in 20 second intervals until chocolate is fully melted, making sure to stir between each interval to prevent the burning.
- Using a spoon, drizzle melted chocolate over the stuffed dates. Place them in the fridge for approximately 15 minutes until the chocolate has set.
- Prep Time: 30 mins

Holy yum! Can you send some to me pronto!

LOVE this idea. I’m a total texture freak. I can totally see myself wrapping these in bacon “just to see what happens.”

i would have made a pb free swag bag for you! if you made me these. next year, k? <3
Sarah @ Making Thyme for Health
I’ve never had a stuffed date but these look incredible! I can imagine the textures and the flavors are awesome together.
I can’t wait to read all about Blend! I want to see the swag too.
Sigh…my sorry ass will make it to a blogging conferences one of these days, dammit!
Brittany @ Delights and Delectables
OMG! Why couldn’t we have made this at Blend???? 🙂
Kim @ Hungry Healthy Girl
Wow… This is such a brilliant idea!!! I love everything about this recipe and I can’t wait to hear more about blend. Looks like I should have made more of an effort to attend. 😉
Amanda @ .running with spoons.
I wish you could have! I actually found it a lot more fun than HLS, mostly because it was like one giant girls’ weekend away 🙂
Ms.J
Ohmygoose, so creatively genius! I can totally conjure up the perfect blend of flavour and texture these nifty little treats possess by that description..YUM! The only stuffed date I’ve had was with an almond nut and covered in sesame seeds; good, but dull compare to this twist.
Aahhh I can’t wait for the Blend recap to get under way..as long as you don’t leave anything out, it’ll be perfect 😉 .
Amy @ Long Drive Journey
Not only am I one of those people who have never bothered stuffing a date, I am one of those people who have never even EATEN a date. But now that I am finally home (!!!) I’ll have lots of free time on my hands! I’m glad that you had fun at Blend! Can’t wait to hear about it!
Megan @ The Skinny-Life
These sound fantastic! I never ate a date in my life until January this year when my Mon brought some home from the market. Now I’m obsessed with them. What brand of krispie cereal do you recommend? I must admit I felt overwhelmed by Blend. It was great meeting you!
Amanda @ .running with spoons.
You too, girl! I’m sorry we didn’t get a chance to talk a bit more, but there were so many girls to meet that it was seriously hard to talk to anymore for more than 5 minutes at a time unless you were rooming/sleeping with them 😆
And for the rice krispies, I use either One Degree or regular Rice Krispies.
Khushboo
These are definitely the cutest use of dates I’ve come across yet! Love dates stuffed with any kind of nut butter, but even on their own they are delish…definitely Nature’s fudge :-)!
Miss Polkadot
Do you deliver? I’ll take them all – better by the dozen?! Caramely dates, creamy almond butter, crispy rice – if these are even just half as awesome as I imagine them you’ve got yourself a surefire winner there.
Regarding Blend I want to hear it ALL – the good and the bad [if there actually was any of that just so those of us missing out can feel a little better – kidding 😉 .
Laura @ RunningJunkie
I would love this! I love dates, but really prefer crunchy things, so this fits the bill. I use dates to make bars. They are so good. Almond flour with dates, coconut, chia seeds and walnuts:-)
Jill
I don’t think I’ve had stuffed dates before. I’ve seen them around but now that I think about it, I don’t know that I’ve had them. These look perfect and I have a huge jar of dates on hand so I’m gonna give ’em a go this eve.
Amanda @ .running with spoons.
Let me know if you do end up trying them 😀
Jen @ Chase the Red Grape
Oh geez spoons, what are you doing to me!
I have got to try and curb my date addiction and you are sooooo not helping!!! 😛
Ps – love it! x
GiselleR @ Diary of an ExSloth
I’ve never had stuffed dates before, but now that I’ve seen these, I can totally understand the appeal 🙂
Thanks for sharing!
Davida @ The Healthy Maven
Definitely never come across a rice krispie stuffed date before! p.s. nice hello bar 😉
Amanda @ .running with spoons.
😆 I installed mine yesterday and seriously lol’d when I went to read your post this morning 😉
rebecca
Can you believe it…I’ve never had a date before! If they taste anything like prunes I will be a happy girl. I am a prune fanatic. Odd, I know.
Can’t wait to see pictures from Blend!
Amanda @ .running with spoons.
Similar, but a little different! They almost taste like caramel.
Julia Izzolo
Those look amazing!!! I’m going to have to make them. My favorite way to eat dates is stuffed with blue cheese and wrapped in bacon. Yum!
Chelsea @ A Fit LittleOne
These just look and sound amazing!!
Ashley @ My Food N Fitness Diaries
I realllly need to try the whole stuffed dates thing. They always sound fantastic. Do you buy dates where the other dried fruit is in the grocery store?? I’d be all about stuffing them with loads of nut butter!
Amanda @ .running with spoons.
I actually find them in the regular produce section. They’re kind of off to the side and come in these smallish boxes with a red label.
Sam @ Better With Sprinkles
So I told you this already when you told me about this over the weekend, but you are just brilliant. I have a giant container of dates in my cupboard but I don’t actually eat them all that much (ya, I don’t get it either) so basically, I just need to run out and buy rice krispies.
P.S. can we just fast forward to the next time that we get to see each other? Because that would be awesome…
Amanda @ .running with spoons.
I knowwwww! [Hopefully] only a few more months!
Lisa
Omigod, yum! I’m all about the dates + pb combo right now so this is totally up my alley!
Definitely going to make these ASAP
Hollie
It looks like a really good and simple recipe. We are going through a ton of rice krispies (making normal rice krispie treats) as well as oats (making bars) right now!
Lauren
These look insane – I want some right now! I LOVE dates – I have them pretty much every day in some way – in a smoothie, on a salad or stuffed with coconut butter. The other day I stuffed one with some coconut oil and a few cashews – it was a taste sensation in my mouth, I hear you on the different textures in one mouthful. I must try these. I hope you had a fab time at Blend – can’t wait to read about it all 🙂
Ashley
This is such an awesome idea! I would totally make this for a party as a healthy alternative to all the junk food!
Julie @ Coastal Runner Girl
Oh, what a great idea!! I’ll have to make them this week! 🙂
Ella
Dates and almond butter… omg. This looks so, good, definitely gonna give it a shot! I actually recently posted a recipe video for peanut butter energy bars that I think you would LOVE (if you swapped almond butter for the pb!). Let me know if you make them!

