Today is a good day for two very simple reasons.
First, it’s Friday, which really needs no further explanation. Second, thanks to an awesome sale at my local health food store, I’m currently well stocked on my favourite Dagoba chocolate, which is extremely convenient seeing as I’ve been dealing with some serious chocolate cravings lately.
A few squares of chocolate or a handful of chocolate chips is usually enough to get the job done, but the other day I found myself with a pretty intense craving for chocolate cake. What’s a girl to do?!? I didn’t have the time or desire to whip up an entire chocolate cake from scratch, but my craving needed to be satisfied yesterday so I did what any chocolate-crazed person would do — I made myself a single slice of cake… in a mug.
I’m pretty new to mug cakes. In fact, the one I tried from Becky the other day was the first one I ever had. I know, I know… I’m late to the party. But in my defence, I grew up without a microwave so the idea of cooking in one is pretty foreign to me. I have a feeling that I’ll be getting a lot more familiar with it though, seeing as it allows me to enjoy things like this in under 5 minutes…
Let’s just say it killed my craving for chocolate cake. But enough about me and my cravings — let’s talk cake.
A few notes about this one. First, it took me three tries and a handful of curse words to get it just right, which means that I probably would have saved myself the time and trouble if I had just baked an entire cake from the start. Whatever — it’ll be worth it in the long run. This recipe’s a keeper.
Second, I know the recipe says that chocolate chips are optional, but they’re really not.
Third, it’s super quick and easy. You only need to dirty up one dish (and one spoon/fork) and you can enjoy a serving of chocolate cake in under 5 minutes.
Fourth, despite the fact that I call it chocolate cake, it’s actually pretty healthy (but shhhh… don’t tell). The protein and fat from the egg and the fibre from the coconut flour make for a balanced snack that’s perfect for when that afternoon slump hits. And no crazy sugar highs or lows — I promise.
Fifth… alright, alright, enough rambling. Here’s the recipe!

- Remove from microwave, grab a spoon, and enjoy!
- Prep Time: 5 mins
- Cook Time: 2 mins
The texture of this mug cake is a little hard to describe. It’s dense enough to make you feel like you’re really sinking your teeth into something, yet incredibly light and moist at the same time — I credit the coconut flour for that one. I was a little hesitant to work with coconut flour since I’ve had some pretty bad flops with it in the past, but I really loved how it worked in Becky’s recipe and I wanted to use it in my own as well. It took me three tries to get the liquid to flour ratio right, but it was more than worth it.
Chelsea @ Chelsea's Healthy Kitchen
Ooh yes I am so excited for this! I’ve had so many flops with coconut flour and mug cakes, but this one looks awesome and I trust your recipes. 😉
I always have chocolate bars to satisfy my chocolate cravings. And cocoa powder. Today I’ve already had a few squares of chocolate and a smoothie with cocoa powder in it. I usually need multiple chocolate fixes per day haha.
Ellie
If I’m craving cake I go and get a real white flour butter sugar chocolate cake and have a slice- it just seems to help the most lol 🙂 the substitutions just don’t truly cut it since I started having old fashioned cake again 🙂 it actually is my favourite chocolate fix 🙂 oh actually a warm brownie with coffee or vanilla ice cream is also high up there! Do you like brownies? 🙂 Have a great weekend Amanda – I’d love a following you around on a Saturday or Sunday post like you did the other day- it was so lovely to “spend” time with you lol 🙂
Amanda @ .running with spoons.
I’ll definitely be doing another one, Ellie! And I agree about real chocolate cake — sometimes there just isn’t enough time to make one, though, and my allergies kind of limit where I can buy cake 🙁
Amy@Long Drive Journey
Okay, this looks delicious. I really did make a mug cookie for dessert last night, and I wanted to give you a shoutout on IG, which reminds me that I need to go follow you when I finish typing this. What I like about this one is that there are JUST enough chocolate chips to make this chocolately but not overwhelming. I get annoying by too many chips. I used whole wheat flour in mine, which tasted fine, but I’m curious about the coconut flour. I’ll have to try that next!
Miss Polkadot
Mug cakes are awesome! My favourite is still the PB chocolate one I’ve been making for ages but I think I should try more variations. Yours sounds wonderful, too. As do those Dagoba chocolate flavours … Which one is your favourite? The Xocolatl sounds right up my alley.
Oh, and yes, I’m definitely a microwave person. Not so much in terms of cooking in it – aside from mug cakes and the occasional kabocha snack [thanks to Kaila for letting me know] – but I don’t think there’s a better way to reheat tea or dishes like casseroles or pizza. They just take aaaages to reheat in the oven and even then aren’t as hot as I’d like them to be. First world problems …
Maybe it’s funny but I was surprised when you posted the mug cake on Wednesday already because I knew you’d mentioned you didn’t like microwaves so I assumed you wouldn’t have one :).
Happy Friday!
Amanda @ .running with spoons.
