Today is a good day for two very simple reasons.
First, it’s Friday, which really needs no further explanation. Second, thanks to an awesome sale at my local health food store, I’m currently well stocked on my favourite Dagoba chocolate, which is extremely convenient seeing as I’ve been dealing with some serious chocolate cravings lately.
A few squares of chocolate or a handful of chocolate chips is usually enough to get the job done, but the other day I found myself with a pretty intense craving for chocolate cake. What’s a girl to do?!? I didn’t have the time or desire to whip up an entire chocolate cake from scratch, but my craving needed to be satisfied yesterday so I did what any chocolate-crazed person would do — I made myself a single slice of cakeβ¦ in a mug.
I’m pretty new to mug cakes. In fact, the one I tried from Becky the other day was the first one I ever had. I know, I know… I’m late to the party. But in my defence, I grew up without a microwave so the idea of cooking in one is pretty foreign to me. I have a feeling that I’ll be getting a lot more familiar with it though, seeing as it allows me to enjoy things like this in under 5 minutes…
Let’s just say it killed my craving for chocolate cake. But enough about me and my cravings — let’s talk cake.
A few notes about this one. First, it took me three tries and a handful of curse words to get it just right, which means that I probably would have saved myself the time and trouble if I had just baked an entire cake from the start. Whatever — it’ll be worth it in the long run. This recipe’s a keeper.
Second, I know the recipe says that chocolate chips are optional, but they’re really not.
Third, it’s super quick and easy. You only need to dirty up one dish (and one spoon/fork) and you can enjoy a serving of chocolate cake in under 5 minutes.
Fourth, despite the fact that I call it chocolate cake, it’s actually pretty healthy (but shhhh… don’t tell). The protein and fat from the egg and the fibre from the coconut flour make for a balanced snack that’s perfect for when that afternoon slump hits. And no crazy sugar highs or lows — I promise.

PrintDouble Chocolate Mug Cake
- Total Time: 7 mins
- Yield: 1 mug cake 1x
Ingredients
- 2 Tbsp. coconut flour
- 1 Tbsp. unsweetened cocoa powder
- 1/4 tsp. baking powder
- 1 Tbsp. sweetener (honey, maple syrup, cane sugar, etc.)
- 1/4 cup of milk (any kind will do)
- 1 egg
- Optional: 1 heaping Tbsp. chocolate chips
Instructions
- Add coconut flour, cocoa powder, and baking powder to a microwave-safe mug or bowl. Stir until well combined.
- Add sweetener of choice and milk, stirring until no clumps remain before adding in your egg. Use a fork or whisk to beat the egg into the batter, making sure that it is fully incorporated. Fold in chocolate chips, reserving a few to sprinkle on the top.
- Microwave on high for 2 1/2 to 3 minutes, depending on microwave strength and thickness of mug.
- Remove from microwave, grab a spoon, and enjoy!
- Prep Time: 5 mins
- Cook Time: 2 mins
The texture of this mug cake is a little hard to describe. It’s dense enough to make you feel like you’re really sinking your teeth into something, yet incredibly light and moist at the same time — I credit the coconut flour for that one. I was a little hesitant to work with coconut flour since I’ve had some pretty bad flops with it in the past, but I really loved how it worked in Becky’s recipe and I wanted to use it in my own as well. It took me three tries to get the liquid to flour ratio right, but it was more than worth it.

I just made this as part of my lunch and it is soooo good. Love the chocolate + coconut combo. Instead of chocolate chips I added SF Caramel Syrup. I am in heaven. I really love the texture.

I’ve never had a mug cake. They usually don’t really appeal to me, but I’d be lying if I said that this one didn’t pique my interest. It sounds super easy, and I like all the ingredients, although I only have white chocolate chips on hand. Hmmm, that could be interesting. Guess I’ll be trying a mug cake soon.

This cake looks amazing! And it does sound surprisingly healthy. I’ve been on a hunt for a delicious and nutritious mug cake to curb my chocolate cravings so I’m so happy you posted this. Most of the ones I tried out ended up being too dry but this looks moist and delicious.