meredith @ The Cookie ChRUNicles
Is it weird that I never buy dates which means I never stuff them?
Amanda @ .running with spoons.
Yes 😛
Brittany
OMG STAAAAPP! This is so similar to the snack I’ve been obsessing over!!! The rice cake with almong butter and cinnamon AND DATES! Seriously, I have gone through an entire tub of Costco dates in less than a week. Had to go buy more yesterday. What a great bite sized snack!!
Holly @ EatGreatBEGreat
What an awesome idea! I absolutely love dates and I typically stuff them with peanut butter, but I’m really loving the addition of the rice krispies. They’ll add that perfect little crunch! And then of course, a drizzle of chocolate is never a bad thing!
Kat
For the love of goodness, this is amazing!! [in my best Cloudy with a chance of meatballs voice]
Literally dying right now….must.make.these.now!
I eat dates like there’s no tomorrow, so thanks for giving me just another reason to toss those little beauties into my mouth 🙂
Ang @ Nutty for Life
I cannot wait to see a full recap of Blend! So many amazing women were there, I’m jealous I didn’t get a chance to attend. But ummm yes I’ll be there next year! Maybe tickets to CO will be cheaper than UT?! I hope so haha.
I’m obsessed with dates, went through a mild rehab from not eating them like every day a few months ago lol. But I might be jumping back on the train. These would be perfect for a girls night cause they’re so tiny and would probably taste good with wine. haha
Amanda @ .running with spoons.
You better be there next year! And from what I’ve heard, tickets to CO are a little less pricey than those to UT… thank goodness!
Jen @ pretty little grub
Those looks soo yummy! What a unique idea.
Lucie@FitSwissChick
Pics, pics, pics!! I want to see all of you gorgeous faces!!
I LOVE dates. And yes, they ARE so versatile. Well, I love it simple – dipping them in Almond Butter. SO GOOD.
Parita @ myinnershakti
I’m kind of obsessed with the dates, pb, and choc combo at the moment! I swear it tastes kinda sorta like a fudgy brownie. Anyways, the addition of the rice crispies sounds like a fun idea – will definitely try this soon!
Shashi
Cannot say I have come across a rice krispie stuffed date either – what a wonderful texture party in each bite!
Glad you are back lady, cannot. wait. to. hear. bout Blend!!!!
Amanda @ .running with spoons.
Ack! I SO wish you were there!
Michele @ paleorunningmomma
These are the cutest little bites I’ve seen in a while! Might stuff mine with some chopped cashews and coconut flakes. Great idea!
Tom @ Raise Your Garden
Krispie Stuffed Dates dipped in chocolate? Wow those look delicious. I am trying to cut back on my deserts, Dr’s orders. But I will have to try those sometime. Dates are good for you, right? So is dark chocolate. Thanks for another stupendous desert!
Alex
I had to comment, these look freaking amaazing. i’m drooling over here. Miss you lady! it has been a while since we have chatted
Amanda @ .running with spoons.
Miss your face, lady! You disappeared on me!
Bridget
I LOVE bacon wrapped dates! This tapas restaurant (cafe ba ba reeba) gas them and the are amazing! The sweet and savory mix is indescribable. I don’t eat a lot of meat so I just savor one (ok two) each time someone in my dining party orders them!
I’d love to know which of your blogger friends you got to connect with at blend! Hope you had a blast!