I’d have to say that the lemon ginger is my favourite, but it really depends on what I’m in the mood for — I love them all 😀 And the microwave definitely still freaks me out… I don’t think I’ll ever get to a point where I’m comfortable using it on a regular basis, and I like my leftovers cold anyways 😉
Kim @ Hungry Healthy Girl
Coconut flour is definitely a little tricky to work with, but it looks like you got it just right!! Pinning this and I can’t wait to give it a try!
Heather Murphy
Holy yummy! This looks delicious. I haven’t tried mug cakes either, but I don’t have a microwave! I know it’s weird, but ours broke and we haven’t even taken the time to get a new one- it’s been a year! This is definitely an incentive to get a new one. 🙂
Maria @ Pappa Don't Preach
Sounds amazing! Easy, quick and chocolate. Yes please!!! 🙂
Ang @ Nutty for Life
Ohhh ho ho yeah. That’s the stuff. I don’t have much experience with mug cakes either, but I might be popping this one in the mirco tonight or tomorrow for dessert!
Hannah @ CleanEatingVeggieGirl
In my book, the chocolate chips are definitely not optional! 😉
Lucie@FitSwissChick
I only use a microwave since one freaking year!! And it still freaks me out a bit.
But this?? I will make every day for the rest of my life I think. Geeez, yum.
Amanda @ .running with spoons.
Confession: it still kind of freaks me out as well… I ‘m not sure I could ever use it on a regular basis.
Marina
It is a pity that I do not have coconut flour to make it. And the microwave too. 😉 I just feel like I’ll never be able to enjoy this … But I can still enjoy thy food porn photos. As far as this is equivalent to replacing? In any case, happy holidays, Amanda!
Lauren
I love any recipe which is convenient or delicious, so this is a win in my book. I’m glad you took one for the team and battled it out three different times for all of us. More reasons to love ya! 🙂
I use my microwave A LOT since it tends to make my oats a thick and chewy consistency rather than burnt and watery on the stovetop. We’ve become pretty close knit friends, my microwave and I. 😉
I always love straight up chocolate, but any type of cookie/cake with chocolate is never a bad thing either!
Laura Agar Wilson (@lauraagarwilson)
That looks delicious! Nothing like being able to get your chocolate and cake fix in one quick package!
ari @ whatarisaid
Healthy? And chocolate? Sold, I need to try this stat! Thanks for sharing the recipe!
Ari @ Ari's Menu
Would you believe it if I told you I have NEVER had a mug cake? In fact, I kind of judged the whole idea. However, yours really does look delicious, and it just might make me a believer! I love that it’s all real ingredients, and normal things that people have around the house. Too often I see a recipe for “chocolate cake” that has like chocolate protein powder and “healthy” products with unpronounceable names. The pictures drew me in, but the ingredients are what made me a believer! 🙂
Amanda @ .running with spoons.
I shrugged them off for the longest time as well, but now I’m kind of kicking myself for not trying one sooner! They may not be for everyone, but you never know until you try 🙂
Carly @ Snack Therapy
I went though a bit of a mug cake/cookie phase, but I gave up on it once I realized that most of the cakes end up dry. This one, however? Looks chocolately and delicious.
I’m usually not a huge sweets person, but there are about 3 days per month when I NEED sweets, especially chocolate. I have a bag of chocolate chips in my pantry for those occasions. Very fancy ;).
Sarah @ Making Thyme for Health
I’ve never had a mug cake either! But you’re pretty much sealing the deal with this recipe. I’ll have to try it soon, for sure!
My chocolate fix is usually a cookie from my freezer that I made forever ago or a piece of dark chocolate that I keep stocked on the counter.
Emily @ More Than Just Dessert
I love how easy and simple mug cakes are! This one looks deelish 🙂
Erin @ The Almond Eater
Mug cakes are the bessssst and I love that this one has few ingredients 🙂 Seriously delicious and they are my go-to when I’m craving more than a piece of chocolate. Happy Friday, lady!
Sam @ Better With Sprinkles
mmmm chocolate. I’m usually a chocolate bar sort of person for my chocolate fix, but once in a while you need a good slice of chocolate cake…or a good mug, in this case? I’ve never tried dagoba brand before though, I should pick it up, considering that I just exhausted my chocolate bar stash.
And any recipe that says that chocolate chips are optional…they’re not optional. Just sayin’ 😉
Amanda @ .running with spoons.
Dagoba is good stuff! And extra points for being allergy-friendly 😉
Lisa C.
How funny! I ate a chocolate mug cake for breakfast this morning! I added oats and peanut butter to the CCK mug cake. A great way to start the day. 🙂
Have a great weekend, Amanda!
meredith @ The Cookie ChRUNicles
I sometimes get extreme chocolate cravings. Not just the daily I want my dessert now, the kind where you need serious chocolate. When that happens, I usually just go straight for my chocolate chips stash. And, I don’t limit myself. The worst thing for me to do would be to just take a handful when those cravings hit. I think that the idea of “just a handful” would only make me want more so, I take out the container and eat until content. It doesn’t happen every day, I finish feeling satisfied, and sometimes too full but it works for me….I am going to try out this recipe, but probably add peanut butter because it is what I do lol. I was thinking this morning to make a similar cake type thing. How funny.
