Happy What I Ate Wednesday, friendly faces! 😀
Long time no [foodie] talk! This post was supposed to go up last week (so these are last Tuesday’s eats), but I was stuck in a writer’s block funk that I still can’t seem to fully shake. And the weirdest part is that it seems to hit the hardest when I’m trying to talk about my meals… or at least this particular day of meals. Maybe it’s because they’re so taupe? Can we go with that as a theme? Because that’s the first thing that hit me when I looked over the pictures for this particular day — how brown everything was 😆 And will you forgive me for going the photo dump route? Because after 10+ failed attempts at sitting down to write this post, I give up on words. Thank goodness tomorrow I can do some Thinking Out Loud…
Breakfast…
A bowl of leftover white basmati rice cooked in coconut milk, then topped with almond butter, honey, and cinnamon.
Morning snack…
A salted caramel cookie dough smoothie and a bowl of Barbara’s Morning Oat Crunch cereal.
Lunch…
A snack plate with two flourless apple cinnamon muffins, roasted kabocha, Justin’s maple almond butter, dried figs, and plain Greek yogurt.
Afternoon snack…
Taste testing the soft and chewy pumpkin granola bars.
Dinner…
A bowl of red quinoa cooked in coconut milk with chickpeas, spinach, broccoli, avocado, and kabocha squash.
Evening snack…
A Belsoy dark chocolate pudding cup with a spoonful of Maisie Jane’s crunchy almond butter.
What do you usually do to get rid of writer’s block?

I totally get writer’s block! Mine usually turns into blogger’s block…like I don’t want to blog for a whole week. It’s kind of stressful to be honest! It’s like “will I ever be able to write again??” lol dramatic but I get it.

Do you always have a morning/afternoon/night snack? I’m a snacker but have lately tried to break the habit to save money on groceries, but it’s difficult for me.

I usually do. I think snacking a lot is just something that I naturally gravitate towards — at least that’s how I’ve been ever since I can remember. And have you tried shopping the bulk bins for things like nuts and dried fruit? Those make awesome, healthy, filling snacks, and you can usually get them at a good price 🙂

I had the worst writer’s block until I got let go from my job and suddenly had things to write about haha.
I just finished some overnight oats in a TJ’s Cashew Butter jar on the plane to SFO… and had cashew butter all over my hands trying to get the last bit out with a plastic spoon lol.

I had veggie paella last night at a very nice restaurant and half a sangria. I actually have two-thirds of it leftover in my fridge right now. In addition to all the other craziness, we have budget meetings all week at work so we have folks in from out of town, which means we’ve taken them out the past two nights in a row now. I’m ready for a night in with my cats. Ha!

Your day looks really delicious. I love how you structured your meals, I find I tend to feel fuller and more active when I have a day with less formal meals and more snacks throughout.

That’s definitely the case for me as well! There are days where I end up forgoing most of my meals and just snacking throughout the day.

Writers’ block is such a pain in the ass. I usually will do something active (but not too active, in case I want to step away to jot down an idea) to get the energies flowing, like a walk around the block or even just cleaning or doing dishes.

Definitely looking brown or taupe is a great color description. My last food thingy was lots of veggies decked with a bazillion spices and a few slices of kabocha….heaven, I swear (:

How does red quinoa tasted in comparison to regular (brown) quinoa?

Some people say that it tastes nuttier, but I actually can’t tell much of a difference. It does take a little longer to cook, though.
