Cookie dough for breakfast!! Kind of.
You can’t exactly scoop it up, plop it on a baking sheet, and bake yourself up a batch of cookies, but you can pour it in a glass (or jar, or bowl), grab a straw, and have a perfectly healthy and delicious breakfast or snack.
Which is to say that it’s basically a smoothie.
That tastes like [snickerdoodle] cookie dough.
With the texture of melted ice cream…
But “cookie dough for breakfast” is a way better opening line, no? π
Ok! So. This smoothie is basically a blended up bowl of oatmeal, which might sound a little strange if you’ve never tried putting oats in your smoothies before, but sounds perfectly routine if you have. Like… I can’t do non-oatmeal smoothies anymore. They just don’t feel substantial enough, and I always find myself missing the creamy doughiness that makes the oatmeal ones feel so comforting and dessert-y; aka perfect for this time of the year.
And even more perfect when they’re rocking that cinnamon sugar snickerdoodleness…
Can we please make that a word? Along with snickerdoodling, snickerdoodled, and snickerdoodlable? My spellcheck is going a little crazy right now, but I couldn’t pass up an opportunity to sneak some extra snickerdoodles in there. Best.word.ever.
Anyways! Oats. In smoothies. YES! Because not only do they work wonders on the creaminess front – they add a little bit of extra fibre and protein to help keep you fuller longer. Thereβs nothing worse than finishing a meal or snack only to start feeling peckish again 30 minutes later, but I promise you wonβt have that issue with this gem.
Itβs gluten-free, vegan, naturally sweetened and you could easily make it nut-free by subbing the nut butter for a seed/soy nut butter, and the almond milk for another non-dairy alternative like soy or rice. No matter which way you spin it, I have a feeling that youβre going to love the thick and creamy texture. I wasnβt kidding about the melted ice cream bit.

PrintSnickerdoodle Overnight Oatmeal Smoothie
- Total Time: 3 hours 5 mins
- Yield: 1 serving 1x
Ingredients
- 3 – 5 medium-size dates (~30 g or scant 1/4 cup)
- 1/2 cup (40 g) rolled oats**
- 1 tsp (5 g) almond butter
- 1 cup (240 ml) unsweetened vanilla almond milk
- 1/2 tsp vanilla extract
- 1/2 tsp ground cinnamon
Instructions
- The night before, add all the ingredients*** to the bowl of your blender and give them a stir to ensure that everything is well combined. Cover and place in fridge for at least 3 hours, preferably overnight.
- The next morning, blend until a smooth and creamy consistency is reached, adding more milk if smoothie is too thick. Transfer back to a bowl or glass, add desired toppings, and enjoy!
Notes
* Cook time refers to chilling time. ** Be sure to use certified gluten-free oats if you need this to be gluten-free. You can also reduce the oats to 1/4 cup (20 g) and add a scoop of your favourite protein powder. *** If your dates are a little on the drier side or you don[t have a high-speed blender, leave them out and let them sit in water until you’re ready to blend. Make sure to drain the water before you add them to the rest of the ingredients.

Amanda, sorry but I can’t rate this recipe. True Confession: I found your site after I Googled to find a recipe for coffee creamer that was healthy! Within 15 minutes or so, I’d gone over to smile,amazon.com and ordered your book about muffins, bars, and the like AND read your blog post about how to start a blog, AND then I started to cruise around to recipes. YOU’RE KILLING ME, AMANDA!!!!. I may never again have a chance to clean my house, do my laundry, take care of my rescue dogs, do my work (I work from home), etc. I could easily sit around all day and just look at everything and read as much as possible on your site. Lol. You have the greatest sense of humor AND it’s so very obvious that you care deeply for your customers and serving them! Even with those accolades, NOTHING topped getting to the recipe category and finding the category for Smoothies and seeing that there were at least 5 pages of healthy Smoothie recipes! Be still my heart!!! I came to a screeching halt when I reached this one…….Snickerdoodle Overnight Oatmeal Smoothie! OMG! I’d never even heard of putting oats in Smoothies, but seeing the nutritional analysis for this recipe, it makes perfect sense! As you mentioned, adding the oatmeal bumps up the fiber and protein and adds to the “staying power” (satiety) of the Smoothie. Please excuse my rudeness. I’m a 67yo retired RN (Army Nurse Corps, VA, and private and public healthcare sectors). After spending the past 5 years caring for my late husband, then each of my elderly parents in turn (all of whom are now deceased), I investigated my options for the next part of my life and decided to be a Health Coach. I got my Certification, started 1:1 coaching, and will be transitioning into a 1:many model of online health coaching of “Baby Boomers and Beyond” who have Pre-Diabetes to guide and support them to reverse their condition within 90 days. It will be fully virtual, with videos, worksheets, transcripts, and will have F2F coaching (via Zoom) at intervals, and will have a Community element via a private FB Group. I’m just starting to get that all underway and hope to launch it as a smallish Beta group in February 2020. The thought just popped into my head: I don’t know what the rules are for sharing of intellectual property (such as recipes) from time to time with my group participants? I used mostly unsweetened vanilla cashew milk and just a bit of unsweetened vanilla almond milk. I chopped up my dates before blending, and I blended the mixture in my food processor. The taste and texture were superb after sufficient blending. Before making this, I had never actually used dates to sweeten my smoothies, but I think I will need to use them more often!

For sure! They’re mostly just for sweetness, so you could add some maple syrup or honey and adjust to taste. Half a frozen banana would also work if you don’t mind a slight banana-y taste.
