Enjoy it hot or cold, it makes an easy and comforting breakfast or snack {vegan & gluten-free}
I’m basically dying for a smoothie right now. Dy.ing.
We left home early last Friday, which means I had my last smoothie on Thursday afternoon, which means I’ve gone about 8 days without a smoothie, which means I’m basically dying.
See? I can’t even talk in grammatically correct sentences. My 9th-grade English teacher would be horrified. So would my 10th, 11th, and 12th teachers, along with all my college English professors, but I remember #9 as being particularly adamant about proper grammar. Hopefully he doesn’t read Spoons.
But enough about that! Let’s talk smoothies. More specifically, how jealous I am that you can make a ridiculously comforting pumpkin spice latte breakfast smoothie and I can’t…
… or at least I can’t just yet.
If everything goes according to plan and we don’t decide to veer off course and take the scenic route to Alaska, we should be getting home late tonight, which means I’ll be able to make a smoothie tomorrow afternoon, which means my 9-day drought will be over, which means I’ll no longer dying.
Does that sound as good to you as it does to me? Probably not, but I have a feeling you’ll love this healthy fall-inspired smoothie all the same.
Why? Lots of reasons!
First, it’s super quick and easy to make. You take all of 5 minutes to throw the ingredients together the night before and then just press a button in the morning, wait 20 seconds, and voila! You’ve got yourself a healthy, portable breakfast that’s easier to make than a cup of coffee.
On that note, it’s also got coffee in it, so you get a nice little boost of energy from that as well. Or, you can just leave the coffee out completely, but I might judge you if you go that route. Just a little bit.
Second, it lets you enjoy the delicious flavours of a pumpkin spice latte without all the junk that comes with a real pumpkin spice latte. Now, you guys know I have a massive sweet tooth and I don’t really balk at eating refined sugars, but to be completely honest, I don’t really care much for the PSL – it tastes a little artificial and over the top to me. But the flavours in this pumpkin spice latte breakfast smoothie? They’re juuuuuuuust right. And if your tastebuds demand a little more oomph in your drinks? You can totally add more spice or coffee to suit your tastes.
You can also enjoy this guy either hot or cold, depending on what the mornings are looking like for you right now. Heating it up takes a tiny bit more time, but it’s just as easy and totally worth it if you’re looking for something a little more comforting.
It’s super filling, super tasty, and it’s giving me super crazy cravings right now, so I’m going to end things here. I hope you love it!

PrintPumpkin Spice Latte Breakfast Smoothie
- Total Time: 3 hours 5 mins
- Yield: 1 serving 1x
Ingredients
- 3/4 cup (180 ml) unsweetened almond milk
- 1/2 Tbsp (8 g) almond butter**
- 2 Tbsp (30 g) pumpkin puree
- 2 Medjool dates, pitted (~30g)***
- 1/3 cup (30 g) rolled oats (GF if needed)
- 1/4 – 1/2 tsp instant coffee granules****
- 1/4 tsp ground cinnamon
- 1/8 tsp ground nutmeg
Instructions
- The night before, add all the ingredients to the bowl of your blender and give it a stir to ensure that everything is well combined. Cover and place in the fridge for at least 3 hours, preferably overnight. This step isn’t absolutely necessary, but allowing the oats to soak for a few hours will make them easier to blend and give you a smoother, creamier smoothie.
- When ready to eat, blend on high until the oats and dates have fully broken down and a smooth and creamy consistency is reached, adding more milk if the smoothie is too thick for your preference.
- At this point, you can either enjoy it as is or warm it up by transferring the smoothie to a small saucepan set over medium heat and bringing it to a simmer or boil, depending on how hot you want it. If the smoothie becomes too thick during cooking, add an extra splash of almond milk until your desired consistency is reached.
Notes
* Cook time refers to chill time. ** I used almond butter because it has a sweet and mild taste, but feel free to use whichever nut/seed butter you prefer. *** If you don’t have any dates, you can also use 1 – 1 1/2 Tbsp (15-22 ml) of a liquid sweetener like maple syrup or honey. **** Adjust the amount depending on how much you want the coffee flavour to shine through. I recommend starting with 1/4 tsp and adding more post-blending if it’s not enough.

We had a full day of rain today, it was non-stop! (Mind you, that’s not saying much considering I’m in Britain😄).
This pumpkin spice latte smoothie is just perfect for when I need a bit of comforting on those chilly mornings! I love thick smoothies, so I’m a fan of overnight oats whizzed up into a smoothie – which also means you’ve got breakfast covered, which means you barely have to do anything first thing in the morning, which means we can all enjoy a delicious & healthy pumpkin spice latte smoothie, which means we’re not dying! The pumpkin is back, yas, yas, a million times YAS!!! I’ve been so ready to get into the fall spirit, but the 90+ degree whether has been like “sike”. This smoothie is the perfect fall fix that beats the heat! To be honest, I’m a bit of a coffee wimp, so I’m thinking of subbing out the coffee for some cappuccino Nuzest protein I’ve been wanting to try.

I’ve been wondering how I was going to get my PSL fix this year, now that I live unreasonably far away from anywhere that sells them! This looks like the answer, especially as I have a bag of pumpkin purée in the freezer, left over from last year.
We won’t see pumpkins here until almost Halloween, and they’ll be gone from most of the shops by November 1st. The UK really isn’t good at pumpkins!
Mornings are pretty gloomy for me. I’m leaving the house in a hoodie because it’s cold and getting darker every morning. But by the time I get to work it’s usually quite sunny and warm, so it doesn’t feel too autumnal yet!

It’s super chilly here in the mornings too. Today was 4C (40F), and even though it’s sunny now, we’re still only hovering around 9C (48F).

Hi! I had to share my adaptions….I use cooked/roasted sweet potatoes instead of the pumkin puree. I suppose I could carve out a pumkin but I actually love the sweetness of the potatoes. The pumkin spice, cinnamon, nutmeg, clove and ginger spices all make it taste like pumkin. I often omit oats and add a bit or half avacado and flax oil. Tastes like creamy pumkin pie filling. Oh, and usually no coffee as espresso is sacred…..but I do love adding it sometimes! And thanks for the amazing inspirational posts!
