Happy What I Ate Wednesday, friendly faces! ๐
I know. You’re shocked. I am too. It’s been about a month (!!!) since I’ve participated in the WIAW party, which is crazy considering I used to do it every.single.week. But don’t you worry — I’m still eating!
Breakfast… I’m still eating… smoothies and cereals.
A peaches ‘n’ cream protein smoothie (recipe coming soon!) alongside a bowl of Enjoy Life chocolate granola.
Wait… what?! No oats?! No oats, friends. No oats. Actually, I haven’t been eating oats on a regular basis for about a month or so. I’ll have them every once in a while when the mood strikes, but definitely not daily like I did for so long. Why? No reason, really — our relationship had just run its course so I decided to start seeing other people breakfasts. We’re still good friends, though ๐ And I’ve got to say that starting the day with a refreshing peach smoothie ain’t half bad… as long as I have something solid to go with them, because I very much enjoy chewing.
Morning snack… I’m still eating… homemade [un]baked goods.
A chocolate chip cookie dough [bar]… and some grapes.
You guyssssss… I can.NOT get enough of this cookie dough. I think this is the first time that I made any kind of bites/balls without using dates as a base, and I’ve got to say that I’m a huge fan. HUGE. It’s the texture that does it for me — soooo doughy and just… ungh! No words. Only inappropriate noises. And they get even better the longer they sit, too. Save me [from me].
Lunch… I’m still eating… snack plates.
Dr.Kracker Seedlander crispbread, Barney Butter almond butter, The Good Bean’s chocolate crunchy chickpeas, baby carrots, and dried figs.
My sweet tooth was in high-gear yesterday and I just didn’t find myself wanting anything savoury when lunch time rolled around… hence the plate full of things that I could happily dip in almond butter ๐ All I can say is thank goodness I’m at a place where I can eat what I want to eat instead of what I think I should eat… so much more satisfying that way.
Afternoon snack… I’m still eating… frozen treats.
I had a mini panic attack when I looked in my freezer yesterday and realized that was out of my beloved ice cream sandwiches. Thankfully, a little more digging lead to the discovery of the sole surviving cocoa pop, which hit the spot juuuuust right. Actually, the bottom half tastes exactly like a fudgsicle… which means that I might have to whip up another batch and make the entire thing chocolatey this time. So good.
Dinner… I’m still eating… cold leftovers.

Not gonna lie — cooking has been a huge struggle for me lately. Maybe it’s the warm weather, or the fact that I’ve had too many other things keeping me busy, but the last thing I’ve wanted to do has been spend more time in the kitchen than I have to. Thank goodness that recipe development pulls me away from brinners and pizzas at least once every little while. Check out my latest post over at Savory Style for this deeee-lish dish. Evening snack… I’m still eating… yogurt messes.
A yogurt mess made with plain Greek yogurt, fruit (banana & peach), cereal (I forget exactly what I threw in there), vanilla almond milk, and cinnamon.
Confession: I eat yogurt messes purely as an excuse to eat more cereal. I like yogurt well enough, but my cereal cravings have been off.the.charts lately, and while I’m perfectly content to sit there repeatedly dipping my hand into an open box, I do occasionally like to transfer it to a bowl and spruce things up… especially since doing so makes it a super satisfying snack.

Leftovers–cold leftovers are the best. I’m in the process of settling into my new place so I totally feel you on the lack of motivation to cook. I’ve been snacking and eating out more than usual these daysโฆoh and sipping on smoothies–fruit based smoothies. Those are my favorite. I like to add either vegetables in them as wellโฆgot to get my veggies! I’m totally a sweets person and tend gravitate towards them but the nutritionist in me is telling me to hold back and fight the urge these days.

I have to admit, I’m a little shocked that you’ve been mixing up your breakfasts! I’ve come to associate oats with Amanda ;).
And ughhhhhh. Cooking lately has been a big struggle for me as well. I’m currently in Hawaii and, even though we have a fully stocked kitchen, I don’t see myself cooking much at all ๐ฏ . I’m gonna have to get my butt to work once I get back to get more recipes done for SS and AOME!

