The sweet spiciness of a gingerbread cookie in a thick and creamy smoothie. This Gingerbread Cookie Dough Smoothie makes a perfect festive drink!
I can’t EVEN.
Doesn’t it drive you crazy when people say that? Me too. It’s like… can’t even what?!?! Don’t leave me hanging like that!
But as I sat down to start writing this post, sipping on my gingerbread cookie dough smoothie, that’s literally the first and only thing that came to my mind –> “I can’t EVEN…” followed by some NSFW sounds of sheer pleasure. Can’t even what? Your guess is as good as mine, seeing as my own brain left me hanging… But I’m going to go with something along the lines of: “I can’t even… handle how good this tastes.”
It’s no secret that I’m a bit of a smoothie addict, and it’s not rare for me to drink 2 or 3 a day. But I can’t help it! They’re quick, they’re creamy, they’re convenient, they’re customizable — what more could you ask for?
Need some extra greens in your life? Toss in a handful of spinach. Lacking in protein? A scoop of protein powder or Greek yogurt will get ya covered. Craving some healthy fats? A spoonful of nut butter or avocado will take care of that. Whether you’re in the market for a quick meal or healthy snack, a smoothie is a pretty great option.
And it’s funny because I didn’t always love smoothies. In fact, I can clearly remember a period of my life where I made the argument that I’d much prefer chewing my food over drinking it. Needless to say, things have changed, and I have a feeling that a lot of that has to do with the fact that I’ve finally figured out how to make my smoothies satisfying.
Ingredients matter, both for taste and texture. And so does a good blender. I know you can technically make a smoothie with anything that can break down ingredients, but the more powerful your blender, the smoother and creamier your smoothie will be.
Say hello to the newest love of my life — the Blendtec Designer 725. Those powerful blenders I just mentioned? This is one of ’em. It’s got a 3.8 peak horsepower motor, which is basically just a fancy way of saying it will creamify anything. It’s even got preprogrammed cycles for things like: smoothies, salsas, ice creams, juices, and soups, so all you need to do is hit a button for whatever it is that you want to make and walk away — the speed and time is preset and the blender will stop on it’s own.
Faaaaancy. And while I do use my blender to create a variety of different things (I have another [non-smoothie] recipe coming up for you guys on Monday!), the smoothie function definitely sees the most action… especially since I discovered the goodness that is this gingerbread cookie dough smoothie…
You guys… I can’t EVEN….
If you’ve always wanted a way to drink your gingerbread cookies, then this is your answer. And if you’ve never thought about drinking your cookies, then you’ll be asking yourself “where has this been all my life?!?” after your first sip. Guaranteed.
This smoothie has all the sweet spiciness of a gingerbread cookie in a cool and creamy drinkable form. And as an added bonus, you even get a nice dose of iron thanks to the molasses — which is especially important for us ladies who run a higher risk of developing an iron deficiency. So if you’re like me and enjoy smoothies all year long, might I suggest giving this festive gingerbread one a try? I have a feeling you’ll love it.

I can’t even!!! …handle it when people say that. It’s SO annoying.
Always in my smoothie is Greek yogurt for its protein power. Everything else varies!
Kim
Oh my Gosh!!!! That sounds AND looks amazing! Must try!
Chelsea @ Chelsea's Healthy Kitchen
I am seriously obsessed with gingerbread right now! I’m not a big smoothie person, but this sure looks good. I just want to add molasses to everything right now!
Aja
That smoothie sounds amazing.
Ms.J
Ohmygoose I am smitten! This is the only circumstance where I actually believe in love at first sight. But that’s to be expected; I swear it’s like you design smoothies for me 😉 .
What would be the ideal molasses to use? I know we have blackstrap on hand…but my intuition tells me not to go that route!?
She Rocks Fitness
OMG this looks so freaking good! I don’t own any molasses, but I feel that I need to pick some up, because I see so many recipes that use it. I always put NUT BUTTER in my smoothies. Cannot wait to make this…Thanks love!
Emma @em-poweredwellness
Ingenious.. I never would have thought to put molasses in a smoothie but this sounds amazing!
Arman @ thebigmansworld
Urgh, I hate that phrase BUT I do love the fact that you’re posting smoothies. Hello, Summer here.
I think subbing the oats for actual cookies might happen…heck it’s going to happen.
Sam @ Better With Sprinkles
“I can’t even”….finish the sentence? Ya, I got nothing. I do want a gingerbread smoothie though.
EVA
I just spent my whole morning at work making smoothies, so this post was quite fitting! Great minds think alike, eh?!
BANANAS. ALWAYS. But I think that’s a smoothie requirement. Some people replace it with mangoes or yogurt and whatnot, but nothing is ever truly like a banana. It can do it all, people.
“I can’t even….sit down”. Even though I had to wake up at the crack of dawn today for training at work, I’m super high-energy. Hell, I’m doing the laundry I’ve put off for WEEKS right now, and laundry is the absolute last thing I can ever get myself to do. So far this Friday is doing some good!
Brittany @ Delights and Delectables
I need this smoothie right now!! So you love the Blentec?? I’m deciding between that, the Ninja, and the Vitamix. Suggestions?
Alison @ Daily Moves and Grooves
I can’t even…tell you how excited I am for this recipe!! I literally JUST finished another square of your gingerbread pumpkin bars that I made at 10 pm last night. So I am all for more of your gingerbread recipes.
I ALWAYS put bananas in my smoothies. They add an incomparable sweetness and creaminess!
Brittany
HAHAHA OMG you totally stole my thoughts about the “I can’t even” phrase. I HATE HATE HATE IT, BUT have had so many instances lately where I’ve said it in my head. I’m always like NOOOO. Anyway, this smoothie looks sososo good, and so does your new toy! I’ve had my Blendtec for going on four years and love itttt sososo much. Happy blending!
