These quick and easy sugar cookies are spiked with an extra dose of cinnamon sugar and rolled up to make cinnamon roll sugar cookies! Crispy on the outside and softer towards the middle, they may look fancy and complicated but they’re super simple to make!
A recipe on a Monday? Whaaaaaat?
I know it’s been a while since I opened up the week with a recipe post, but I’m going to try switching up my posting schedule a little so that I can start doing What I Ate Wednesdays more often since you guys really seem to like those. And by “switching up my posting schedule” I really just mean swapping Mondays and Wednesdays… so Mondays and Fridays will be for recipes, Wednesdays will be for WIAW or other random posts, Thursdays will be for Thinking Out Loud, and Sundays will be for Link Love.
Sound good? Good. Now let’s talk about the really good stuff…
Cinnamon roll sugar cookies. Oh.my.GAWL.
I probably should have posted these before Easter, but I was planning on surprising my mom with a batch for her birthday (with cake, don’t worry), and I couldn’t exactly plaster them all over Spoons before then since she’s kind of my #1 reader (hi, Mom!).
But you don’t need a holiday or special occasion to whip up a batch of these cookies — you just need about 30 minutes and a craving for something sweet and cinnamony…
I know these might look like they take a tonne of time and effort to make, but that couldn’t be further from the truth.
I mean, you know me… right? As much as I love to bake, I prefer it when the whole process is quick and easy. And as much as I love cinnamon rolls, I’m not the biggest fan of making them — especially since working with yeast kind of intimidates me. That and all the kneading, mixing, waiting, rolling… no. Just no. Maybe one day I’ll feel up for tackling that world, but for now I’ll stick with store-bought cinnamon rolls and homemade cinnamon roll cookies…
These cookies don’t require any mixers, any fancy ingredients, or any special treatment. The dough is really easy to work with, so you’ll get perfectly shaped cookies on your first try. Promise. My first batch came out looking perfect, and I didn’t really know what I was doing… all I knew was that I wanted cinnamon roll sugar cookies that didn’t require any yeast, chilling, flattening, and/or rolling. I mean, I do include a suggestion to chill the dough, but that’s mostly to make it basically foolproof. I made one batch without chilling the dough first and had no problems working with it. It’s that simple.
And while these cookies may not be the same as biting into a fresh cinnamon roll, they’re just as good in a different kind of way.
They’re denser and chewier, being slightly firmer on the outside and softer towards the centre. The flavour is that of a classic sugar cookie, made better with an extra dose of cinnamon sugar. And the best part is that they look all fancy and complicated, so you can impress people with your #madskillz while secretly marvelling at how easy it was to make them.
And now that I’ve rambled on for way too long, I’ll end it here by saying that my family loved them and I hope you will too!
Iβd love to know if you make this recipe! Leave a comment and rating down below to let me know what you think, andΒ subscribeΒ toΒ our mailing list to receive new recipes in your inbox!
PrintCinnamon Roll Sugar Cookies
- Total Time: 30 mins
- Yield: 12 cookies 1x
Ingredients
For the cookies:
- 1 cup all-purpose flour
- 1/2 tsp. baking powder
- 1 tsp. ground cinnamon
- 1 egg, room temperature
- 1/4 cup cane sugar
- 2 Tbsp. coconut oil, melted
- 1 tsp. vanilla extract
For the coating:
- 1/4 cup cane sugar
- 1 tsp. cinnamon
For the glaze:
- 1/2 cup powdered sugar
- 1 Tbsp. vanilla almond milk
Instructions
- In a large mixing bowl, combine flour, baking powder, and cinnamon. Set aside.
- In a medium-sized mixing bowl, whisk together egg, sugar, coconut oil, and vanilla extract, mixing until fully combined. Add wet ingredients to dry ingredients, mixing well until a soft dough is formed. Place bowl in fridge and chill for 20-30 minutes.*
- Preheat oven to 350ΒΊF and line a large baking sheet with parchment paper or a non-stick baking mat. Set aside. Line your working surface with a medium-sized sheet of parchment paper and combine the cinnamon and sugar in a shallow bowl.
