If I had to pick 4 foods to eat for the rest of my days, I would probably go with: almond butter, oats, bananas, and chocolate. Sure I’d miss things like yogurt, eggs, chicken, avocado, apples, kabocha, and broccoli (yes, I really would miss broccoli), but seeing as I can’t even remember the last time I went a day without eating every.single.one of the four foods I first mentioned, I think it’s safe to say that I’m kind of obsessed with them, and I’d like to take this opportunity to introduce you to the most recent love-child of that obsession…
Flourless Chocolate Chip Almond Butter Muffins — a bit of a mouthful, but a ridiculously delicious mouthful. Not only are these muffins gluten-free, sugar-free, dairy-free, and oil-free, but they may just be some of the softest and fluffiest muffins that I’ve ever eaten. You’d never be able to tell that they don’t contain an ounce of flour just by biting into one…
… and you’d be surprised to learn that they can be whipped up in a blender in under 30 seconds flat. That’s right — no flour means no need to baby the dough, and no need to baby the dough means you can just toss everything into a blender, flip the switch, and be guaranteed perfect muffins every.single.time.
The only thing easier than making these muffins is eating them, which isn’t a bad thing considering they’re made with the same wholesome ingredients that you find in a healthy breakfast. Egg, banana, oats, almond butter, and chocolate. Yes, chocolate… because what good is taking care of your body if you don’t take care of your mind? Luckily, these muffins allow you to do both 😀

PrintFlourless Chocolate Chip Almond Butter Muffins
- Total Time: 15 mins
- Yield: 9 muffins 1x
Ingredients
- 1/2 cup (128 g) almond butter (can use other nut butter as well)
- 1 medium ripe banana (100g or 1/2 cup)
- 1 large egg
- 1/4 cup (80 g) honey
- 1/2 cup (40 g) rolled oats
- 2 Tbsp (14 g) ground flaxseed
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 cup (60 g) mini chocolate chips, plus more for sprinkling
Instructions
- Preheat your oven to 375F (190C) and prepare a muffin pan by spraying 9 cavities with cooking spray. Set aside.
- Add all ingredients except for chocolate chips to a high-speed blender and blend on high until the oats are broken down and the batter is smooth and creamy. Stir in chocolate chips by hand.
- Pour the batter into your prepared muffin pan, filling each cavity until it is about 3/4 full.
- Bake for 10-12 minutes, until the tops of your muffins are set and a toothpick inserted into the middle comes out clean. Allow muffins to cool in pan for ~10 minutes before removing. Store in an air-tight container for up to a week.
- Prep Time: 5 mins
- Cook Time: 10 mins

These look amazing and chocolate all day everyday. If I had four foods they would probably be chocolate, french fries, oatmeal, and apples. I dont think you can combine that into a great meal but I’d be happy.

Question for you. As I peruse blog world, I see many recipes with “sugar free” in the title. But when I look at what is in the recipes, there is sugar in them. I mean, there is sugar in honey, bananas, and chocolate chips, right? Am I taking this too literally, as in, sugar free actually means “no added white sugar”? I am not trying to be contrary, I just want it clarified. (I have nothing against sugar. loooooove sugar! As you can see by my 4 foods to eat forever and ever!) Also, I am intrigued that this recipe can be made in the blender! If I had almond butter and hadn’t eaten the very last banana in the house, I would totally be making it. 🙂

Recipes labelled as sugar free usually just mean refined sugar free — so no white, brown, cane, etc. sugar. I don’t have anything against added sugar either, but I like to offer a good amount of variety in my recipes 🙂

I had always questioned this also. A teaspoon,of sugar has 15 calories and a teaspoon of honey has 21 calories. Honey contains fructose and glucose just like sugar does. Both raise blood sugar levels the same. I don’t mean to rain on anyone’s parade, just trying to understand. I do understand honey is natural and white sugar is refined; however from what I read in researching our bodies react the same in consuming either. I am changing my diet and eating more natural ingredients and going through a learning process here, so any information is appreciated.

You’re going to be proud/surprised of me.. I have been favoring AB over PB lately! So these muffins are the apple of my eye. Just sub in peanut butter to your list of foods in place of almond butter and we are exactly the same. Love recipes like this, very similar to the last snack muffin I made (I think) although I didn’t blend the ingredients and I think that’s a great idea for the texture. Need to try it.

Well, these muffins look like a little bit of heaven in my opinion! These would most definitely work as a perfect grab and go breakfast or snack for me. It amazes me that they don’t have any flour because they look so moist and fluffy.
Oh and a definitely YES to chocolate at breakfast!

These are my kind of muffins! Almond butter and I have been having an intense affair these past couple of weeks – and the fact that your ingredient list starts out with almond butter…ooh yum!
I seem to share your tastes, for the most part – oats, nutbutter and chocolate are my top three musts(very often the ingredients of just about every breakfast I have had), with broccoli being my forth – another blogger suggested roasting broccoli and WOW! Roasted broccoli is something fierce!

Seeing as I’ve been having chocolate for breakfast in the form of baked oatmeal for the past.. 5 days, I’m going to have to include it in my four (which I wouldn’t have if you asked me 2 weeks back)…chocolate, bananas, peanut butter and cereal. Or oats. Or cereal. Bahh both of ’em :p ! But what about my yogurt!? Yeesh four is a toughie.
I can tell these are going to become my crack once I get to making them!