Sam @ PancakeWarriors
Love love love this! I feel like I will be living off this smoothie this weekend! Can’t wait to try it!
Sarah @ Making Thyme for Health
This sounds amazing! Like, I can’t even. 😉
I always add frozen bananas to my smoothies because I love the texture it gives them. And I asked for a new blender for Christmas (a Vitamix…shhhh.) so I’m hoping Santa hooks it up!
Christina @ The Beautiful Balance
Ohhh done and done, I’m making this tomorrow morning! Love that you added molasses into it, how could you ever leave it out in anything gingerbread-esque! Perfect!
lucie
I kind of love the idea to drink my cookies. Maybe if I can dunk a cookie in that smoothie! It looks so good! I love that smoothie jar/glass/mug.
GiselleR @ Diary of an ExSloth
Girllllll. I wish I had woken up earlier today so I could have had one of these for breakfast. Need to try this asap 😀
Now that I’ve broken the seal and tasted gingerbread I can’t. get. enough.
Ashley @ A Lady Goes West
Hi Amanda! So yummy! You know, I go through phases of loving smoothies and not loving them. I like to chew food too, so I think a couple of weak smoothies sent me over the edge in the wrong direction. This one sounds RIGHT up my alley though. I can’t even …
Megan @ Skinny Fitalicious
Amanda, do you know I’ve never used molasses? I actually picked it up at the market last weekend and put it back. I’ve been wanting to use it in a few recipes, but something holding me back. Weird right? This smoothie though….must be recreated. Thanks for giving me an excuse to try molasses.
Hollie
Wow that looks really good, thank you for sharing. Gingerbread is one of my favorite flavors of the Holidays too so I can completely relate to that.
Brittany
This looks SOOOO freaking good. I need a blendtec ahhh my blender is terrible.
Ellen @ My Uncommon Everyday
I hate that I use that phrase, but I soooo do. It doesn’t make full sense because you don’t even finish the sentence, but “I can’t even” and “I can’t” are definitely part of my day-to-day vocabulary.
Susie @ SuzLyfe
This is like my dream. Gingerbread is one of my absolutely favorite cookies and holiday flavors. Alex and I got a gingerbread latte from Starbucks the other day and I nearly chugged it. MUST. SAVOR.
And cookie dough? Always. I need this to become an ice cream!
Angela @ HonestlyAngela
I better make this after my workout today – i don’t want to risk getting iron deficiency!
I drink a ton of smoothies too and my recipes get a little boring. I have all of these ingredients so I will be making this. Thanks for the inspiration!
Katie@LifesNextBigStep
Oh I am making this as desert tonight. I already have all the ingredients and I couldn’t be happier about how this is turning out for me.
Katie@LifesNextBigStep
….dessert….
Khushboo
Hahah ok confession time- it drives me nuts when people use that expression buuuuut I am guilty of throwing it out there too. I know I know, what a hypocrite I am ;)! Like you, I used to think smoothies weren’t satisfying so stayed away but clearly it was only because I didn’t add in the right ingredients! Although it’s been a while since I made one, I do love them for breakfast, especially after those workouts when I have no appetite but know I need some nutrition in me quick! Frozen bananas are almost always a must- nothing else gives it such a creamy texture (and naturally sweet but not too sweet flavour)!
meredith @ The Cookie ChRUNicles
I can’t finish the sentence because nothing usually follows the ” I can’t even”…It’s just my response to whatever was just said to me lol. I hope that makes sense.
Jess
I love putting oats in smoothies—great texture. This looks awesome.
Michele @ paleorunningmomma
When I worked at Friendly’s in high school scooping ice cream I used to make myself cookie dough milkshakes, and this just reminded me of that! Looks so yummy 😉
Shashi @ RunninSrilankan
I can’t EVEN tell you how many times my daughter has begun a sentence with “I can’t EVEN”!!! I used to not get it before – but now find myself using it more than I intend to….like I can’t EVEN fathom how brilliant this combo of bananas oats cinnamon and ginger in smoothie form, is!
It’s been awhile since I had a smoothie – but after you suggested adding frozen bananas to ’em, they have become my fav add in!
Happy Friday – I can’t EVEN believe that Christmas Day is less than a week away!!!!
Erin @ The Almond Eater
I CAN’T EVEN. That’s actually one of my favorite phrases…eesh. Or, “ugh, I can’t!!”…..not much better. This smoothie looks so tasty and I love love gingerbread. Pinning!
Sarah @ KS Runner
This looks delicious! I like smoothies but always feel less satisfied when I don’t chew my food. Apparently I need to work on my smoothie making skills!
AJ @ NutriFitMama
I LOVE Gingerbread…definitely need to try this. I have never used a Blendtec (I have a Vitamix) but I hear great things about them.
Cassie
Okay I can’t even with how much I need molasses… I have been seeing it in everything and this smoothie looks soooo good. I have been craving gingerbread even though I’m not so sure I’ve ever really been crazy into it before??
Kelly @ Kelly Runs for Food
Gingerbread smoothie sounds amazing. I love a good smoothie too, even in the winter!
Taylor @ Food Faith Fitness
I can’t even handle this smoothie FO REALSIES. Gingerbread, cookie dough and healthy goodness yum? I need this for breakfast, lunch and probably dinner too.
Pinned!
Rebecca @ Strength and Sunshine
I’m pretty sure I use the phrase “I can’t even” with just about every amazing food there is! It is the only thing that will describe it…even though it doesn’t, haha!
Lauren @ The Bikini Experiment
This looks like such a great smoothie! I love ginger inspired drinks and treats so I will have to give this a try. A Blendtec is so on my kitchen wish list! I have heard amazing things about them.