- Scoop out spoonfuls of dough (about 1 Tbsp.) and roll them on the parchment paper until they’re roughly the size of a pencil – about 1/4 inch in diameter and 6 inches long. Transfer the dough to the bowl with the cinnamon sugar, and roll until fully coated before rolling up into a spiral shape, slightly pinching the end. Place on baking sheet and repeat until all the dough has been used up.
- Bake 10 minutes, until edges begin to turn golden brown and cookies have firmed up. Allow to cool on baking sheet before drizzling with glaze.
- For the glaze: combine powdered sugar and almond milk in a small bowl. If the glaze is too thick, add a splash of milk. If the glaze is too thin, add more sugar. When you reach your desired consistency, use a spoon to drizzle glaze over the cookies and allow to set before serving.
Notes
* Refrigeration isn’t -absolutely- necessary, and you could probably get by without it if you’re short on time. It just makes the cookies slightly easier to shape.
- Prep Time: 20 mins
- Cook Time: 10 mins

It’s been forever and a day since I’ve commented! Spoons doesn’t seem to like my computer; it always crashes and freezes up all of my other sites. Is it too awesome for it’s own good? I think so.
And these cinnamon roll cookies look way to tasty for MY own good. Gonna hafta make them since I have all of the ingredients in my starving college pantry (minus the sugar, but that’s an easy fix).
And Play-Doh as a kid? Hell, I’m at a prestigious ART COLLEGE and I still play with Play-Doh and Model Magic! Ain’t nothin’ stopping this gal from colorful, flour goop hands.
Amanda @ .running with spoons.
Ack! Sorry about that, Eva. I actually have no idea what might be causing that issue, but a few other people have mentioned having problems with ads, so I’m going to have to try and figure out what the heck is going on…
EVA
Oh no, say it ain’t so! Your site works fine on my phone though. Maybe it’s just Apple products; then again, I never had such good luck with them….
Arman @ thebigmansworld
We need to make these cookies and stuff them in an actual cinnamon roll….and follow that by adding more cinnamon.
Julia @ Lord Still Loves Me
Thank you for making my mouth drool. I love how simple they are as well! You said it yourself: looks complicated but is easy- that is my kind of recipe! Also, I have followed you for quite some time, and I have to say, your photography seems to get better and better by the month! You rock Amanda!
Amanda @ .running with spoons.
Aww thanks so much, Julia π That means a lot!
Alicia
These look so good. Delicious wish I had had this recipe over the weekend when I was eating cinnamon rolls. Oh well, maybe I will make them for myself for my birthday but also planning to make your chocolate chip skillet cookie (I’ve made it twice already and prefer cookies to cakes so it’s perfect).
Emma @ Life's A Runner
YUM! Cinnamon rolls feel so decadent to me because I probably have them 1-2x per year, MAX. It’s not intentional, I just always end up gravitating towards ice cream & cookies. Not such a tough problem to have….but these should rectify it! π
Chelsea @ Chelsea's Healthy Kitchen
My GOSH these look good! I’ve never made cinnamon rolls myself, but my sister did for Christmas breakfast and they were spectacular. I gotta say though, I like the idea of this easier version. π
Sara
These cookies look amazing! I’ve pinned the recipe, I’m going to have to give them a try for sure!
Amanda @ .running with spoons.
Thanks so much, Sara! Hope you like them π
Erin @ Erin's Inside Job
These look great. Even though I just ate a snack they made me hungrier. Now to raid my kitchen…
Amanda @ .running with spoons.
The dangers of reading food blogs, eh? π I hear that…
Medha @ Whisk & Shout
These look so so good! Love that they are not only flavored liek cinnamon rolls, but also shaped like them π So cute!
Kate @ Framed Cooks
These. Look. AMAZING!! The happy union of cookie and cinnamon roll, two of my favorite food groups! Perfect for a Monday. π
Katy
These look amazing. I have everything except coconut oil…anything else I could use besides the coconut oil?
