Cookies for breakfast! Oh yes you CAN with these deliciously healthy blueberry banana oatmeal cookies. They’re super easy to whip up and even easier to devour with tonnes of blueberry flavour in each bite.
It feels so good to be back!
But Amanda, you’re thinking… you didn’t even go anywhere.
Well, no. I didn’t (thanks for rubbing it in, by the way), but it feels good to be posting on a Saturday again after taking 2 weekends off to accommodate holidays and a massive recipe fail. I’m still working on rectifying the latter, by the way. Delayed victories are coming. Eventually. Either that or I’ll just never mention it again and hope you guys forget 😉
But it really does feel good to be back on track. I’m not super militant when it comes to schedules, and I’m not really bothered by spontaneity when it comes up, but when left to my own devices? I’ll pretty much stick to a routine that you can set your watch to… if you don’t mind your watch randomly resetting itself and running on a different clock sometimes.
I can’t help it, though – it’s the “J” part of my INFJ personality. And while I don’t typically put a lot of weight on those kind of tests, that one has me figured out pretty well.
It’s kind of creepy, actually…
But that’s neither here nor there. You guys came here for cookies, and cookies you shall receive. Blueberry banana oatmeal cookies, to be exact…
… which I just ate 3 of. For testing purposes, obviously.
See, I always like to make a recipe multiple times, even if it comes out well the first time. I’ll make slight changes, like varying up the sweetener or the amount of flour, and then give you guys the version that was the best received.
That would be Trial #2 for these guys. Less flour + a little extra coconut oil + coconut sugar as a sweetener = a super soft breakfast-type cookie with a crazy amount of blueberry flavour in each bite. Like… crazy, crazy. To the point where I feel like I need to toss up a disclaimer and encourage you guys to let the cookies cool before you try to eat one so that you don’t burn your mouths on the molten inferno that is a hot blueberry. Not that I’ve done it myself or anything…
So, yeah! I hope you enjoy these vegan cookies. They’re crazy easy to whip up, and I’m betting you have all the ingredients on hand… especially now that it’s summer and the berries are flowing like water. And if you don’t have any berries? I have a similar recipe that uses chocolate chips.

PrintBlueberry Banana Bread Oatmeal Cookies
- Total Time: 18 mins
- Yield: 12 cookies 1x
Ingredients
- 1/2 cup (60 g) whole wheat flour
- 1/2 cup (40 g) quick oats*
- 1/2 tsp ground cinnamon
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 medium-sized ripe banana, mashed (100 g or 1/2 cup)
- 1/4 cup (50 g) coconut palm sugar**
- 2 Tbsp (30 ml) coconut oil, melted
- 1 tsp vanilla extract
- 3/4 cup (105 g) blueberries***
Instructions
- Preheat your oven to 350ºF (176ºC) and line a large baking sheet with parchment paper or a non-stick baking mat. Set aside.
- In a large mixing bowl, combine the flour, oats, cinnamon, baking powder, and salt. Set aside.
- In a medium-sized mixing bowl, whisk together the banana, sugar, coconut oil, and vanilla.
- Add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix. Gently fold in the blueberries.
- Using a rounded tablespoon, scoop out the dough and roll it into a ball between your palms. Drop the dough onto your prepared baking sheet and gently flatten it with your fingers. The cookies don’t spread much, so shape them the way you want them to come out of the oven.
- Bake for 8-10 minutes, until edges begin to turn golden brown.
- Remove the cookies from oven and let cool them for 10 minutes before transferring them to a cooling rack to cool completely. Store them in an airtight container at room temperature for up to a week.
Notes
* You can also use old-fashioned oats, but the texture might come out slightly chewier. ** You can also use brown sugar. *** I recommend using fresh blueberries for this recipe, as frozen ones will bleed during mixing and you’ll end up with purple cookies.

I used butter instead of coconut oil, and added dried cranberries and walnuts to the mix. Left them in for an extra 5 minutes. Delicious! Thank you for sharing

I made some substitutions, the results were still phenomenal! For the flour, I used America’s Test Kitchen gluten-free flour blend. Avocado oil instead of coconut oil. Old-fashioned oats instead of quick oats. Next time I’ll try dropping the sugar by half, and probably add 1/2 tsp of xanthan gum.
These are certain to become a regular in our household.

So I went ahead and baked these with brown rice flour instead of whole wheat and substituted the whole wheat flour with 3 oz. of brown rice flour and added a teaspoon of xantham gum and baked on my 15″ Pampered Chef Pizza stone at 325 degrees instead of 350 for 5-10 minutes longer until the outer edges turned brown, and they turned out delicious!!! This is one of the first times I have followed a recipe to bake cookies. I looked online for a few and settled on this. When I was measuring out the ingredients I was convinced it was wrong, but persevered (as it was probably me unable to work the scales! Lol). Anyway I continued, used some brown sugar and honey instead. My dough was sticky, but again it was me making adjustments. I put it in the oven and wow, wow, wow, the best thing I have made, the tasted A-mazing!!! Thank you so much!

Hey, I love your oatmeal cookie recipes. However, I find them a bit too sweet for me. If I reduce the amount of maple syrup, would it drastically affect the chewiness and texture of the cookies?

There’s no maple syrup in this recipe, so if you wanted to reduce the amount of sugar, it shouldn’t make a huge difference 🙂