Your food always looks so darn good. I have been really into smoothies lately too. I find it’s practically he only way I can make sure to get enough fruits and veggies into my day! I tend to lean towards more savoury snack-like things throughout the day – crackers with hummus, chips with salsa, toast, nuts, etc. and have noticed that my veggie intake is especially low. Enter carrots and spinach in my morning smoothies… Gotta do what you gotta do!

I love fruity smoothies, but every once in a while I like throwing some cacao powder in with ’em to change it up. Yesterday (who am I kidding – this whole week) has been totalyl sweet. Definitely more sweet than savory!

I reallllyyyy enjoy cold leftovers. I don’t own a microwave, and whenever someone finds this out they ask me, “HOW DO YOU HEAT YOUR FOOD!?” As if it were a first world problem. I simply tell them that most my meals are cooked the day of, and that I LOVE cold leftovers if I don’t finish!! EASY ENOUGH! I am still lusting over your cookie dough balls…

I took a good hard look at those figs and was wondering if they were mini-turkish hens! But somehow, even if they were little naked hens on a plate- they looked damn good.
My meals have been more savory since my budget kinda dwindled down the “buy all the chocolates, peanut butters, and interesting foods” fund. However, I always make room for something sweet before bed. And your pasta bowl has me smitten right now about now. Next time I pick up avocados and pasta, I am recreating your dish and I’ll pretend you’ll be joining me at my apartment sized table for 2! (only seating 1) ๐ Independence is bliss.

Why does everybody have to post pictures of popsicles when I keep forgetting to buy molds?! Actually… I’ll be at my parents for some time now and I wonder if those old molds from waaay back in the day – read: my childhood – are still hiding somewhere… I’ll be on the hunt tomorrow because it’s seriously late already and I have a feeling my family wouldn’t appreciate being woken up by me rambling around in the kitchen ;).
And yes, I hear you on the lack of kitchen motivation. But I’ll blame moving and feeling like everything I wanted to make would have required a trip to the grocery which obviously isn’t the smartest move before a move [can you tell I’m feeling pun-y today?!].

YES I need something to chew on when I have a smoothie…sometimes I have a spoonful of peanut butter on the side to do a double dip. Yes I’m weird like that…It’s so hot in Texas, so I am all about quick meals that are ready in 15 minutes. I’ve been all about savory lately…but I think I need to fulfill the sweet tooth soon! ๐

I’m ALWAYS lacking motivation to cook – warm, cold, sunny, rainy, it’s all the same ๐ I know, I walked down the cereal isle at Target yesterday and wanted it ALL, but left with nothing ๐ Yesterday was a mix of both, dessert for dinner, then an actual unhealthy (re: fast food) dinner! That peach smoothie looks fantastic! The variety of fruit is one of my favorite things about summer.
My smoothies are usually fruit based but I always use bourbon vanilla extract. It is NOT an optional ingredient. Yesterday was a pretty balanced. Lately I have been finding if I eat something sweet at the next feeding time I crave something savory and vice versa.
Yogurt and cereal before bed is fab!

I definitely am more chocolate smoothie… and I seriously need to try that pasta salad, it looks so good!! I have to chew too, which is why I’ve started adding granola/nuts/hemp seeds/carob chips to my smoothies and turning them into a bowl. Can’t wait to see the recipe!

Actually that breakfast looks an awful lot like mine. I started the day with a fruit and kale filled smoothie on my way into the office. Now I’m enjoying a little break at the office, eating my granola, yogurt and blueberries, while I catch up with your blog.
You know my feelings on pasta. Cannot. Get. Enough so I will happily check out your newest Savory creation and then promptly add it to my growing list of foods to make. Thankfully I’m still spending some time in the kitchen despite the summer time kitchen blues which hit most folks right about now. I’ve got plans to do something indecent to kohlrabi. Expect good things.

I think I love a little bit of fruit with a bit of chocolate ESPECIALLY a chocolate covered banana! Yesterday was definitely a Mexican day for me. I think I had Mexican for every meal except for my oatmeal before bed… And I probably would have had it again if it wouldn’t be extremely uncomfortable burping up salsa while trying to sleep. Eep. Lol
I’m ALWAYS unmotivated to make myself things which require more than 10 minutes or a grill to prepare. I’m a weee bit lazy.