Can’t wait to try them.
Amanda @ .running with spoons.
You could easily sub in a light-tasting vegetable oil, Katy! Even a few tablespoons of softened butter would work.
Katy
Awesome! Thanks so much. I actually went and got the coconut oil. They are so yummy! Mine aren’t as pretty looking as yours (mine look like a “present” my cat would leave me) but they taste great. Thanks for the recipe. Will defiantly make again.
Ashley @ My Food N Fitness Diaries
Oh wow, yummy! Can’t beat that cinnamon-sugar combo! These are so CUTE too!
Megan @ Skinny Fitalicious
These looks dreamy! I’ll have 2 dozen please.
Laur
I think these sugar cookies are trying to mesmerize me into making them. Those spirals!!! Lol I am afraid to bake with yeast, too! I STILL haven’t conquered it because I am so afraid something doesn’t rise! EEP! These look SO cute. And yes, I loved playdough… And mud… And mud puddles. Hahaha
Hollie
These look fabulous and something would love to stick my face into right now LOL.
Miss Polkadot
Luring me in with both the idea of fuss-free cinnamon rolls and Play-Doh (I miss it – no shame π ) I feel a huge urge to try these. Despite the fact I’ve never had an American-style cinnamon roll – but Swedish kanelbullar – these look amazing and crave-able. Another good one from your kitchen. And happy belated birthday to your mum!
Amanda @ .running with spoons.
I just Googled Swedish kanelbullar, and now I seriously want one! Food in Europe is always so much better than it is here… even if it’s the same recipe π₯
Jess @hellotofit
YUM! I’m with ya – I don’t always want to spend the time to make homemade cinnamon rolls. These look amazing!
Christine@ Apple of My Eye
Okay okay okay. DYING OVER THESE. I’m reading this post from my kitchen table and all my housemates have been crowding around my laptop and ooing and aahhing over these ;). That drizzled glaze is making me swwwoooooooon <3
Mandie | Mandie's Kitchen
Ooh Amanda, these look divine! I’ve wanted to make cinnamon roll cookies for quite some time now, and it looks like your recipe just made the top of my list! These are SO pretty, and I bet they taste wonderful! Pinned!
Amanda @ .running with spoons.
Thanks so much, Mandie!
Hannah @ CleanEatingVeggieGirl
These just may be the cutest cookies I have ever seen. I love these π
Sarah @ Making Thyme for Health
Oh my, these are too freakin’ cute for words! They would be perfect to bring to a party or a baby shower. Or to make just ‘cuz because they look absolutely delicious. I’m kind of wishing I was momma spoons right now so I could have had some of these (and cake!) yesterday.
Alison
Amanda, I love you! π I can’t wait to try these. Cinnamon rolls can be daunting to make, but these look so easy and yummy.
Amanda @ .running with spoons.
Oh believe me, girl — I definitely know what you mean. I made cinnamon rolls from scratch -once,- and it was a little more stressful than it was worth π
Leslie
These are so cute, they look like cinnamon rolls! Yum!
Erin @ The Almond Eater
I love these!! I love anything cinnamon, and I especially love these because they literally look like little cute cinnamon rolls (I know that’s the point). Happy belted to your mama!
Tina Muir
OH MY gaaasshhhh! This sound incredible! You are a meanie for posting these….I am mad at you. I am trying to eat healthyyyy and cut out the sugars as much as possible for the next 3 weeks before londonnnnnn. Okay, I am sorry, I am not really mad, I still love you π Will you join us for meatless monday with these please? Share the love π
Suzy
I loved playing with playdough but my mom was so anti-mess that we didn’t have it at home; I’d play with it at school. With my own kids though, I make homemade playdough. It’s super easy and I love the consistency way more, aaaaaand because kids eat everything, I don’t worry so much when they break off a bit and eat it. YUCK. These cookies look fantastic, and it makes complete sense to me to eat these for breakfast (as if I needed permission…ha!).
