No Bake Pumpkin Snickerdoodle Bites made with healthy ingredients and packed with cinnamon sugar flavour! They’re nut-free, gluten-free, and vegan, making them a great snack for a variety of different lifestyles.

So back in the day when I thought I was allergic to all nuts rather than just peanuts (long story), it drove me nuts (pun intended) to come across delicious looking no-bake snacks only to realize that I couldn’t eat them because they were heavily based on almonds, cashews, or walnuts.
Not that there’s anything wrong with those fantastijazzical foods, but they can be a bit of a nuisance if you’re dealing with allergies, or nut-free school zones, or… if you just don’t like nuts? Does anyone not like nuts? I can see not enjoying them on their own, but pulverized into butters or baked into things? Amazing. But I digress.
The point is, it’s good to have options… especially when those options look (and taste) like this:
I feel like I’ve been seeing the pumpkin snickerdoodle flavour everywhere lately. Or maybe I’ve just been noticing it more because the combination sounded so ridiculously good to me that I couldn’t get it out of my head.
Not quite as… err… spicy as pumpkin spice, my take on pumpkin snickerdoodle is a whole lot of cinnamon and sugar flavour with subtle pumpkin-y, vanilla-y undertones. So the first bite is all cinnamon sugar, and the more you chew, the more you start to taste the pumpkin. Fancy, eh? I totally planned it that way (except not at all).
What I did plan was to use one of my favourite no-bake ingredients (read: dates) because those + oats make for an amazing texture + flavour combo when it comes to no-bake bites.
They’re soft and doughy. They’re sweet and cinnamon-y. And while I can’t claim that they taste exactly like snickerdoodle cookies, they’re pretty freaking delicious in their own right.
They’re also vegan, nut-free,and gluten-free as long as you use certified GF oats, making them perfect for a variety of different diets. Oh, and they’re super easy to make, too – just toss all the ingredients into a food processor, and voila! You’ve got yourself a batch of healthy no-bake pumpkin snickerdoodle bites.

PrintNo Bake Pumpkin Snickerdoodle Bites
- Total Time: 10 mins
- Yield: 8 bites 1x
Ingredients
For the bites:
- 1/2 cup (90 g) dates, pitted
- 1/4 cup (60 g) pumpkin puree
- 2 Tbsp (30 ml) maple syrup
- 1 1/2 tsp vanilla extract
- 3/4 cup (60 g) rolled oats
- 1/4 cup (28 g) coconut flour
- 1/2 tsp ground cinnamon
For the cinnamon sugar coating:
- 1 tsp (4g) coconut or granulated sugar
- 1/4 tsp ground cinnamon
Instructions
- Add all of the ingredients to a food processor or high-speed blender and process on high until the dates and oats have broken down and the mixture sticks together easily.* If the mix feels too dry, add non-dairy milk or water 1 tablespoon at a time until the right consistency is reached.
- Add the cinnamon and sugar to a shallow bowl. Using a heaping tablespoon, roll the dough between your hands before rolling it in the cinnamon sugar to coat. Set it aside on a plate and repeat with the remaining dough. Store the balls in an airtight container for best results, or freeze for longer periods of time.
Notes
* How long you process it really depends on the kind of texture you’re going for. If you want your bites chewier and chunkier, process them for a shorter amount of time. If you want them smoother, process for longer.

You could try oat flour, but you might have to fiddle with the amount and possibly add more than 1/4 cup if the bites end up feeling too wet since coconut flour is super absorbent.
