It’s breakfast birthday week here on Spoons!
And yes… I really did type out breakfast just there. Because it’s totally normal to have breakfast on the brain at 2:19 in the afternoon, right? Right. I’m thinking oatmeal for dinner tonight. Or pancakes. Ooooo definitely pancakes. With maple syrup, nut butter, and berries. Swooooooon. But I digress.
It’s no secret that I’m a [huge] fan of breakfast, going as far as to eat it all day on a regular basis. It’s the reason I get out of bed in the morning, and I have a feeling that this [big] handful of recipes I’m about to share with you will have you jumping out of bed with the sunrise too.
And because it’s birthday week here on Spoons and this little blog of mine is turning 3 in a few short days, I hope you don’t mind if I partake in a little horn-tootage and focus on blog recipes alone for this roundup. I usually try to focus on recipes from other bloggers’, but this breakfast one is all.Spoons.
So without further ado… no wait! A few things about these recipes before we go on… They’re sweet, they’re healthy, they’re mostly gluten-free and/or vegan, and there are a lot of oats, bananas, and nut butters involved. Actually, I think every.single.one is made with oats. Huh. Oh, and they’re all reader favourites. Hope you enjoy!
. – . – . – .
Banana Oat Baked French Toast – {vegan, gluten-free}
A hybrid between baked oats and French toast, this single serve breakfast is vegan, refined sugar free, easily made gluten-free, and packed with fiber and plant-based protein. Soft, doughy, fluffy, hearty, and oh.so.GOOD.
. – . – . – .
Chunky Monkey Greek Yogurt Pancakes – {gluten-free, high protein}
Light, fluffy, and loaded with bananas, chocolate, and nuts! These single-serve oatmeal pancakes are made in the blender and boast a whopping 20g of protein [with no protein powder]. Top them with chocolate chips and a banana nut sauce that’s just to.die.for.
. – . – . – .
Chocolate Overnight Oatmeal Smoothie – {vegan, gluten-free, refined sugar-free}
Yes you CAN have chocolate for breakfast! This recipes takes the satiety factor of overnight oats and turns it into a thick and creamy smoothie that’ll make you feel like you’re drinking a cup of melted chocolate ice cream. And the best part is that it’s 100% healthy!
. – . – . – .
Strawberry Banana Oat Bars – {vegan, gluten-free, refined sugar free}
A soft and chewy banana oat base made without any flour or oil, topped with a homemade chia seed jam that’s free of refined sugars. Perfect for those days where you need something you can grab and go.
. – . – . – .
Blueberry Muffin Breakfast Bake – {vegan, gluten-free, refined sugar free}
Try this and tell me that the texture and taste doesn’t remind you of a blueberry muffin — I dare you! This breakfast bake uses oats and flour to make a light and doughy “bowl of muffin.” Replace the berries with your favourite fruit and top it with nut butter for a real treat.
. – . – . – .
Flourless Banana Bread Muffins – {gluten-free, oil-free, refined sugar free}
Soft, tender, and loaded with banana flavour, these healthy muffins are made with wholesome ingredients like oats, bananas, nut butter and eggs. And the best part is that you can whip them up in your blender in under 5 minutes and keep them on hand for those busy mornings.
. – . – . – .
Salted Caramel Cookie Dough Smoothie – {vegan, gluten-free, refined sugar free}
It may sound indulgent, but this smoothie is actually made with a naturally sweetened date base that’s perfect for the banana haters out there. It’s cool, creamy, and ridiculously comforting.
. – . – . – .
Banana Oat Greek Yogurt Pancakes – {gluten-free, high protein}
Another single-serving pancake recipe that gives you 6 big pancakes with under 300 calories and 20g of protein. Ridiculously easy to make, you can whip them up in the blender and enjoy a fuss-free batter that yields a perfect stack every time.
. – . – . – .
Soft and Chewy Protein Granola Bars – {gluten-free, vegan, refined sugar free}
Quite possibly my favourite recipe here on Spoons — I almost always have a batch of these on hand and eat them as a snack regularly. They’re perfectly soft and chewy with just the right amount of sweetness, and if you’re not a fan of using protein powders, you can just replace it with more oats.
. – . – . – .
Flourless Morning Glory Muffins – {gluten-free, oil-free, refined sugar free}
Carrots, apples, raisins, and nuts steal the show in these soft and tender gluten-free muffins! Made without flour, oil, or refined sugar, you can whip them up in the blender in under 5 minutes.
. – . – . – .
Oatmeal Cookie Dough Breakfast Bake – {vegan, gluten-free}
Because who doesn’t want a cookie the size of their face for breakfast?! This soft and doughy oatmeal bake is made with wholesome ingredients that you can feel good about starting your day with. Replace the chocolate chips with dried fruit or nuts for an even bigger nutritional boost.
. – . – . – .
Apple Oat Greek Yogurt Pancakes – {gluten-free, high protein}
A variation of my banana oat pancakes with applesauce to appease the banana haters. Super quick and easy to make, and loaded with 20g of protein. Take a few extra minutes to make the apple topping — it’s to.die.for.
. – . – . – .
Oatmeal Cookie Dough Smoothie – {gluten-free, vegan, refined sugar free}
If you’ve never tried adding oats to your smoothies, you need to get on that STAT because it will change.your.LIFE. Not only do the oats add a subtle sweetness, but they thicken it up and give it a doughiness that’ll make you feel like you’re drinking an oatmeal cookie.
. – . – . – .
Banana Oat Greek Yogurt Muffins – {gluten-free, flourless, oil-free}
Quickly approaching a million pins, this is hands down the most popular recipe on Spoons. Light, fluffy, and made without flour, oil, or butter, these muffins are definitely a great gran and go breakfast option.