Amanda @ .running with spoons.
I think my mom was worried about me eating play-doh as well… which is why she always let me steal a chunk of dough to play with when she was making things like bread or pierogies
Alyssa @ Renaissancerunnergirl
Oh, these look mouthwatering…trying some with GF flour soon. I’ve been in the mood for cinnamon lately (hence my latest snickerdoodle oatmeal concoction) so these will hit the spot!
Tiff
These are almost too adorable to eat.
Amanda @ .running with spoons.
Key word: almost π
Heather @Fit n Cookies
Oh my gosh. You had me at cinnamon roll. In fact, I made cinnamon rolls this weekend. They were delicious but these cookies look like they’d be less hassle and just as good. Adding these to the make list now!
Amanda @ .running with spoons.
Trade you two cookies for a cinnamon bun. Maybe even 3. I’m not sure that the cookie to bun exchange rate is π
meredith @ The Cookie ChRUNicles
I loved Play Doh as a kid and so did my son! We still have a TON of Play Doh in the house because I can’t get rid of it and I like to think he will want to play with it again one of these days.
Susie @ SuzLyfe
Duh, playdoh and legos and kinex because that’s how it was done when we were kids, lol. None of this iphone stuff. I think if you covered my arm in cinnamon sugar and icing I would eat it. Wouldn’t taste as good, but it would be interesting to try.
Amanda @ .running with spoons.
Legos were probably one of my favourite toys of all time. I think I still have my collection lying around in my parents’ basement somewhere. And because I’m kind of squeamish, I think I’ll refrain from covering your arms in cinnamon sugar. Have a cookie instead *hands you cookie*
lindsay
i knew this would turn out good! swooooon…. droooool…. want!
Jen @ Bagels to Broccoli
Yummmm – I’m not a fan of sugar cookies normally, but tack on “cinnamon roll” to something and I’m SOLD.
Khushboo
The dairy-free eater in me loves that you used coconut oil instead of butter in these bad boys! Honestly though Amanda, you didn’t need to write a blog post for this- the pictures alone do enough talking *SWOOOOOON*! I bet the cookies without the glaze would be fab too…you know, in case you are feeling extra lazy and want to skip a step ;)!
Amanda @ .running with spoons.
I can’t even tell you how many times I’ve just wanted to be like: “Voila!” –> PIC, PIC, PIC, PIC, RECIPE. Sadly, blogging doesn’t work that way π
Liz @ I Heart Vegetables
These look so good, Amanda! I haven’t made “real” cinnamon rolls for the same reason (why is yeast so scary!?) haha so these look perfect!
Michele @ paleorunningmomma
I made cinnamon rolls once and it was a HUGE project, as you know, it kind of scared me away from ever doing it again. This looks like a really fun alternative though, and as always you make them look out of this world! I think most can agree foolproof is where it’s at in the kitchen, and especially baking!
Amanda @ .running with spoons.
I only did it once, too! And that was more than enough for me. I liked the result, but I’m just not sure the effort and stress are worth it π
Shashi at RunninSrilankan
First, these are just so adorable! ADORABLE! Cookies in the shape of a cinnamon bun – fantastic idea!
Second, you mentioned making these and a cake for your mom – did you pile these on top of said cake? Oooh now that would have been a dessert lovers dream! π
Amanda @ .running with spoons.
That would have been epic! But no, sadly… we had them both separately. The cake was chocolate, so I’m not sure how that would have gone down anyways π
Kelly @ Kelly Runs For Food
These look incredible! They’re also very pretty to look at. I’ve never made homemade cinnamon rolls, unless you count the kind in the tube from Pillsbury haha.
Amanda @ .running with spoons.
I only made some -once,- and it was so stressful that I never bothered to make them again π
Shannon
Why is everything you make so pretty? It kills me!! These look amazingly good.
Amanda @ .running with spoons.
Thanks, Shannon! <3
