Hooray!
I’m not the only one who can’t be bothered to make her own hummus π Thank you guys for making a lazy girl feel a little less lazy. It may very well happen one day, but seeing as I’ve been saying that for over a year now, it may very well not. Such is the nature of the lazy beast – what can you do.
You can make dessert.
Luckily, one area where laziness doesn’t interfere with my motivation, is in the realm of baking – there, I don’t mind putting in a little extra time and effort to make my own tasty treats… because, apparently, satisfying my sweet tooth is more important than satisfying my savory tooth…
In any case, remember yesterday’s teaser ingredient?
Whoever guessed that it was for cheesecake, guessed correct. Today’s recipe is for a no-bake cheesecake that really couldn’t be any simpler. Hands-on time is minimal, but the payoff is absolutely fantastic. What more could you ask for? The recipe, you say? My pleasure π

. no-bake chocolate cheesecake bites .
IngredientsΒ (makes 10 bites)
For the crust:
- ΒΌ cup cocoa powder
- Β½ cup almond meal
- ΒΎ cup rolled oats
- ΒΌ cup honey
- pinch of salt
For the filling:
- 1 cup plain Greek yogurt
- 1 8 oz. package of cream cheese, at room temperature
- ΒΌ cup sugar
- 1 tsp. vanilla
Instructions
For the crust:
1. Combine cocoa powder, almond meal, and oats in a food processor and pulse until well combined.
2. Add honey and salt and continue to pulse until thoroughly combined.
3. Using a tablespoon, divide mixture evenly among 10 silicone baking cups. Firmly press it down until it becomes compact and holds together in the bottom of the baking cups.
4. Cover and refrigerate for ~ 1 hour, until set.
For the filling:
1. Using a blender or electric mixer, beat cream cheese until smooth. Add sugar and vanilla, and continue beating. Finally, add yogurt and beat until the mixture is smooth and fully combined.
2. Spoon cheese mixture into prepared cups, filling almost to the top. Place into a muffin tin and freeze for at least 4 – 5 hours, until firm to the touch.
3. Prior to serving, remove from the freezer, peel away silicone lining, and allow them to soften up for ~15 minutes. Garnish with toppings of choice.

I’m not even the biggest fan of cheesecake, but I do have to admit that I’m quite smitten with these little bites.Β Perfectly snack-sized, and not sickeningly sweet or mind-numbingly rich, they make a delicious pick-me-up at any time of the day. They’re not too, too sweet, which makes them a perfect base for a host of toppings – I tried strawberry jam, honey, almond butter, and caramel pudding, and all tasted fantastic.

These look great! My favourite type of cake is definitely some kind of chocolate. I used to prefer cakes from fruit and didn’t like chocolate cakes, but now it’s the opposite, hee. For my last birthday, I had TWO birthday cakes and tiramisu (I didn’t use to like tiramisu, but now I do – it’s one dessert that my brother always makes). I didn’t want a birthday cake from the store (I prefer homemade stuff), but my mom told my brother to buy it, so we did. It was an orange cake and I did not like it, as I’m not a fan of citrus desserts. I also made my own cake for the first time, but it didn’t come out well, because I used too little sugar. All in all, not a successful birthday dessert-wise!

For my 18th Birthday my mum made me a chocolate layered cake with chocolate frosting on top, decorated with white chocolate buttons.

Those are so cute! I have to say that, even as a vegan, I’ve retained a tendency toward choosing cheesecake, and I was so happy to have a piece of vegan cheesecake at the Loving Hut restaurant here in Paris just a couple days ago–great experience for the short time that I’m here! Tiramisu is pretty smashing, too, though . . . I just need to make a vegan version. π

These are super adorable and I love that they can have custom toppings π My favorite cake would probably be lemon poppy seed, is that stretching it? I am usually not a huge cake lover, but sometimes strawberry shortcake calls to me. Hmmm… I am pretty sure I had fro yo on my birthday, haha obviously it was eventful.

Okay, promise you’ll believe me when I tell you that I’ve never been more excited to make a recipe in my life. Cheesecake is hands down my favorite dessert. I love it more any other food item. And, to top things off, I’m standing next to Eli’s Cheesecake stand in the Chicago airport, wishing that they had a gluten free option that I could enjoy (they’re closed anyways though). Good news! I just bought a food processor today, so I can make these once I move into my apartment in a few months. SCORE! My conversation with the mom-inator:

I didn’t have a birthday cake since I was in my dorm and my parents visited for my birthday (the cake would go stale before I ate it all!), but (coincidentally enough) I had a piece of cheesecake with a candle in it at the restaurant after my birthday dinner! Delish.

This recipe is a definate must try as soon as possible! It looks delicious! My favorite cake? Thats a tough one- i do love a good chocolate cake but i also love carrot raisin, a homemade berry pie, vanilla with fresh berries as well as my mom’s homemade angel food with fresh strawberry sauce! There are too many that i enjoy!

Mmm! I love this kind of cheesecake – simple and delicious. I always use cottage cheese or quark because I love them more than cream cheese but it is still pretty much the same. Summer bliss!
I don’t know which kind of cake is my favorite. There are too many I like π . But I hate cakes covered with whipped cream and overly sweet cakes (which are usually the cream-covered ones). For my birthday last year I bought a honey and walnuts cake and it was amazing.

My favorite kind of cake is vanilla with vanilla buttercream!! For my last birthday I had an ice cream cake with a cookie crust and whipped cream on top – more of a pie than a cake, but whatever you call it, it was delicious!!

Oh wow these look amazing!!!! I’ve done the same thing with lemon cheesecakes. For the base, I mixed up some plain wholemeal cookies with butter and squished it into a cake tin and let it set. Then I just mixed up some cream cheese and lemon curd and Voila! You have a lemon cheesecake. So simple!
