A crispy nutty filling stuffed into a sweet and gooey shell — these Rice Krispie Stuffed Dates are a perfect way to satisfy that sweet tooth!
Guess who’s back?! π Actually, I’ve been back since Sunday evening, but it always takes me a day or two to get back into the swing of things after travelling, hence the very-much-appreciated blog break yesterday.
Blend was pretty darn amazing. I need a little more time to process the whole experience before I try to write a recap, so I thought I’d distract you with a tasty snack recipe in the meantime.
Stuffed dates — have you ever tried them? How about Rice Krispie Stuffed Dates? Drizzled in chocolate, naturally…
I know I just posted a Rice Krispie recipe not too long ago, but I’m going through a bit of a phase right now and you’re going to have to see me through it. Actually, this’ll probably be the last one you see for a while — I exhausted my current supply and I’m not letting myself buy any more for a little while. Variety is the spice of life, right? Right.
Actually, I’m kind of surprised that I didn’t come back with a few boxes of cereal in my suitcase after hitting up the Whole Foods in Park City this weekend, but I held back because I was a little worried that I’d run out of space. Good thing, too — the swag at Blend was insane and I ended up having to leave a good chunk of it behind anyway. But more on that in the recap. For now, back to those stuffed dates…
Dates have got to be one of my favourite foods. Not only are they delicious [and nutritious], but they’re also incredibly versatile. Dip em, blend em, stuff em, puree em — they’re good for whatever you need, especially if you need a healthy way to satisfy a sweet tooth.
And if you’re a texture freak like I am, then this snack is the epitome of perfection. It’s creamy; it’s crispy; it’s chewy; it’s gooey… and that’s saying nothing about the sweet, nutty, chocolatey goodness that hits your tastebuds with every bite…
Ermagherd.
I know stuffed dates aren’t exactly anything new, but I’m pretty sure I’ve never come across Rise Krispie stuffed dates before. I’m also pretty sure that there are people out there who’ve never bothered stuffing a date before… because I was one of those people prior to making this recipe. I never saw the point in taking those extra steps, so I’d just dip my dates in almond butter or eat them alongside a few squares of dark chocolate. But holy cow does the stuffing make a difference. Texture and taste perfection. But don’t take my word for it — give it a try!

PrintRice Krispie Stuffed Dates
- Total Time: 30 mins
- Yield: 12 dates 1x
Ingredients
- 12 Medjool dates
- 2 Tbsp. of your favourite nut/seed butter
- 1/3 cup crispy rice cereal
- 2 Tbsp. chocolate chips/chunks
Instructions
- Remove pits from dates by using a paring knife to slice them across the top lengthwise and gently spreading the upper half apart until you can pry out the pit with your fingers. Set aside.
- In a small bowl, combine the nut butter and cereal, mixing until well combined. If you’re having trouble getting the nut butter to spread, warm it up in the microwave for 20 seconds until it begins to melt.
- Stuff each date cavity with approximately 1 heaping teaspoon of the crispy rice mixture, making sure to pack it in tightly. Set the finished dates on a cookie sheet lined with parchment paper.
- Place chocolate in a microwave-safe bowl and nuke on high in 20 second intervals until chocolate is fully melted, making sure to stir between each interval to prevent the burning.
- Using a spoon, drizzle melted chocolate over the stuffed dates. Place them in the fridge for approximately 15 minutes until the chocolate has set.
- Prep Time: 30 mins

To be honest, I don’t think I’ve ever had a date by itself! I’ve only had prunes, the forgotten cousin. π
But seriouslyβ such a genius idea to stuff these babies. I β₯ bite-sized sweet snacks.

GIRL YOU ARE SO CREATIVE. I have never seen anything like this before – I am pinning right now. I always crave sweet + crunchy so these look amazeeee can’t wait to try xo!

I must try these! I’ve never even heard of stuffed dates. I’ve heard of stuffed olives and stuffed turkey but never anything fruity! (I’m not a very adventurous person, I guess)
As soon as I get my hands on some dates, these babies are going in my stomach. π

This is the perfect opportunity for me to comment on your blog for the first time (which is awesome BTW).
I love dates and use them in salads and oats but not much for snacking, so these look perfect and so easy to make, yay! oh, and they look yum too!!

You can distract me with these any time you want. I’m digging the textural aspect of stuffing them with rice crispies. I love the idea of having a little crunch on the inside and some sweet melted chocolate on the outside. Well done my friend.
My favorite way to stuff dates is with blue cheese and then toss them on the grill for a few minutes. It’s heaven on earth.

I am honoured to have the first look of this.
This looks just as delicious, but we know PERSIAN dates would taste better. #truth.

Well who’s fault is it that I don’t have any of those? Uhm… yours π

UH this is insanely brilliant! I can’t wait to make these STAT. Like I want to get out of bed right now and go make them. I keep dates on tap at all times and I bleed almond butter! I just happen to have Rice Krispies from a batch of treats I made not too long ago! Thanks for being Awesome and sharing it!

Ohhh yum! I’ll admit to never eating a stuffed date (or really any date that hasn’t been blended up to hold bars together) but these might be tempting enough to make me change that π The pictures here are beautiful, and who doesn’t love a snack with all the textures!
Erin @ The Almond Eater
Stuffed dates are new to me! I love dates and I love chocolate soooo these sound pretty amazing.
melissa
Daaaaaaamn those look amazing! My favorite treat is stuffing a medjool date with coconut flakes and either a raw pecan or almond. And now I know I have to run to the store for dates after workβ¦.
Thanks for the recipe, can’t wait to try it!
Yalanda @ Laugh Anyway
Yum! I would never think to do this! I usually only eat dates with gouda and apples. I need to expand my repertoire!
Lauren
I like dates with any nut butter. Or in date ball cookies :oD
And I hope you include a lot of things about the people and the experience. I know a lot of people tend to talk about the food which, of course, I like too… But there’s so much MORE to blend.
Amanda @ .running with spoons.
You’ll be happy to know that I hardly mention the food… mostly because I couldn’t eat a lot of it π
Lauren
Oh no!!! Allergies?? :o(

This is definitely a way I’ve never thought to stuff dates before! I just so happen to have some puffed millet cereal that needs using up, so I will definitely be making these!
My favourite way to eat dates is straight up or with almond butter.
