If I had to pick 4 foods to eat for the rest of my days, I would probably go with: almond butter, oats, bananas, and chocolate. Sure I’d miss things like yogurt, eggs, chicken, avocado, apples, kabocha, and broccoli (yes, I really would miss broccoli), but seeing as I can’t even remember the last time I went a day without eating every.single.one of the four foods I first mentioned, I think it’s safe to say that I’m kind of obsessed with them, and I’d like to take this opportunity to introduce you to the most recent love-child of that obsession…
Flourless Chocolate Chip Almond Butter Muffins — a bit of a mouthful, but a ridiculously delicious mouthful. Not only are these muffins gluten-free, sugar-free, dairy-free, and oil-free, but they may just be some of the softest and fluffiest muffins that I’ve ever eaten. You’d never be able to tell that they don’t contain an ounce of flour just by biting into one…
β¦ and you’d be surprised to learn that they can be whipped up in a blender in under 30 seconds flat. That’s right — no flour means no need to baby the dough, and no need to baby the dough means you can just toss everything into a blender, flip the switch, and be guaranteed perfect muffins every.single.time.
The only thing easier than making these muffins is eating them, which isn’t a bad thing considering they’re made with the same wholesome ingredients that you find in a healthy breakfast. Egg, banana, oats, almond butter, and chocolate. Yes, chocolate… because what good is taking care of your body if you don’t take care of your mind? Luckily, these muffins allow you to do both π

- 1/2 cup (128 g) almond butter (can use other nut butter as well)
- 1 medium ripe banana (100g or 1/2 cup)
- 1 large egg
- 1/4 cup (80 g) honey
- 1/2 cup (40 g) rolled oats

These look absolutely delicious!!! I love that they have almond butter delicious!
I would have chocolate, sushi, cheese and red wine if that includes liquids or if I get liquids on top of food my fourth one would probably be a tie between ice cream and mangoes.
Chocolate for breakfast = yes all the way!
andrew
i got my hopes up…lol. saw sugar free and jumped but it actually has a lot of sugar in it. i think you meant refined sugar-free
Giselle@myhealthyhappyhome
I agree with the chocolate 100%! I think for me it would be Sunflower seed butter though. I didn’t think it would be possible but I love that stuff more than almond butter!
Shira
These look soo good! I’d love to give them a try. My 4 might be toast, chicken, oatmeal cookies, and seasonal fruit of choice (grapefruit/cantaloupe/cherries/apples in yearly order).. was that cheating..? π
I must ask though… why no flour??
Amanda @ .running with spoons.
Just for something different. I love experimenting in the kitchen π
Natalie Staeckeler
I could definitely eat those four foods for the rest of my days. I’d never get tired of them. π I would also miss the chicken, veggies, and other fruits. I’d probably sub the banana for sweet potato, because my stomach has a hard time digesting bananas (unfortunately..) *sigh..*
These bad boy looks amazing and I have all of the ingredients! Looks like I know what I’m whipping up in the kitchen this weekend. π
You are a food genius.
Mary Frances
Yes to a gf muffin that doesn’t call for gf flour!!! Now I can serve these to gf friends without breaking the bank π Oh my gosh, they look SO good. Muffins and quick breads are a major weakness of mine!
Gina @ Health, Love, and Chocolate
I am loving all these delicious wheat-free creations you are coming up with. I am still not feeling almond butter on it’s own after overdosing, but I have a feeling it would be perfectly acceptable to my body in these muffins.
Karey @ Nutty About Health
Wow, these look great!! You totally had me up until the rolled oats… trying to think of what I could substitute in their place though that would make them Paleo friendly. Mmm, they seriously look so good though!! π
Amanda @ .running with spoons.
Honestly, I have a feeling you could leave them out entirely and it would still be fine… The banana, egg, and nut butter are the main players.
