I know I’m not the only one. Please tell me I’m not the only one. I mean… I know it’s still technically the middle of winter and all, but there’s no way I can go 6 months (yes, our winters here can get that long) without regularly enjoying the creamy, dreamy deliciousness that is a smoothie. Besides, we’ve had an oddly mild winter this year, so I haven’t really had to resort to hanging out by the fireplace after I get my fix… which is basically daily.
It’s funny. I used to shy away from smoothies and insist that I wasn’t big on drinking my calories, but I have a feeling that was mostly because I was making my smoothies all wrong.
What’s the right way to make a smoothie, you ask? Like this…
Thick, creamy, filling, and comforting. Yes, even cold smoothies can be comforting when they’re made with the right ingredients; and by that I mean when they’re made with oats. I started adding oats to my smoothies a few years ago and I’ve never looked back. Not only do they make the smoothie so much thicker and creamier, but they add this subtle doughiness that really makes you feel like you’re drinking something more substantial. Almost like a milkshake… except without all the refined sugar and saturated fat.
That’s the other thing! Smoothies are such a great way to satisfy the sweet tooth in a healthier way. That’s not to say that you can’t have your cake and eat it too (hashtag balance), but it’s always nice to have those healthier options on hand when you need a bit of a reset… especially when those healthier options look as decadent as this strawberry shortcake overnight oatmeal smoothie…
… but are actually made with healthy ingredients like this…

- Total Time: 3 hours 5 mins
- Yield: 1 serving 1x
Ingredients
- 3/4 cup (180 ml) Silk unsweetened vanilla almond milk
- 1/3 cup (30 g) rolled oats**
- 1/2 Tbsp (8g) natural almond butter***
- 1/2 – 1 Tbsp maple syrup, depending how sweet you like it****
- 1/2 tsp vanilla extract
- pinch of salt (optional but highly recommended)
- 1 cup (140 g) frozen strawberries
Instructions
- The night before, add all the ingredients except for the strawberries to the bowl of your blender and give them a stir to ensure that everything is well combined. Cover and place in the fridge for at least 3 hours, preferably overnight.
- The next morning, remove your blender bowl from the fridge and add the frozen strawberries. Blend on high until a smooth and creamy consistency is reached, adding more milk if the smoothie is too thick. Transfer to a bowl or glass, add desired toppings, and enjoy!
Notes
* Cook time refers to chilling time. ** Be sure to use certified gluten-free oats if you need this to be gluten-free. You can also reduce the oats to 1/4 cup and add a scoop of your favourite vanilla protein powder. *** I like to use almond butter because it has a sweet and mild taste. Feel free to use your favourite nut/seed butter, but the flavour might shine through a little. **** You could also sub this out for 1/2 a ripe banana to make a strawberry banana smoothie.

This wasn’t bad, but I wasn’t a huge fan. I used strawberries that I bought already frozen at the store, as well as about 1 1/2 Truvia packets instead of maple syrup. I also subbed unsweetened vanilla cashew milk for the unsweetened vanilla almond milk. The end result had a very strong strawberry flavor, and it was super thick, even when I added more milk. I probably could have blended it for longer in my food processor to improve the texture (it was not exactly creamy for me). In any case, I actually think the mixture before the addition of strawberries would make a great overnight oats recipe, so I might actually make that part again and not worry about the blending or the strawberries at all.

I’ve made your chocolate overnight oatmeal smoothie several times and love it so can’t wait to try this one! Just wondering – do you have to let the ingredients sit overnight in a blender or will it work fine if you just make it in the morning?

It still works fine if you make it in the morning, Caroline, but it might not be as thick and creamy. Letting the oats absorb liquid for a while makes them plump up and get a little bit creamier. If you blend them up the night before and leave the smoothie in the fridge, it’ll be almost like pudding in the morning.