To answer your question about the microwave, yes, I use mine a lot. For about a year I didn’t use it ever. But the only way I have time now to cook my food is if I use a microwave. There is a kitchen upstairs but cooking my vegetables would take about 20 minutes on the stove each time…. 3 times a day. I would never be able to eat! I’d love to be able to go back to not using it eventually though.
I think that sometimes breads taste better in the microwave though. They get even more fluffy! π

I use my microwave to reheat my coffee or heat up water but I have yet to use it to cook – and I have never made or had a mug cake before! In fact I have yet to try Dagoba chocolates too…dang…I am feeling a little behind!
Have you had IKEA chocolates? They so do not fall in the organic or healthy category but they are so so good!

Yum! This looks so good! I’ve actually just finished eating some “Reese’s Oats” – basically chocolate oats baked and stuffed with a gooey peanut butter centre.
I’m a bit of a chocoholic – especially lately – so I get my chocolate fix any way I can and the darker the better!
I use my microwave mainly for reheating things as I freeze EVERYTHING – bread, muffins, cakes etc (being gluten free you have to unless you can eat fast :P) but I don’t usually cook too much in it as my microwave is horrible. It’s a weird oven/microwave mix that doesn’t spin so it doesn’t cook evenly (this is why you don’t let men make kitchen appliance purchases :P).
And I really need to get myself some coconut flour!

I definitely know you can make mug cakes with regular flour, but I’m not sure what the proportions would be like in that case. I’ve heard that using an egg can often make them too spongy, and that a couple teaspoons of oil are usually needed. Something that I’ll need to experiment with more π

Heya gorgeous- just wondering if you ever bake non healthy things sometimes too- because I would love to see them as well if you do! π I have found I really appreciate a nice old fashioned dessert these days and am actually more drawn to them π they also satisfy that my sweet tooth better and leave me feeling more whole – that just my expierience I know we are all different ( I really felt like adding unique butterflies lol- I’m off with the fairies today) but a traditional dessert can be marvellous and I actually have one every day- ever since I spent a year in France where they do every day too.

Dagoba = love. I have actually been using my microwave less and less lately, but have been a fan of microwave muffins/cakes for years so I am a dedicated fan. Coconut flour is one of my favorites to use for them, too.

I don’t use my microwave to cook a lot, usually just to heat things up or to boil water or to cook sweet potatoes when I don’t have 30 minutes to wait for them to cook in the oven. But I do love mug cakes, because I am not the most successful baker, which I blame on the altitude. I can never get the texture or consistency of baked goods right, even with adjustments for high altitude, so my stuff usually ends up flat, which isn’t ideal for a cake. That’s why I love quick and easy recipes for mug cakes and raw desserts, where it’s hard to screw up!

So looks like you’ve found a marvellous use of your apartments microwave, I don’t use mine often. But I do have a favourite mug cake recipe, it uses: egg whites, coconut flour, pumpkin, CREAM CHEESE & ALMOND BUTTER. Seriously, so good.

I love mugcakes and ones with chocolate- even better! I remember when I first started making them there was a VERY fine line between a perfect mug cake VS a hockey puck VS a rubber ducky. Spot on- using coconut flour in it gives it this texture there is no definition for!
I THINK they have just brought out Dagoba chocolate in our health food stores…might have to test them out!

Mug cakes are definitely tricky business…one minor ingredient change or omission can land you sinking your teeth into a SPONGE! π― Good job sticking with it after three tries…I probably would’ve given up after two! ha! And I think you described the texture with the coconut flour perfectly…I love how it gives things that dense cake-like texture without being heavy. That’s why I add a little to almost all of my pancake recipes!
I use my microwave quite a bit…warming water for tea, my coffee when I get a moment of ADD, forget about it and let it get cold, and for oats! I cook almost all my oats in the microwave UNLESS I’m adding eggs/egg whites…because I think the consistency they get in the microwave is disgusting! And since I’ve actually been craving chocolate these days, I’ve been enjoying it in bars mostly but with the occasional cookie too! Gotta love a good chewy chocolate chip! π