Melissa @ nourishbymelissa.com
Ah these look amazing! I think i’ll make them with peanut butter since PB and banana is the perfect combo in my books! great recipe!
Lindsay @ Shiny Love Affair
Looks like another amazing recipe Amanda! I made the Oh She Glow’s Banana Bread Muffin Tops today and thought of you. I feel like you would really enjoy this recipe: http://ohsheglows.com/2014/01/17/banana-bread-muffin-tops/. They’re sooo good.
Amanda @ .running with spoons.
I saw those the other day, and you-re right — they look amazing. Good to hear they got a thumbs up from you π
Albizia
Yay for chocolate anytime! But I started my breakfast with ice cream yesterday so my eating really has no time restrictions π
Can’t wait for the day when I’ll live in a normal house with an oven…
Hillary | Nutrition Nut on the Run
Making these SOON – mmmm!
Jenni
I can’t wait to make these! Love easy recipes. I’m Jenni, by the way. I just rediscovered your blog. I used to follow it years ago! I’m so glad I found you again. I recently started my own health blog, so I’m on the lookout for other blogs to inspire me. I’ll definitely be adding you to my feed! π
Amanda @ .running with spoons.
Hey Jenni! Thanks for stopping by and saying hi π
Elise @ 9toFit.com
These look ridiculously good! You’ve done it again!
Kim
Definitely making these this week! Your recipes never disappoint π Thanks for posting!
Laura @ Sprint 2 the Table
Those are all of my favorite flavors too. Minus the broccoli – I would not miss that. π
Chelsea @ Chelsea's Healthy Kitchen
These look amazing! Those are four of my favourite foods too. Actually wait, those might be my exact 4 favourite foods haha.
lindsay
if only i could zoom to your house in 30 seconds with a cup of coffee and fork in hand… sigh
Arman @ thebigmansworld
How can I convince you NOT to post a recipe for the next 4 weeks until I have a kitchen? Well a proper one, not a temporary one. I love how it doesn’t call for crazy ingredients and classic Amanda ingredients too- I swear oats and almond butter have been in all your creations..love it.
A wise LCP once told me chocolate for breakfast is always acceptable.
Amanda @ .running with spoons.
Shhhh… I’m kind of hoping no one will notice that I base all my recipes off the same trifecta π
Miranda @ Lovely Wife Lovely Life
Um okay, so how about you bake these and mail them to me π Ha! But seriously, these showing up on my feed were a cruel and unusual punishment when I’m hungry!
Amanda @ .running with spoons.
Which is pretty much exactly why I never read blogs unless I’m well fed π
Christine
How much fat and calories are in these. Iβm on weight watchers and want to see if I can eat this in my point range. Thank you!
Mike @ FitFriend
Outstanding photography! They probably taste just as good too π
Sky @ The Blonde In Black
I really want to make these this week! They look perfect for a snack or an on-the-go breakfast. I know I could never live without peanut butter and chocolate!
Christine@ Apple of My Eye
OMG I’m seriously drooling right now! I’ve made a flourless chocolate cake before and have to put out there that the lack of flour just leaves more room for the good stuff ;).
Gorgeous pics!
Chelsea
Uhm yes please right now!…and I don’t even have to stir? Amazing. If I had to choose 4 foods I would have to say…salsa+chips, hummus+chips, peanut butter and chocolate π
Courtney @RunningforCupcakes
Wow those looks amazing! My four foods would be bananas, dark chocolate, popcorn, and cupcakes of course. Really healthy… Definitely a yay to chocolate for breakfast!
Sarah @ Making Thyme for Health
Holy amazingness. These babies are beautiful and I bet they taste even better!!
You are officially a blender goddess. If I was in charge of marketing for Vitamix, I’d be shipping one to you pronto because you know how to make the magic happen.
I can’t wait to try this one!!
Dawn @ OfficeGymRepeat
I was soooo excited to try these when I saw the pictures, but then I saw the recipe calls for banana. I’m allergic π Any idea on what might be a possible substitute for it? These look so yummy and perfect.