Wow! These look awesome! I’m actually in the last couple of days of my Whole30 and getting so sick of my same breakfasts, so these are some new, great options. Thank you!
Edword cullen
These are fantastic breakfast options and I’ll be referring back to this often! Thanks for an awesome post!
Jade
Breakfast is by far the most superior of meals. I could eat it for every meal every day! I had oatmeal for lunch yesterday! And I want every single thing on this post

Amanda @ Diary of a Semi-Health Nut
I think I could eat breakfast for every meal of the day. And I think I have wayyyy more breakfasts on my blog than lunch/dinners…probably because breakfast food rules.
Happy Blogiversary Spoons!!
Alex @ True Femme
This was a great roundup! I definitely want to try the strawberry banana bars! And I’m also going to get some of the Harney & Sons tea! I’ll let you know how it goes though I’m pretty sure I’m going to be addicted to it!
Amanda @ .running with spoons.
I actually just placed my order a few days ago. Hope it comes before I run out because… yeah… it’s definitely an addiction.
Jade @ Surrendered Stomach
Happy Birthday week to Spoons! These recipes look awesome. 🙂 Breakfast is my favorite meal of the day also and I enjoy eating breakfast foods whenever I can. I’ll definitely have to add some of these delicious looking recipes to my breakfast repertoire…
Allie
Oh man, all of these breakfasts sound and look great! I’m always stuck in a breakfast rut, so I’ll have to try some of these (especially the strawberry oat bars and blueberry breakfast bake!) to switch things up 🙂

I hope you like them if you try them, Allie!
Lucie@FitSwissChick
K, so I need a two weeks vacation at your place, so you can make these all for me. I pay in Swiss chocolate.
Amanda @ .running with spoons.
DEAL! Just let me know a few days in advance so I can prep the guest room 😛
Jen @ Chase the Red Grape
So glad I had eaten before I read this otherwise I would be hungry!
Breakfast today was eggs and kale drizzled with tahini – yummy! But I think if I was having breakfast for dinner it would have to be pancakes! Funny that I pick savoury first thing but then sweet in the evening!
Definitely going to check a few of these out! 🙂
Amanda @ .running with spoons.
😆 I always have to make sure that I’m well-fed before reading blogs otherwise I end up making multiple trips to the kitchen…
Alyssa @ Renaissancerunnergirl

Now you gave me an idea: birthday week happening twice a year for us bloggers?! Not a bad inspiration at all 😉 …
Oats in every of these creations are obviously a sign they’re all winners – especially those breakfast bakes. If I had breakfast for dinner?? I DO almost every night and it’s my [not-so-]legendary cocoa banana oat bran with white almond butter. Actually, it’s dinner time soon :).
Amanda @ .running with spoons.
I dunno… that sounds pretty legendary to me! I don’t even think I’ve ever seen white almond butter around these parts, but it sounds amazing.
Beverley Cheng
ahhhh why did i read this in the middle of the day! i wish i could go home right now and bake them all. thanks for sharing these! will be coming back tomorrow morning 😉