D @ The Kosher Cave Girl
Oh, yum! I’m definitely going to be making this with coconut milk. Mug cakes are the bomb.com in my book!
Brittany @ Delights and Delectables
YUM!! I use my microwave for muffins all the time! I will have to try this! xoxo
Caitlin
Omg yes!! I tried to make a mug cake last night but the amount of baking soda in Becky’s kind of threw me off. I could taste it even after it was cooked and i couldn’t finish it. I don’t have coconut flour, but I can experiment with what I do to give this a try! Have a great weekend girl and thanks for posting exactly what i was craving yet again 😉
Jess(ica) @CookingIsMySport
Whenever I cook, I always make huge batches to last me through the week, so I use my microwave quite a bit to heat up the leftovers or to thaw veggies for a quick side dish or something like that. Radiation-Schmadiation, right? 😉
Whenever I get a chocolate craving, there are two things that can satisfy it: a Snickers bar, or a plain old, chewy chocolate brownie. Either will do. I’m not the biggest fan of chocolate cake, but I do love yellow cake with chocolate frosting.
Your chocolate mug cake does look good though. Mug cake is something I’ve been seeing a lot of on food blogs that I still haven’t gotten around to trying yet- your photos always make me wanna change my mind though!
Happy Friday Amanda <3
Amanda @ .running with spoons.
I put off trying them for the longest time as well (as I do with most things), but they’re actually really good and I’m sorry I didn’t jump on them sooner!
Alex @ Kenzie Life
I love mug cakes! I’ll definitely be trying this one! I’ve made several of (Chocolate Covered) Katie’s cakes and they’ve all turned out so well for me. I tweaked her recipe a little and also made peanut butter banana soft serve to go with them for a gathering of friends one time. I was popular that night 🙂
Jo @ Living Mint Green
Yay coconut flour!!!! Adding this to my list of things to make soon. I’m in a serious food rut. 🙁
I’ve been eating chocolate since 4:30am. Giddy yo yo & Camino – with almonds. SO GOOD.
Heather @fitncookies
Ah you had me except for coconut flakes and coconut flour. I don’t like coconut, lol. Think there are any replacements 😉 This looks amazing, though!!
Holly @ EatGreatBEGreat
Ooooh…love this! I’ve tried a couple of different mug cake recipes and I actually wasn’t a fan. They kind of turned out very dry. Yours look so moist and so deeelicious! I think I’ll be making this for Justin and I tonight for dessert. Can’t wait!!!
Christine @ Gotta Eat Green
Love that you are all about the mug cakes now! They are so easy and the perfect size. We barely ever use our microwave.. I’d actually prefer not to have one but Grant insists!
Liz S.
GENIUS. Love this chocolate mug cake recipe. Chocolate in almost any form is fine by me.
Unlike my mistake yesterday, today I can say happy Friday 😀
Amanda @ .running with spoons.
I’m afraid I’m going to have to say happy Saturday 😉
Melissa
Yum! This definitely looks like the ideal snack and a great way to have chocolate! To answer your question, yes, I do tend to use my microwave quite frequently to heat-up frozen veggies, etc.
Parita @ myinnershakti
These kinds of treats are mine and Vishnu’s favorites! So easy to make, no mess, and delicious. Can’t wait to try!
Lisa
This looks like absolute perfection.
I love mug cakes so much. They may be my favourite thing to Snack on at night (besides cereal of course).
And that chocolate is seriously one of the best around. I love it.
Happy Friday<3
Davida @ The Healthy Maven
I honestly dont know how people survive without microwaves. I said that to my Mom once and she was like “you realize microwaves are a relatively new invention right?” Fail. These mug cake looks AMAZING. It just needs a dollop of peanut butter…or almond butter just for you 🙂 Have a great weekend my dear!
Amy @ The Little Honey Bee
This looks amazing! I love the combo (obvs) and I am definitely a mug cake fan. They are super easy but often if I just wing it the consistency isn’t quite right. Glad I have a recipe to follow now 🙂
Hollie
I’ve seen these mug cakes around the internet a lot but in all honesty, I’ve never been able to perfect it like a lot of people. Yours look super good though!
I don’t use the microwave a lot actually. I don’t care for left overs so I’m constantly just cooking single serving foods. (well double now with Tim). I have the time now but I’m sure eventually I won’t.
Amanda @ .running with spoons.
I just eat my leftovers cold 😆
Becky @ Olives n Wine
I’m so happy I introduced you to the land of mug cakes 🙂 Once you go there, it’s hard to go back to the regular cake kind! And I’m loving this chocolate on chocolate on chocolate version – genius I tell ya and PERFECT for a Friday!
Jessie
Confession: I skipped right to the recipe. I’m sorry but I couldn’t contain my excitement. I think adding in some of Barney Butter Cocoa & Coconut AB would take it to a whole new level What ya think?
lindsay
ohh i like your thinking Kessie! or the esspresso almond butter. Okay, i’m getting carried away here!
Amanda @ .running with spoons.
I think that’s a pretty brilliant idea. I definitely see a lot of mug cakes in my future, so I’ll be putting that to the taste test 😀