Amanda @ .running with spoons.
Ack! You could probably try replacing it with something like pumpkin (maybe 1/2 cup?), but you might have to add a little bit of extra honey or sugar to make things sweeter.
Genet Harris
Try subbing applesauce ! π
Kate @ Quarter Century Southern Living
Anddddd another home run! You seriously come up with the most amazing and nourishing treats! Teach me your ways π So excited to give this recipe a try. Thanks, girl!
Alexis @ Hummusapien
OMG Amanda…I couldn’t pin these fast enough! So easy looking and I must say–they are so freaking beautiful! Those pillowy tops look downright delectable. I”ll give my nanners a day to get a bit more spotted and then consider these made! LOVE LOVE LOVE.
Becky @ Olives n Wine
I think you already know the answer to this question for me but…. Nutella, PB and chocolate π You can throw bananas and apples in there for good measure! These look like my kinda breakfast – anything with chocolate is good to me!
Cat
Ok this has taken some serious thought! 4 foods: eggs, chocolate, carrots and coconut. That last one is kind of a cheat because it means I can have coconut oil and coconut milk AND coconut butter… right!? I’m not sure I’d get much of a muffin if I combined that lot but it may be worth a try… Pinning these bad boys!
Kim @ Racing Bananas
These look fabulous! I actually said “nom, nom, nom” while looking at the pictures. And now my co-workers think I’m nuts π
Erin @ The Almond Eater
I’m just going to go ahead and say THANK YOU for this recipe. I have all of those ingredients in my apartment as we speak, so I know one thing I’ll be making this weekend… π
Kristin@Operation Nutrition
These look amazing! I will definitely be making this recipe!
Caitlin
And now I know what I’m making this weekend π mm four foods wise I’d go with chocolate, bagels, almond butter, and hummus. Random mix, but absolutely delicious π
Rebecca @ Strength and Sunshine
A breakfast with out chocolate is a sad day, haha! I go through cocoa powder like a boss!
My 4 essential foods would be nut butter, cinnamon, apples, and cocoa powder!
Amanda @ .running with spoons.
I kind of love how you included cinnamon in there π
Anna
These muffins sound absolutely amazing! I’m still planning on making those bars of yours, and now I’ve added these muffins to the list. Good thing all this snow we’re getting in the northeast provides the perfect mood for baking!
Only 4 foods eh? It would have to be brussels sprouts, chocolate, mangos, and sushi. But that list probably rotates, except for the chocolate. That one is non-negotiable π
Megan (The Lyons' Share)
yum!!! The muffins look delicious, but the absolute best thing I got out of this post was your quote: “what good is taking care of your body if you donβt take care of your mind?” Perfect!!
Alison @ Daily Moves and Grooves
Can these BE any more perfect??? I think not. I might purposely let my bananas go super brown just to make these.
My four foods for life are very similar to yours: peanut butter, bananas, greek yogurt, and bread.
Yes, I love oats, but there is nothing better than a hot, doughy slice of bread (esp. with pb and banana) in my opinion.
I know I’ve said this before, butβ¦I’m not THE biggest fan of chocolate. I always feel like running away when I tell people that. I’ve been eating (and enjoying) a lot more recently than I have in the past, but I’d say nay for breakfast.
Amanda @ .running with spoons.
Bread.is.amazing. You know what I’ve been loving lately? Bread with butter and honey. So simple, but so good. That might be because it reminds me of my childhood, though…
Alison @ Daily Moves and Grooves
Mmm I used to love honey on toast! Why did I ever stop? Thanks for reminding me! π
Christina @ the athletarian
GIVE ME THOSE MUFFINS!!!!!! Heading to the grocery store now to pick stuff up for dinner. All I’m missing is the chocolate chips for this recipe so I’m going to pick some up while I’m there! Going to try using an egg substitute…hopefully it works! π