So many great ideas! I’m glad you asked what people had for brek fast today because I had the Banana Bread Mug Cake from this website. I have it at least once a week. And if I was having breakfast for dinner (wish I could get away with that), I’d go for a big bowl of oatmeal with almond butter, cinnamon and raisins. I just bought some almond butter today. Keep going to the cupboard with a spoon :/
Amanda @ .running with spoons.
Cinnamon raisin oats topped with melty AB is one of my favourite breakfasts as well! And I feel ya on the cupboard trips — totally guilty of that as well!
Khushboo
Oooh dayumn now that’s a delicious round-up of recipes! It’s been so long since I ate oats but now I suddenly have a huge craving. No brinner for me tonight but I got my breakfast fix this morning: Peanut butter toast with a glass of soy milk—> simple but hit the spot!
Amanda @ .running with spoons.
I’ve been gravitating towards simpler combinations lately as well. Like with oats? Instead of going with ALL the toppings, just a simple combo of almond butter and brown sugar has been enough.
Shannon
Happy early blog birthday! Love all of your breakfast recipes. I really need to try the french toast bake!
Rebecca @ Strength and Sunshine
Woohoo! I would be okay with just eating breakfast food the rest of my life, hands down 100%!
Amanda @ .running with spoons.
Couldn’t agree more
Shashi at RunninSrilankan
Dear gosh – incase I haven’t told ya, your pictures are freaking stellar! I just wanna dive into those smoothies and put ALL those spoonfuls into my mouth -AT ONCE!!! IMO breakfast is the best meal of the day (also, as evidenced by this here collection of deliciousness)! Breakfast for dinner for me almost always involves pancakes – with a side of bacon! 🙂
Happy early spoons-day!
Amanda @ .running with spoons.
Aww thanks so much, Shashi 🙂 That’s super sweet of ya!

* blog bday
Lindsay
Happy bday week!!! I don’t care what meal you post, any of it will get me up and out if bed because it’s your food. Heavenly and full of love! That being said, these all look amazing
Amanda @ .running with spoons.
Have I ever mentioned how glad I am to know you for all these years? <3
Hollie
I always enjoy your round ups because breakfast is my favorite. I could seriously eat sweet breakfast for the majority of the meals.
Amanda @ .running with spoons.
That makes two of us And I remember all your pancake and waffle posts — I miss them!
Kate
I love when you do round ups. I definitely need to change up my breakfast, but the earlier I wake up the less like I am to be creative. I will have to see which of these can be prepped in the AM.
Amanda @ .running with spoons.
Haha! I’m the same way at breakfast time. It takes my brain a little while to wake up, so I’m usually running on auto-pilot and breakfast ends up being the same thing more often than not.
Jen @ Pretty Little Grub
Breakfast should be eaten all day, everyday period. And also, this post makes my heart happy!
Kelly @ Kelly Runs For Food
Oh my gosh, you’re killing me! I haven’t had breakfast yet today and I want all of these in my belly. Give me pancaaaaaaaakes. This is making my wonder why I don’t use my oats more often!
Arlene
Agree, breakfast is my favorite (having Oatmeal today, well every morning). You should do a cookbook! Have a wonderful Day Amanda.
Arlene
Amanda @ .running with spoons.
I wish! A cookbook would be a dream, but I have no idea where I’d find the time to do it! Hope you’re having a great day as well, Arlene 🙂
tiff @ love, sweat, & beers
I already had breakfast, but now I want second breakfast. Elevensies? Want to fly down just to whip up some pancakes for me? Mmmmkaythanx.
Amanda @ .running with spoons.
Second breakfast happens for me on a pretty regular basis. And usually 3rd or 4th too 😆
Ashley @ A Lady Goes West
Hi Amanda! Happy blog birthday week! Yes, I love to see your breakfast creations. Breakfast is most certainly my most favorite meal of the day, and I’m eating some cinnamon overnight oats as I type this! Thanks for sharing these good-looking recipes! 🙂 Have a fabulous day!
Amanda @ .running with spoons.
Cinnamon overnight oats sound delicious. Hope you’re having a great day as well, Ashley!
Ellen @ My Uncommon Everyday
Everything here looks amazing. I’m hungry again now, and I just ate breakfast! This morning was a cereal + yogurt bowl kinda morning. Hmm. Breakfast for dinner? I’m thinking bacon and a veggie-packed omelette… but I could be persuaded to switch to those Apple Oat Greek Yogurt Pancakes 😉 Those look incredible!
Amanda @ .running with spoons.
😆 I have the same problem when I read blogs — I always get hungry again even if I had just eaten.
Heather @Fitncookies
Can I invite myself over for breakfast every morning? These all look heavenly! Want them all for breakfast!
Amanda @ .running with spoons.
Most definitely 🙂
Michele @ paleorunningmomma
I could read this post for hours dreaming about breakfast! I’m having eggs bacon and sweet potatoes today but now of course I want your pancakes!
Amanda @ .running with spoons.
Pancakes for dinner is never a bad idea!
meredith @ Cookie ChRUNicles
You know breakfast is my favorite too and I basically eat it all day long 🙂 I have to go back and make some of these especially now that I can drink the almond milk without an allergy reaction!
Heather@hungryforbalance
Breakfast is my favorite meal of the day too! I love this roundup. Your oatmeal cookie dough smoothie is one of my favorites! I had overnight oats for breakfast. It is my current favorite!
Amanda @ .running with spoons.
Try your overnight oats blended up in a smoothie — it will change.your.LIFE 😀
